¼ cup cornmeal
½ teaspoon ground ginger
½ teaspoon ground turmeric
1 egg
2 pounds chicken thighs
2 tablespoons canola oil
2 potatoes, cut crosswise into thin slices
1 head cauliflower, broken into florets
¼ cup butter
4 tablespoons all-purpose flour
1 ½ cups milk
2 cups shredded Cheddar cheese

Steps:

  • Combine cereal, cornmeal, ginger, and turmeric in a resealable plastic bag. Shake well until evenly mixed.
  • Lightly beat egg in a separate bowl. Dip chicken thighs into the egg, one at time, and coat well. Place each thigh in the bag with the cereal mixture, seal, and shake well to coat.
  • Heat oil in a large frying pan over medium heat. Add chicken thighs; cook until browned, about 5 minutes per side. An instant-read thermometer inserted into the thickest part of the thigh should read 160 degrees F (70 degrees C). Transfer chicken onto a serving plate, reserve oil in the pan, and allow to cool.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cook potatoes in the reserved oil until lightly browned, 4 to 5 minutes. Reduce heat and cook until softened, about 15 minutes.
  • Meanwhile, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, 2 to 6 minutes.

1 cup grated dill havarti cheese (about 4 ounces)

  • Heat oven to 375ºF.
  • Cook carrots in large pan of boiling water 4 min., adding asparagus to the boiling water for the last 2 min.; drain. Rinse vegetables under cold water; drain well.

2 boneless skinless chicken breasts
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
4 tablespoons unsalted butter
8 ounces cremini mushrooms, trimmed and quartered
2 medium carrots, thinly sliced
1 leek, light green and white parts halved lengthwise and thinly sliced crosswise
3/4 cup plus 3 tablespoons all-purpose flour
2 1/2 cups low-sodium chicken broth
1/2 small head cauliflower, cut into 1/2-inch florets (about 2 cups)
3 sprigs thyme
One 8-ounce bag Sargento Fine Cut Shredded Sharp Cheddar (2 cups)
3 tablespoons chopped fresh chives
1 teaspoon baking soda
1/3 cup milk

Steps:

  • Sprinkle the chicken with 1/2 teaspoon salt and a few grinds of pepper. Heat the oil and 2 tablespoons of the butter in a large pot or Dutch oven over medium-high heat. Add the chicken, and cook until browned in spots but not cooked through, about 2 minutes per side. Remove to a plate; set aside. Add the mushrooms, carrots, leeks, 1/2 teaspoon salt and a few grinds of pepper to the pot, and cook, stirring, until all the vegetables are tender, about 6 minutes. Sprinkle in 3 tablespoons of the flour and stir until absorbed. Add the chicken broth and 2 cups of water, and scrape up any brown bits on the bottom of the pot. Bring to a simmer. Add the chicken, cauliflower and thyme; return to a simmer and cook, stirring occasionally, until the chicken is cooked through and the sauce is about the consistency of heavy cream, about 15 minutes. Discard the thyme. Remove the chicken and use 2 forks to shred the meat. Stir the shredded chicken back into the sauce, along with 1 cup of the Cheddar. Continue to stir until the Cheddar has completely melted. Season with 3/4 teaspoon salt and a few grinds of pepper. While the sauce is simmering, combine the remaining 3/4 cup flour, 1/2 cup of the remaining Cheddar, 2 tablespoons of the chives, the baking soda, 1/2 teaspoon salt and a few grinds of pepper in a small bowl. Break up the remaining 2 tablespoons butter into small pieces, and work into the flour mixture with your fingers until it's completely absorbed. Add the milk, and stir to combine into a wet dough. Drop tablespoonfuls of the dough all over the surface of the sauce. Bring to a low simmer, cover and cook until the dumplings are cooked through, 12 to 15 minutes. Sprinkle the remaining 1 tablespoon chives and some of the remaining 1/2 cup Cheddar on top, and serve family style or in individual bowls.

6 large potatoes, peeled and cut into wedges
1 (16 ounce) bag fresh baby carrots
1 medium celery rib, cut into 1-inch pieces
1 (10 3/4 ounce) can condensed cheddar cheese soup
2 teaspoons Worcestershire sauce
1/8 teaspoon ground red pepper, if desired (cayenne)
1 cup frozen sweet peas, thawed
1 cup cheddar and american blend cheese (4 oz.)

Steps:

  • In 3-1/2 to 4-quart slow cooker, combine potatoes, carrots and celery.
  • In small bowl, combine soup, Worcestershire sauce and ground red pepper; mix well. Pour soup mixture over vegetables, stir gently to coat.
  • Cover; cook on Low setting 6 to 7 hours.
  • About 10 minutes before serving, gently stir thawed peas and cheese into vegetable mixture. Cover; cook 10 minutes longer or until carrots are tender.

After looking for a cheese sauce and coming up short, I created this fantastic recipe that the whole family LOVED! You can use any kind of cheese you like, but I prefer an old/sharp cheddar. The cayenne pepper only adds flavour, not heat, so if you want it hot you'll have to increase it.

3/4 cup milk
2 tablespoons all-purpose flour
1 1/2 tablespoons garlic butter
2 tablespoons light cream cheese
1 cup grated cheddar cheese
1/4-1/2 teaspoon dried cayenne pepper
1/2 teaspoon lemon juice
salt and pepper

Steps:

  • Combine milk, flour and dried cayenne pepper in a medium saucepan.
  • Add butter and cream cheese and melt over medium-high heat.
  • Add lemon juice and cheddar cheese.
  • Melt cheese and stir constantly over medium heat until mixture thickens slightly.
  • Reduce heat to minimum or remove from burner and continue to stir until slightly cooled.
  • Serve warm over lightly cooked broccoli, cauliflower or your favourite vegetables!

4 cups cauliflower florets, chopped
4 cups butternut squash, peeled and cubed (1 1/2-inch chunks)
1 medium onion, sliced
2 tablespoons extra virgin olive oil
1/2 teaspoon garlic powder
3/4 teaspoon fresh ground pepper, divided
1/4 teaspoon salt
2 1/2 cups vegetable broth or 2 1/2 cups reduced-sodium chicken broth
1 cup water
3/4 cup cornmeal
1 teaspoon fresh rosemary or 1/2 teaspoon dried rosemary
2/3 cup parmesan cheese, finely shredded

Steps:

  • Preheat oven to 500°F.
  • Toss cauliflower, squash and onion in a large bowl with oil, garlic powder, 1/2 teaspoon pepper and salt. Spread on a rimmed baking sheet. Roast, stirring once, until tender and browned in spots, 25 to 30 minutes.
  • Meanwhile, combine broth and water in a small saucepan. Bring to a boil. Slowly whisk in cornmeal, rosemary and the remaining 1/4 teaspoon pepper until smooth. Reduce heat to low, cover and cook, stirring occasionally, until very thick and creamy, 10 to 15 minutes. Stir in cheese; remove the polenta from the heat. Serve the vegetables over the polenta.

1 brown onion, diced
2 carrots, cut julienne style
1 ear of corn, kernels sliced off cob
1/2 cup water
2 teaspoons plain flour
2 teaspoons onion salt
1/2 cup cheddar cheese, grated

Steps:

  • Place the brown onion, carrots and corn kernels in a saucepan with the water. Bring to a boil, and then reduce to a simmer for 2-3 minutes until the vegetables begin to soften.
  • Add the flour and onion salt, and simmer, stirring, for 3-5 minutes until the liquid begins to thicken.
  • Add the cheese, and stir until it has melted through.
  • Remove from heat and sit for 1 minute to thicken the sauce.
