2 eggs
2 teaspoons lemon juice
3 tablespoons grated Parmesan cheese
10 tablespoons Italian-seasoned bread crumbs
3 (5 ounce) cans tuna, drained
3 tablespoons diced onion
1 pinch ground black pepper
3 tablespoons vegetable oil

Steps:

  • Beat eggs and lemon juice in a bowl; stir in Parmesan cheese and bread crumbs to make a paste. Fold in tuna and onion until well-mixed. Season with black pepper. Shape tuna mixture into eight 1-inch-thick patties.
  • Heat vegetable oil in a skillet over medium heat; fry patties until golden brown, about 5 minutes per side.

If you're ever pressed for time, start with a couple cans of tuna and you'll have a delicious patty in no time that you can serve a number of different ways. Add them to buns with your favorite toppings for sandwiches, serve them alongside a fresh salad, or make smaller versions of them and serve them as appetizers with tartar sauce on the side. There are a lot of great flavor elements in these easy and versatile patties, but the quantities are small so the flavor still comes out pretty mild. If you're looking for a stronger flavor, increase quantities as you like!

2 (5 ounce) cans tuna in water, drained
2 large eggs
¾ cup dry bread crumbs
1 ½ tablespoons grated Parmesan cheese
1 ½ tablespoons finely diced celery
½ teaspoon lemon juice
½ teaspoon seafood seasoning (such as Old Bay®)
½ teaspoon Dijon mustard
⅛ teaspoon ground black pepper
⅛ teaspoon dried dill weed
1 tablespoon oil, divided, or as needed

Steps:

  • Combine tuna, eggs, bread crumbs, Parmesan cheese, celery, lemon juice, seafood seasoning, mustard, pepper, and dill in a bowl; stir gently until fully and evenly combined. Shape mixture into 4 patties.
  • Heat oil in a nonstick skillet over medium-high heat. When oil is hot, gently lay 2 tuna patties into the skillet. Don't over crowd - only add as many patties as comfortably fit with room to flip them.
  • Cook tuna patties until golden brown, 3 to 5 minutes per side, adjusting the heat as needed if they're cooking too quickly. Repeat with remaining patties, adding remaining oil as needed.

2 tablespoons butter
3 tablespoons all-purpose flour
1 cup evaporated milk
1 pouch (6.4 ounces) light tuna in water
1/3 cup plus 1/2 cup dry bread crumbs, divided
1 green onion, finely chopped
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
Oil for frying

Steps:

  • In a small saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Remove from heat. Transfer to a small bowl; cool., Stir in tuna, 1/3 cup bread crumbs, green onion, lemon juice, salt and pepper. Refrigerate, covered, at least 30 minutes., Place remaining 1/2 cup bread crumbs in a shallow bowl. Drop 1/3 cup tuna mixture into crumbs. Gently coat and shape into a 1/2-in.-thick patty. Repeat. In a large skillet, heat oil over medium heat. Add tuna patties in batches; cook until golden brown, 2-3 minutes on each side. Drain on paper towels., Freeze option: Freeze cooled tuna patties in freezer containers, separating layers with waxed paper. To use, reheat tuna patties on a baking sheet in a preheated 325° oven until heated through.

My husband came up with this recipe one winter afternoon while pondering what to cook for me that would meet my low carb diet and also not require going out of the house. This is a simple and brilliant recipe, and can be done with any canned fish. It goes well with a bowl of tomato soup.

2 large eggs
2 can(s) chunk white tuna in water
2 Tbsp parmesan cheese, shredded
1/4 c finely chopped onion
1/2 tsp mrs dash onion and herb seasoning mix
4 slice cheddar cheese

Steps:

  • 1. Beat eggs lightly. Drain tuna and add to eggs. Mix in cheese, chopped onion and seasonings. Let sit for a few minutes to blend the flavors.
  • 2. Heat a medium skillet over medium heat. Add olive oil to heating pan until bottom is just coated. Using a pancake ring (or a tuna can with both top and bottom removed) in the pan, pat tuna mix into ring. Allow to sit for a moment, then remove ring and repeat until all tuna mix is used. Cook for five minutes on first side, or until bottoms are golden brown. Carefully flip over and cook for an additional 5 minutes.
  • 3. Top patties with sliced cheese (we use double cheddar). Cover, reduce heat, and allow residual heat to melt the cheese onto the patties. Serve warm.

3/4 cup finely chopped fresh mushrooms

1/4 tsp. black pepper
4 hamburger buns

Steps:

  • Prepare stuffing as directed on package.
  • Meanwhile, melt butter in large nonstick skillet on medium heat. Add mushrooms; cook and stir 3 min. or until mushrooms are tender and liquid is cooked off. Spoon into large bowl.
  • Add stuffing, tuna, cheese and pepper to mushrooms; mix just until blended. Shape into 4 (1/2-inch-thick) patties.
  • Wipe skillet clean with paper towels; spray with cooking spray. Add patties to skillet; cook 3 to 4 min. on each side or until heated through. Serve in buns.

2 slices bread, whole grain
2 tablespoons milk (or water)
1 (6 ounce) can solid white tuna, drained
3 tablespoons green peppers, finely chopped
3 tablespoons onions, finely chopped
1 garlic clove, smashed and minced
1 tablespoon chia seeds
1 egg, stirred
1/2 cup cheddar cheese, grated
1/4 cup panko breadcrumbs (or other bread crumbs)
2 tablespoons olive oil

Steps:

  • Into a small bowl, tear-up the bread and soak in 2 tbsp milk for a couple minutes. Set aside.
  • In a mixing bowl, thoroughly mix all ingredients together (except oil and Panko).
  • If the mixture feels too wet, add Panko a tbsp at a time, until you can form soft balls.
  • Heat 2 tbsp olive oil in a frying pan.
  • Form tuna mixture into patties and fry for 5 minutes until golden brown.
  • Carefully flip the patties. Add more oil if necessary and brown the other side for 5 minutes.
  • Drain on paper towels and serve after a 4 or 5 minute rest.

1 egg, beaten
¾ cup dry bread crumbs
3 green onions, minced
1 clove garlic, peeled and minced
1 tablespoon soy sauce
1 tablespoon teriyaki sauce
1 tablespoon ketchup
1 teaspoon sesame oil
1 teaspoon black pepper
½ cup cornmeal
2 tablespoons vegetable oil

Steps:

  • In a large bowl, mix tuna, egg, bread crumbs, green onions, and garlic. Blend soy sauce, teriyaki sauce, ketchup, sesame oil, and pepper into the mixture. Form the mixture into about 6 patties approximately 1 inch thick. Lightly sprinkle each patty on all sides with cornmeal.
  • Heat oil in a medium skillet over medium heat. Fry each patty about 5 minutes on each side, until golden brown.
