½ (28 ounce) package Alexia® Crispy Seasoned Potato Puffs
1 (10 ounce) can Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
1 tablespoon taco seasoning mix
1 cup shredded Mexican blend cheese

Steps:

  • Preheat oven to 425 degrees F.
  • Spray 8x8-inch glass baking dish with cooking spray. Place potato puffs and drained tomatoes in baking dish. Sprinkle evenly with taco seasoning; toss together.
  • Bake 25 minutes or until potatoes are golden brown and crisp, turning gently once halfway. Remove from oven; sprinkle with cheese.

Need a fast dinner to whip up (under an hour), that the kids (big and small) will happily eat? Add more cheese if desired to topping, serve as is or with rice and/or salad. Add more veggies or canned mexi-beans, refried beans or whatever Tex-Mex ingredients you have in the pantry to personalise this recipe.

1 lb lean ground beef (or turkey)
2 tablespoons taco seasoning
1/2 cup chopped onion
1 teaspoon minced garlic
1 cup chopped carrot
1 cup corn, frozen
1/2 cup chopped celery
2 cups prepared salsa
1 cup sour cream
1/2 cup cream cheese, softened
1 lb tater tots
3 cups grated cheese

Steps:

  • In a hot skillet scramble fry the onion, minced beef and garlic - breaking up all lumps.
  • Reduce the heat to 50% and add the vegetables, make sure they are chopped rather small (mexi-beans or kidney beans can be added if you so wish to this stage) and taco seasoning, fry for another 2-4 of minutes (until the taco seasoning become fragrant).
  • Pour meat mixture into a greased 20x20 inch ceramic/pyrex casserole dish with high sides.
  • In a large bowl, whisk the salsa, sour cream and creamed cheese (which has been well softened) and pour over the meat.
  • Place tater tots over creamy mixture in a single layer all over (my son loves this job). Top with cheese (he likes this job too).
  • Bake at 375oF (180oC) for 30 minutes.
  • Let stand for 5 minutes before serving.

1 cup chopped onion
olive oil, for browning meat
2 lbs ground beef
1 (1 ounce) package taco seasoning
3 eggs
1 (14 1/2 ounce) can diced tomatoes
1 teaspoon flour
1 cup shredded cheddar cheese (more if desired)

Steps:

  • Heat olive oil in medium skillet.
  • Saute onion in olive oil until soft.
  • Brown ground meat with onion.
  • When meat is almost cooked through, add taco seasoning.
  • When meat is cooked completely, drain off grease and set aside to cool.
  • In a large casserole dish, beat eggs.
  • Open diced tomatoes and drain the juice off into a small mixing bowl.
  • Add the flour to the juice of the tomatoes and mix well until the lumps are gone.
  • Add flour/juice mixture to eggs and stir well.
  • Add shredded cheese to egg mixture.
  • Add ground beef and tomatoes to egg mixture and stir well.
  • Bake in a preheated 350-degree oven for 1 hour, or until set and cooked all the way through.
  • You can top with a layer of shredded cheese halfway through cooking time if desired.
  • Serve topped with salsa and sour cream, if desired.

1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
2 green onions, chopped
1 pkg. (1 oz.) TACO BELL® Reduced Sodium Taco Seasoning Mix
1 can (14.5 oz.) fire-roasted diced tomatoes with garlic, undrained
1/4 cup water
1/2 cup frozen roasted corn
1/2 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1/4 cup chopped fresh cilantro, divided
10 whole wheat tortillas (6 inch)
1 pkg. (7 oz.) KRAFT 2% Milk Shredded Colby & Monterey Jack Cheeses, divided
1/2 cup TACO BELL® Verde Salsa

Steps:

  • Heat oven to 350°F.
  • Heat oil in large nonstick skillet on medium heat. Add chicken and onions; cook and stir 8 to 10 min. or until chicken is done. Add seasoning mix, tomatoes and water; stir. Bring to boil; simmer on medium-low heat 10 min., stirring occasionally. Remove from heat; stir in corn, sour cream and 2 Tbsp. cilantro.
  • Spray 13x9-inch baking dish with cooking spray; cover bottom of prepared dish with 5 tortillas. Top with 1 cup cheese, chicken mixture and remaining tortillas; drizzle with salsa.
  • Bake 15 min. or until heated through. Sprinkle with remaining cheese and cilantro; bake 5 min. or until cheese is melted.

2 cups cooked rice (cook 1 c dry rice with 2 c water for a 2 c rice yield)
12 ounces salsa
2 tablespoons taco seasoning (about 1/2 packet of commercially prepared taco seasonings, or the whole packet if you want extra tac)
1 cup sour cream
2 cups cheese, shredded
1/2 cup cheese, shredded
1 cup diced veggies such as carrot, bell peppers, olives, mushrooms, onions (whatever you add to tacos)
beans (red, black, pinto, etc or use salsa that is corn and bean based)

Steps:

  • After cooking the rice, combine all the other ingredients with the rice in a large bowl and stir until combined.
  • Pour mixture into a foil-lined 9 x 13 pan.
  • Sprinkle remaining 1/2 shreeded cheese on top.
  • Bake at 375 F for approximately 35-40 minutes, or until cheese and the top is beginning to brown.
  • *If you added extra beans, veggies, or your salsa was watery, this could lengthen cooking time.
  • Allow casserole to rest and cool for about 10 minutes to make slicing easier.
  • ~ Store leftovers in fridge or freeze squares in individual sized containers in the freezer for your a homemade, fast, "tv dinner".

1 cup dry elbow noodles
1 15 oz can Hunt's® Diced Tomatoes, drained
1 15 oz can Hunt's® Tomato Sauce
1 15 oz can black beans, drained and rinsed
1 large green pepper, chopped
1 package taco seasoning mix
1 cup Mexican taco blend shredded cheese
1 jalapeno, deseeded and diced
1 container sour cream, for garnish
1 bunch cilantro, for garnish

Steps:

  • Preheat oven to 350 degrees.
  • In large pot cook pasta as instructed on the box. Drain and put back into the pot.
  • Add diced tomatoes, tomato sauce, black beans, green pepper and taco seasoning mix to pot. Mix so it's all combined.
  • Put mixture in casserole dish or 12 inch well-seasoned cast iron skillet and sprinkle all your cheese on top. Spread diced jalapenos on top.
  • Bake for 30 minutes.
  • Serve warm and put a nice dollop of sour cream and cilantro on top.
