Steps:
- Heat oven to 350°F. In large bowl, mix all ingredients except topping. Line ungreased 13x9-inch pan with foil. Shape meatloaf mixture into 9x5-inch loaf on foil in pan. In small bowl, mix all topping ingredients; spread over top and sides of loaf.
- Insert ovenproof meat thermometer so tip is in center of loaf. Bake uncovered 45 to 50 minutes or until meat is no longer pink in center and thermometer reads 165°F. Let stand 5 minutes; remove from pan.

CHEESY HAM & BACON-STUFFED BBQ MEATLOAF
This garlicky BBQ-sauced meatloaf with Pepper Jack cheese was delicious even before we added the ham and bacon. Now it's over-the-top delicious.

Steps:
- Heat oven to 375ºF.
- Mix ground beef, cracker crumbs, eggs, onions, garlic, pepper and 1/4 cup barbecue sauce just until blended.
- Pat meat mixture into 11x8-1/2-inch rectangle on sheet of waxed pepper; top with cheese, ham and bacon, spreading ingredients to within 1-1/2 inches of edges. Roll up tightly, starting at one short side and pulling away waxed paper as meat is rolled. Place, seam side down, on foil-covered rimmed baking sheet.
- Bake 48 to 50 min. or until done (160ºF), brushing with remaining barbecue sauce after 40 min. Remove from oven. Let stand 5 min. before slicing to serve.

CHEESY SPINACH STUFFED MEATLOAF

- Heat oven to 350 degrees. In large bowl, combine meatloaf ingredients, mixing lightly but thoroughly. In medium bowl, combine filling ingredients; mix well. Set aside. Place beef mixture on waxed paper and pat into 14 x 10-inch rectangle. Spread filling over beef, leaving 3/4-inch border around edges. Starting at short end, roll up jelly-roll fashion. Press beef mixture over spinach filling at both ends to seal. Place seam side down on rack in open roasting pan. Bake at 350 degrees for 1 hour. Spread ketchup over loaf; return to oven and continue baking 15 minutes. Top loaf with 1/4 cup mozzarella cheese. Sprinkle with additional Italian seasoning, if desired. Top serve, cut into 1-inch thick slices.

ROCK STAR CHEESY STUFFED MEATLOAF
This recipe comes from joyouslydomestic.com and is the best meatloaf recipe I've ever come across! I like to stuff the meatloaf with Mozzarella and top it with marinara sauce, making it sort of an Italian theme. You can also use a Mexican blend of cheese and top with salsa, so there are many ways to go with this recipe! I sometimes use croutons that you can buy at the store instead of the saltines. Just put them in a bag and crush them with a rolling pin and measure the same as the saltines. Times are approximate.

- Preheat oven to 350 degrees.
- Spray a loaf pan with non-stick spray.
- Combine all of the ingredients except for the cheese in a large mixing bowl. Do not over mix.
- Divide the meat mixture in half.
- Spread half of the meat mixture onto the bottom of the loaf pan.
- Lay down the slices of mozzarella cheese and top with the shredded cheese.
- Spread out the other half of the meat mixture on top of the cheese being careful not to disrupt the cheese layer too much. You can run a rubber spatula down the sides to really press the meat in towards the loaf to help seal everything inches You really want to seal in the cheese so that it doesn't ooze out.
- Squirt some of the reserved ketchup onto the top of the loaf. Spread it with a spatula, if desired.
- Bake, uncovered for 1 hour.
- Allow to rest for 5 minutes before slicing and serving. Plan to eat immediately upon slicing so that the melted cheese does not cool too much and firm up.
