1/2 cup Spam (a quarter of a can)
2 eggs
1/3 cup flour
1/3 cup milk
1/4 teaspoon ground pepper
1 tablespoon butter

Steps:

  • Preheat oven to 400F; put the butter into a single serving oven proof dish and place in oven until the butter is melted.
  • Dice the Spam and mix with all the remaining ingredients, being sure to stir out most of the lumps.
  • Pour into the dish and bake for 20 minutes.

5 slices white bread, torn into small pieces
1 1/4 cups milk or 1 1/4 cups half-and-half cream
3 eggs
1 tablespoon spicy mustard
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1 (12 ounce) can Spam, cubed
2 cups grated cheddar cheese, divided
1/2 cup chopped onion
1/2 cup grated monterey jack cheese

Steps:

  • Set oven to 375 degrees.
  • Grease a 12" x 8" baking pan.
  • In a large mixing bowl, combine bread, milk, eggs, mustard, garlic powder and paprika.
  • With electric mixer, beat at medium speed 1 minute, or until smooth.
  • Stir in Spam, 1 cup cheddar cheese and chopped onion.
  • Pour into prepared baking dish; bake 25 minutes.
  • Remove from oven, top with remaining cheese, and Monterey Jack cheese.
  • Bake for 5 minutes longer, or until cheese is melted.
  • Let stand for 10 minutes befrore serving.

1 stick (8 tablespoons) unsalted butter
1 cup whole milk
1 cup all-purpose flour
6 large eggs
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 cup grated Gruyere cheese

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  • Melt the butter in a medium saucepan over medium heat. Add the milk and heat until small bubbles start to form around the edges. Add the flour and cook, stirring constantly with a wooden spoon, until the mixture is smooth and glossy and a dough ball forms. (The dough should start to pull away from the edges of the pan.)
  • Transfer the dough to a stand mixer fitted with the paddle attachment. Mix in 5 of the eggs, one at a time, on medium speed until completely combined. Stir in the salt, pepper and 3/4 cup of the Gruyere.
  • Spoon large tablespoons of the batter onto the prepared baking sheet, leaving about 1 inch between each puff. Whisk the remaining egg and use it to brush the tops of the puffs. Sprinkle over the remaining 1/4 cup Gruyere.
  • Bake until puffed and golden, about 25 minutes. Serve hot.

1 cup water
2 tablespoons butter
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 cup all-purpose flour
4 eggs
1-1/4 cups shredded Gruyere or Swiss cheese
1 tablespoon Dijon mustard
1/4 cup grated Parmesan cheese

Steps:

  • In a large saucepan, bring the water, butter, salt and cayenne to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Stir in Gruyere and mustard. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Sprinkle with Parmesan cheese. Bake at 425° for 15-20 minutes or until golden brown. Serve warm or cold.

This recipe was in given to me by a good friend. The recipe originated from "Marshall Field's Oakbrook" according to her cookbook. It isn't something I would usually make, but I wanted to post it, in her honor.

2 sheets frozen puff pastry, thawed
12 ounces Spam, cut in 12 slices and browned
9 ounces stouffer's creamed spinach, thawed
2 tablespoons butter
1 teaspoon garlic, minced
1 tablespoon onion, diced
2 cups mushrooms, in 1/4-inch slices
1/2 teaspoon marjoram, dried
2 tablespoons parmesan cheese, grated
1 pinch white pepper
1 egg
1 tablespoon water

Steps:

  • Heat oven to 350°. Line baking sheet with parchment paper. In a medium skillet, melt butter, and saute garlic, onion, mushrooms, marjoram, and white pepper until translucent. Remove from heat, mix in parmesan cheese, and set aside.
  • In a separate small bowl, combine egg and water until well blended; set aside.
  • Cut each sheet of puff pastry into six squares (for a total of 12 squares). Place one piece of 'spam' on one square of puff pastry; top with 2T spinach; add another piece of 'spam', top with 1/6th of mushroom mixture, and top with puff pastry. Paint edges of top piece of pastry with egg wash; seal to bottom pastry. Repeat with remaining ingredients five more times; brush entire top of each pastry with egg wash mixture.
  • Place on parchment lined baking sheet; and bake 25-30 minutes.

Everyone uses Spam once in awhile, right? I found this recipe a bit ago and have been waiting for the right event to make these. I love anything that is made into 'balls'! You know, I do feel an event coming on...very soon!

1 can(s) fully cooked luncheon meat, 12 0z. (such as spam®), grated
1 c shredded cheddar cheese
1 c all-purpose biscuit baking mix
1 tsp water
1/4 tsp ground cayenne pepper (optional)

Steps:

  • 1. Preheat an oven to 350 degrees F (175 degrees C).
  • 2. Mix together the meat, Cheddar cheese, baking mix, water, and cayenne in a large bowl. Form the mix into 1-inch balls and place on a greased baking sheet. Bake in preheated oven until golden brown, about 12 to 14 minutes. Serve warm.
  • 3. NOTES: For some added zing, serve with dipping sauce made of 3 parts sour cream and one part Dijon mustard. Use the large holes of a cheese grater to grate the SPAM®.

1/2 pound sliced fresh mushrooms
4 green onions, chopped
1 tablespoon plus 1/2 cup butter, cubed, divided
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
10 large eggs, lightly beaten
4 cups shredded Monterey Jack cheese
2 cups 4% cottage cheese

Steps:

  • In a skillet, saute the mushrooms and onions in 1 tablespoon butter until tender. In a large bowl, combine the flour, baking powder and salt. , In another bowl, combine eggs and cheeses. Melt remaining butter; add to egg mixture. Stir into dry ingredients along with mushroom mixture., Fill greased muffin cups three-fourths full. Bake at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. Carefully run the knife around edge of muffin cups before removing.
