Make-Ahead Snowman Cheese Ball image

All holiday appetizers should be this fun! This adorable snowman is made of a delicious spread of seasoned cream and Cheddar cheeses.

3 packages (8 ounces each) cream cheese, softened
4 cups shredded Cheddar cheese (16 ounces)
2 tablespoons basil pesto
1 tablespoon grated onion
1/4 teaspoon yellow mustard
2 drops red pepper sauce
1 container (4 ounces) whipped cream cheese, softened
Decorations (see Success Hint), if desired
Assorted crackers, if desired

Steps:

  • Mix 3 packages cream cheese and the Cheddar cheese; divide into 3 equal parts. Combine 2 parts to equal two-thirds of mixture; mix in pesto. Mix onion, mustard and pepper sauce into remaining one-third mixture.
  • Cover each cheese mixture and refrigerate about 4 hours or until firm enough to shape. Shape each cheese mixture into ball. Wrap each ball, label and freeze.
  • About 12 hours before serving, remove balls from freezer. Thaw in wrappers in refrigerator.
  • Arrange balls on serving plate with smaller ball on top for head of snowman. Frost snowman with whipped cream cheese before serving. Decorate as desired. Serve with crackers. Store covered in refrigerator.

A classic cheese ball transforms into a festive holiday hors d'oeuvre with a few simple additions, like a carrot nose and black olive eyes. Serve with savory crackers for the perfect party snack.

One 8-ounce block cream cheese, at room temperature
1 tablespoon Worcestershire sauce
1 1/2 teaspoons grated lemon zest (from 1 lemon)
5 cups shredded white Cheddar (1 pound)
Fine salt 1 small carrot
2 asparagus spears, blanched
3 black olives, sliced in half
One 12-inch strip English cucumber or one 12-inch piece celery shaved thinly with a vegetable peeler
Crackers, for serving

Steps:

  • Thoroughly combine the cream cheese, Worcestershire, lemon zest, 3 cups Cheddar and 1 teaspoon salt in the bowl of a stand mixer fitted with the paddle attachment, scraping down the sides with a rubber spatula as needed. Transfer to a bowl, then cover with plastic wrap and chill in the refrigerator until firm, about 30 minutes.
  • Roll the cheese mixture into three balls to form the base, body and head of the snowman. (They should be just over 4-, 3-, and 2-inches in diameter.) Roll the balls in the remaining 2 cups Cheddar to create a snowy exterior. Insert a 6- to 8-inch wooden skewer vertically into the largest ball; use it to attach the body and then the head of the snowman.
  • Cut an inch off the tapered tip of the carrot and use it for the snowman's nose. Insert the asparagus spears into the body for arms. Use two olive halves for eyes, and the remaining four for buttons. Wrap the thinly shaved cucumber or celery around his neck to form a scarf.
  • Serve the snowman on a platter surrounded by crackers.

1 pound cream cheese, softened
1 1/2 cups Monterey Jack cheese, grated
1 garlic clove, finely chopped
Salt and freshly ground pepper
Celery, clove, pumpernickel slice, black olives, and carrot

Steps:

  • In a food processor, combine cream cheese (reserve a spoonful for hat), 1/2 cup Monterey Jack, garlic, and salt and pepper to taste. Freeze until firm, 30 minutes.
  • Shape mixture into 3 balls; roll balls in remaining Monterey Jack. Freeze until firm, about 1 hour.
  • Just before serving, stack balls; secure with toothpicks. Use vegetable peeler to shave celery scarf; pin with clove. Cut bread into 1- and 1 1/2-inch rounds; glue hat together with cream cheese, then secure with toothpick. Punch dots from olives with plain round pastry tips, and cut end off carrot; press in place. Serve with crackers.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 pkg. (8 oz.) KRAFT Shredded Cheddar Cheese
1/4 cup finely chopped fresh chives
1/4 cup slivered almonds, toasted
1/4 tsp. ground red pepper (cayenne)
1/4 cup KRAFT Grated Parmesan Cheese
peppercorns
1 baby carrot

Steps:

  • Mix first 5 ingredients until blended. Refrigerate 1 hour.
  • Divide cheese mixture into 3 different-size balls (1 small, 1 medium and 1 large). Coat with Parmesan. Arrange in line on serving plate to resemble a snowman lying down. (Largest ball should be at bottom of plate for the snowman's base, and the smallest ball should be at the top for the snowman's head.)
  • Decorate with remaining ingredients to resemble photo.

2 packages (8 ounces each) cream cheese, softened
1 package (4-1/2 ounces) dried beef, chopped
1/2 cup finely chopped green onions
1 teaspoon prepared horseradish
1/2 teaspoon garlic powder
1/2 cup dried parsley flakes
2 cartons (4 ounces each) spreadable cream cheese
5 dried cranberries
1 baby carrot
2 pretzel sticks
1 large round cracker
4 round butter-flavored crackers
Assorted crackers

Steps:

  • In a large bowl, beat the cream cheese until smooth. Stir in the dried beef, onions, horseradish and garlic powder until blended. Shape into two balls, one slightly larger than the other. Roll each in parsley. Cover and refrigerate 8 hours or overnight., On a serving plate, place the smaller cheese ball on top of larger cheese ball, forming a snowman. Set aside 1 teaspoon spreadable cream cheese. Carefully cover snowman with remaining spreadable cream cheese. , Arrange cranberries for eyes and buttons. Insert carrot for nose and pretzel sticks for arms., Place a small dab of reserved cream cheese on top of large cracker. Top with a butter-flavored cracker. Repeat with three remaining butter-flavored crackers. Place on top of snowman. Serve with crackers.
