I have taken this to potlucks in the past and people really love it! My family loves it too. Not the stuff of 5-star restaurants, but for my family this is comfort food! Take care with the type of hot dogs you buy because some of the really inexpensive ones have so much water in them it will make the sauce very thin.

2 (16 ounce) packages hot dogs
2 (15 ounce) cans chili without beans
1 (10.75 ounce) can condensed Cheddar cheese soup
3 tablespoons ketchup
1 (4 ounce) can chopped green chilies, drained
20 hot dog buns
1 cup shredded Cheddar cheese
¼ cup chopped onion, or to taste
1 ½ cups crushed corn chips (such as Fritos®)

Steps:

  • Place hot dogs in a slow cooker. Mix chili, Cheddar cheese soup, ketchup, and chopped green chilies in a bowl and pour over hot dogs. Cover cooker and set to Low; cook 4 to 5 hours (can cook longer if desired).
  • Serve hot dogs on buns topped with a large spoonful of chili, 1 teaspoon of chopped onion, 1 tablespoon of shredded Cheddar cheese, and about 2 tablespoons crushed corn chips.

3 (15 ounce) cans great Northern beans, rinsed and drained
2 pounds cubed cooked chicken breast
1 (16 ounce) jar Alfredo sauce
1 (14.5 ounce) can chicken broth
2 (4 ounce) cans chopped green chilies
1 (15.25 ounce) can yellow corn, drained
1 (15.25 ounce) can white corn, drained
1 cup shredded Monterey Jack cheese
1 cup shredded pepperjack cheese
1 cup sour cream
1 tablespoon ground cumin
1 teaspoon minced garlic
½ teaspoon ground white pepper
¼ teaspoon cayenne pepper

Steps:

  • Stir beans, chicken, Alfredo sauce, chicken broth, green chilies, yellow corn, white corn, Monterey Jack cheese, pepperjack cheese, sour cream, cumin, garlic, white pepper, and cayenne pepper together in a slow cooker.

Hearty, spicy, and extra cheesy, this Easy Cheesy Chili Mac is delicious with or without the meat.

Number Of Ingredients 14

1 pound 2 - 3 cups fresh tomatoes, peeled and chopped (or one 16-ounce can diced tomatoes)
3 16- ounce cans black (kidney, or chili beans, drained (I like to use a couple different varieties))
1 medium yellow onion (chopped)
1 teaspoon fresh garlic (minced)
2 teaspoons cumin
1 teaspoon paprika
1 teaspoon cayenne pepper (use 1/2 teaspoon for a milder version)
1 teaspoon oregano OR instead of the cumin (paprika, cayenne pepper, and oregano simply substitute 1 1/2 tablespoons chili powder)
8 ounces 1/2 pound macaroni noodles
1 pound cheddar cheese
Add for full-on meat version
1 pound lean ground hamburger
Add for half meat and half vegetarian
1/2 pound lean ground hamburger

Steps:

  • Combine the tomatoes, beans, onion, garlic, and spices in your Crock Pot. If you're going for the full-on meat version, go ahead and brown your pound of hamburger in a separate frying pan, drain, and add that now, too. You'll add meat later if you're going half veggie/half carnie.
  • Cook on low for about 7 - 9 hours. But it's pretty forgiving if you need to cook it for longer.
  • Boil the macaroni according to package directions, but cut the time short by a minute or so to make sure it's just nice and al dente, or else the noodles might swell up to epic and less appetizing proportions in the finished product.
  • Stir the macaroni, along with half the cheese, into the Crock Pot with the chili.
  • For the half veggie/half carnie adaptetarian version, here's where you split it. If you're going all vegetarian or all meat, ignore this step and move on to Step 6. Move half of the cheesy chili maccy goodness into a medium casserole dish. Brown your half pound of hamburger in a separate frying pan, drain it, and stir the hamburger into the mixture in the casserole dish. Sprinkle over the top with half the remaining cheese, and bake the meaty version at 350 degrees for 20 minutes.
  • Sprinkle all the remaining cheese over the Crock Pot mixture, cover with the Crock Pot lid, and cook for another 20 - 30 minutes, until the cheese is melted.
  • Now get cozy, and enjoy!

1 Tbsp tamari
2 cups vegetable broth - salt free
1 8oz package tempeh
Seasoning
2 Tbsp chili powder

1 tsp dried minced onion
2 tsp garlic powder
1 tsp Cajun seasoning mixture (with salt)
Toppings
12 Tbsp non-dairy shredded cheese, such as Daiya**
Fresh chopped cilantro (optional)

Steps:

  • Directions 1. Spray a slow cooker with cooking spray; add the onion through broth; chop the tempeh well and stir mixture. 2. Mix seasoning mixture in a small bowl; stir into slow cooker; cook on low for 6 hours. 3. Using an immersion blender, blend chili mixture until creamy texture is achieved. (This can also be done in batches in a standard blender.) 4. Top each serving with 2 Tbsp shredded cheese and some fresh chopped cilantro. Steps:

  • Brown beef in skillet until cooked through.
