2 1/2 pounds beef (chuck roll or another cut suitable for braising)
1 tablespoon garlic powder
1 tablespoon mustard powder
1 tablespoon onion powder
2 teaspoons kosher salt
1 teaspoon celery seed
1 teaspoon ginger powder
1 teaspoon ground black pepper
1/2 cup olive oil, or more as needed
5 cloves garlic
1 red onion
5 sprigs fresh thyme
3 bay leaves
2 sprigs fresh rosemary
2 to 3 cups red wine
1 tablespoon cornstarch
1/4 cup water
20 ounces (600g) all-purpose flour, plus more for dusting
1 teaspoon salt
10 ounces (300g) chilled butter
5 1/2 fluid ounces (170ml) water
1 tablespoon apple cider vinegar
3 large Yukon gold potatoes
1 stick (8 tablespoons) butter, cut into cubes
1/4 cup shredded Parmesan
1/4 cup grated provolone
Heavy cream, as needed

Steps:

  • For the beef and gravy: Preheat the oven to 300 degrees F. Trim excess fat from the beef and cut it into about 3-inch cubes.
  • Measure out all the dry spices (garlic powder, mustard powder, onion powder, salt, celery seed, ginger powder and pepper) and mix together in a large mixing bowl. Coat the beef cubes liberally in the spice mix.
  • Bring a saute pan to medium heat and add the oil (a sufficient amount to shallow fry the beef). Fry the beef cubes, 2 or 3 pieces at a time, turning onto each side, until a deep golden brown. Place the browned beef in a deep casserole dish.
  • Sprinkle 1/4 cup of the leftover spice mix over the cooked beef (omit this step if all the spice mix was used to coat the beef before cooking).
  • Roughly chop the garlic and onion and add to the casserole dish with the beef. Tie the thyme, bay leaves and rosemary together with kitchen string (or you can use one of the thyme sprigs to do this).
  • Pour the red wine over the beef (enough to submerge all the beef, and reserving 1/3 cup for later). Wrap plastic film over the casserole dish and then wrap in aluminum foil and ensure a tight seal all around. Place the beef in the oven and cook until tender, about 3 hours.
  • Remove the beef and roughly chop into about 1/2-inch cubes. Remove the fresh herbs and discard.
  • Place the liquid from the casserole dish, including the onions and garlic, into a food processor and blend until smooth; this will become the gravy for the pies. Return the liquid to a saucepan and bring to a slow boil. Add the cornstarch to the water and whisk. Add to the boiling gravy, whisking while adding to avoid lumps forming. Add the reserved 1/3 cup red wine and cook the gravy, stirring regularly to avoid burning, for about 10 minutes. The gravy should be relatively thick in consistency. Add more cornstarch and water mixture if the gravy is not thick enough.
  • Pour the gravy over the chopped beef to liberally coat the beef cubes; you may not need all the gravy you have made. Allow to cool.
  • Meanwhile, for the pie dough: Add the flour and salt to an electric food mixer with a paddle attachment. Mix on slow speed so the flour doesn't spray out of the bowl, about 1 minute.
  • Cut the butter into 1/2-inch cubes and add several cubes at a time to the flour with the mixer on slow speed. Mix until pea-size crumbs have formed.
  • Mix the water and vinegar together in a small bowl. Change the attachment to the dough hook on the mixer and mix on slow speed while pouring in the water and vinegar mixture. Continue mixing until a dough ball has formed on the hook, 1 to 2 minutes. Remove the dough ball, wrap in plastic film and chill in the refrigerator at least 30 minutes.
  • Remove the dough ball and sprinkle liberally with flour, as well as the work surface (countertop). Roll out the dough with a rolling pin until it is approximately 1/16-inch thick.
  • Use a 10-inch ring cutter to cut out circles of dough. Take the dough circles and place into six to eight 4 1/2-to- 5-inch foil pie tins (at least 1-inch deep). Work the dough around to ensure it is neatly covering the pie tin and slightly overlaps the edges.
  • For the cheesy potato top: Peel and cube the potatoes. Boil until soft, then drain the water and mash while adding the cubed butter. When at a smooth consistency, add the cheeses and mix thoroughly to incorporate. Add some cream if needed to ensure the mash is of a smooth consistency. Add salt to desired taste.
  • Spoon the beef and gravy into the dough-lined pie tins.
  • Using a large cooking spoon, spoon the mashed potato over the filled pies, scraping down against the rim of the foil pie tin to ensure a smooth surface of the potato topping.
  • Place the pies onto a baking tray and place the oven on fan or convection setting (if available) and cook for 15 minutes. Turn the tray and continue cooking until the pastry is cooked all the way through, 10 to 15 minutes (gently lift the pie out of the foil pie tin to check that the bottom of the pastry is fully cooked).

2 carrots, peeled and diced
400 g chopped tomatoes
1 beef bouillon cube, made up with
100 ml boiling water
625 g potatoes, your favorite, peeled and thinly sliced
150 g mature cheddar cheese, grated

Steps:

  • Preheat the oven to 190°C, 375°F.
  • Place the mince, onion and carrots in a large nonstick frying pan and dry-fry over a moderate heat for 5 minutes, until browned.
  • Stir in the tomatoes, stock and seasoning and bring to the boil.
  • Transfer to a 20cm x 23cm ovenproof dish, top with the potato slices, sprinkle with the grated cheese and cook in the preheated oven for 40 minutes, until the top of the pie is golden brown and the potatoes are tender.
  • I serve with steamed green veggies.

3 leeks, cut into chunks
small knob butter
pinch dried rosemary or thyme
450g potato (1 very large baking potato is perfect), chopped into thick slices
140g melting cheese, such as cheddar, cut into small chunks
500g pack shortcrust pastry
1 egg, beaten

Steps:

  • Put the leeks, butter and herbs in a pan, cover and cook over a low heat for about 20 mins until very soft, stirring occasionally. While the leeks are cooking, put the potatoes in a pan of cold water, bring to the boil and simmer for 4-5 mins until just cooked. Drain the potatoes and stir into the cooked leeks. Leave to cool, stir in the cheese and season with plenty of pepper and salt if you want. The filling can now be chilled for use the following day, if you like.
  • Heat oven to 200C/fan 180C/gas 6. Divide the pastry in two and roll one of the pieces to the size of a dinner plate. Transfer this to a baking sheet and roll the remaining pastry and any trimmings to a round about 5cm bigger than the first. Pile the filling into the middle of the round on the baking sheet, leaving a 4cm border. Brush the border with the beaten egg, then drape over the larger piece of pastry. Trim the edges to neaten, then press the sides together with your thumb. Brush the tart all over with egg. Bake for 35-40 mins until golden. Leave to rest for 10 mins before cutting into wedges and serving with beans or greens.

This creamy dish is really easy and quite informal in a way yet made with luxury seafood and cheesy potato rosti topping instead of the regular mashed potato topping, it can be special enough for a smart dinner with family and close friends.

600 g fresh cod fish fillets or 600 g halibut steaks
250 g scallops, cut in half
250 g tiger shrimp, peeled and devained (defrosted if frozen)
500 ml fish stock or 500 ml vegetable stock
1 bay leaf
50 g butter
50 g plain flour
2 tablespoons double cream
5 -6 gherkins, drained and chopped
2 tablespoons chopped fresh parsley
salt & freshly ground black pepper
1 kg desiree potato, nicely cleaned
50 g butter, melted
50 g cheddar cheese, finely grated

Steps:

  • Pre-heat the oven to gas mark 7/425°F/220°C.
  • You will need a baking dish about 5 cm deep of 2 litre capacity, well buttered.
  • Start off by boiling the potatoes, with skin on, in a saucepan with enough salted water.
  • Once boiled though, strain off the water and cover them with a clean tea towel to absorb the steam.
  • Meanwhile, heat the stock in a medium saucepan, add the bay leaf and season it well.
  • Then cut the fish in half, if they are large pieces, add it to the saucepan and poach the fish gently for 5 minutes (it should be slightly undercooked).
  • Using a draining spoon, remove the fish to a plate and strain the liquid through a sieve into a bowl.
  • In the same pan you cooked the fish in, melt in the butter, whisk in the flour and cook for 2 minutes.
  • Then gradually add the strained fish stock little at a time, whisking all the time.
  • When you have a smooth sauce, turn the heat to its lowest setting and let the sauce gently cook for 5 minutes.
  • Then whisk in the double cream, followed by the gherkins and chopped parsley.
  • Give it all a good seasoning and remove it from the heat.
  • Now to make the rösti, peel the potatoes and, using the coarse side of a grater, grate them into long shreds into a bowl.
  • Then add the melted butter and lightly toss everything together using 2 forks so that the potatoes get a good coat of butter.
  • Now remove the skin from the white fish and divide it into chunks, quite large if possible, and combine the fish with the sauce.
  • Next, add the raw scallops and prawns to the fish mixture then spoon it into the prepared baking dish.
  • Sprinkle the rösti on top, spreading it out as evenly as possible but not pressing it down too firmly.
  • Finish it off by scattering the grated cheese all over the surface.
  • Bake on a high shelf of the oven for 35-40 minutes until golden brown.
  • If you would like to make the fish pie in advance, then you will have to let the sauce cool down completely before adding the fish, scallops and prawns. After you have spread the topping, cover the dish loosely with clingfilm and refrigerate it until you're ready to bake. But you will have to give it an extra 10 minutes of cooking time.

5 small potatoes, peeled and boiled in salted water
1 Tbsp butter
2 Tbsp milk or cream
1 clove garlic - minced - optional
salt & pepper to taste
1 tsp fresh or dried parsley
1/2 c cubed, cooked ham
2 c shredded cheese, whatever you like - i used sharp cheddar
5 eggs
1 c milk
9 - 10 inch pie crust

Steps:

  • 1. Preheat oven to 325 degree F. Line 9 inch pie plate with crust. Prick the crust. Place on sheet pan and bake for 15 minutes. Set aside. Peel and cook cubed potatoes & garlic in salted water until fork tender.
  • 2. Mash with cream & butter, can season as well. Beat in parsley. ( you don't want your potatoes runny.) Should be able to spread them.
  • 3. Raise oven temp to 375 degree. Spread potato mixture into par baked pie crust. Top with ham, then cheese.
  • 4. Pour egg mixture over cheese and sprinkle with more parsley.
  • 5. Bake for 30 minutes at 375 degree.
  • 6. Now, lower heat to 350 and bake an additional 10 minutes or until golden and knife comes out clean.
  • 7. Let set for at least 5 minutes, slice and serve.

10 small idaho potatoes, washed and dried
olive oil
1/2 small yellow onion, diced
2 garlic cloves, minced
1/2 teaspoon thyme

1 1/4 cups frozen peas and carrots, thawed

Steps:

  • Prick the potatoes all over with a fork. Working in two batches, place the potatoes directly on the microwave turntable and microwave for 10-15 minutes or until soft when pricked with a knife.
  • When the potatoes are cool enough to handle, cut them in half horizontally. Scoop the flesh into a bowl, leaving a small layer of potato in the skins.
  • Place the potato skins, flesh side down on two parchment-lined baking sheets.
  • Reserve the potato flesh for another use.
  • Preheat oven to 400°F.
  • Heat about a tablespoon of olive oil in a skillet over medium heat. Add onions, garlic, and thyme. Sauté until softened, about 5-7 minutes.
  • Add the ground beef. Cook until browned, breaking up with a wooden spoon.
  • Sprinkle the flour over and stir, cooking for 1 minute.
  • Add the beef broth and Worcestershire. Bring to a boil, then simmer for 2 minutes.
  • Add the peas and carrots and let simmer for 5-7 minutes.
  • Season with salt and pepper. Turn heat to low, cover, and keep warm.
  • Brush the potato skins with vegetable oil and bake for 7-10 minutes until the skin is crispy.
  • Flip potato skins over and fill each skin with about 2 tablespoons of cheese.
  • Top the cheese with 2 tablespoons of the meat mixture.
  • Bake for 7-10 minutes until the cheese is melted.
  • Top with a dollop of sour cream and a sprinkle of parsley.

500 g smoked cod (if frozen, thaw first)
3 spring onions, thinly sliced (long slender white & green onions aka green onions)
1 cup milk
3 hard-boiled eggs, sliced
2 tablespoons butter
2 tablespoons plain flour
salt and pepper
500 g of cooked mashed potatoes (made to a medium consistency, too thick or runny and it will either sink or mix with the fish)
2 tablespoons grated cheese

Steps:

  • Place cod in a single layer in a non stick pan, add the spring onions and milk and poach for about 10 minutes depending on the thickness of the fish.
  • Drain cod and reserve liquid and spring onions. Flake fish, remove any bones and place into a greased casserole dish with the spring onions and top with the boiled egg.
  • Melt butter in pan used for poaching fish (who needs more dirty dishes!?), stir in flour and cook over a low heat until mixture bubbles for a minute or so (don't brown), gradually add reserved poaching liquid stirring constantly until it boils and thickens, season with salt and pepper.
  • Pour over fish and eggs, cover with mashed potato and top with grated cheese.
  • Bake at 220 degrees Celsius for 20 minutes until browned on top.

2 cups cooked mashed potatoes
1/2 cup half-and-half
1 tablespoon butter
3/4 cup cream-style cottage cheese
1/2 cup sour cream
2 eggs

1/8 teaspoon cayenne pepper
1/8 teaspoon black pepper
1 1/2 cups shredded cheddar cheese

Steps:

  • Line unbaked, unpricked pastry shell with foil; fill with pie weights or dried beans. Bake at 450° for 5 minutes; remove weights and foil; bake for 5 to 7 minutes longer, until almost done. Remove from oven.
  • Reduce oven to 425°.
  • Combine mashed potatoes, half-and-half and butter, set aside.

  • Heat oven to 200C/180C fan/gas 6. Put the celeriac and potatoes in a large pan, cover with salted water and bring to the boil. Turn down the heat and simmer until just tender, about 5 mins. Drain, then toss with the cream, rosemary and seasoning. Set aside.
  • Roll one of the blocks of pastry until just bigger than a large dinner plate, cut into a neat circle and place onto a flat baking sheet. Leaving a 3cm border, spread out a layer of celeriac and potatoes, top with some cheese and bacon, then repeat the layers until all the ingredients are piled up.
  • Roll out the second block of pastry large enough to completely cover the bottom sheet and filling with some overhang. Brush the bottom border with a little of the egg, then drape the pastry sheet over, pushing down to seal the edges. Trim off the excess with a sharp knife and crimp edge together with a fork. Can be made a day ahead and chilled before baking or frozen for up to 1 month. Defrost completely before baking.
  • Pierce a steam hole in the top of the pie, brush all over with remaining egg and score the pastry lightly with spoke marks, if you like. Bake for 25 mins until golden brown. Stand for 5 mins before serving.

Oh, boy, I thought regular Shepherd's Pie was great, but this one looks fantastic. Gotta love that cheese! I have tweaked this recipe a bit for my own taste. Recipe & photo: http://www.pillsbury.com

Number Of Ingredients 9

1 lb lean ground beef (i use chuck)
1/2 c chopped onion
1/4 tsp salt
1 pkg (24 oz.) bob evans refrigerated prepared mashed potatoes
1 jar(s) (12 oz.) homestyle beef gravy
1 c frozen mixed vegetables
1 egg, slightly beaten
4 oz shredded cheddar cheese
paprika for garnish, if desired

Steps:

  • 1. In a large skillet over medium-high heat, cook ground beef, salt and onion, stirring, until beef is thoroughly cooked.
  • 2. Add the gravy and vegetables to beef mixture; mix well. Bring to a boil.
  • 3. Place mixture in a 2-1/2- or 3-qt. baking dish.
  • 4. Place mashed potatoes in a large bowl; add egg and mix well. Add cheese and combine thoroughly.
  • 5. Spoon or pipe potato mixture around the edge of baking dish, on top of beef/vegetables. Sprinkle with paprika if desired.
  • 6. Bake in a preheated 375-degree oven for 20 minutes or until potatoes are set and starting to brown slightly.
