Baked Cheesy Pizza Pasta Casserole - your favorite pasta, ground beef, spicy mini pepperonis, zesty green peppers, sliced black olives, mushrooms, melty cheeses, and pasta sauce all combined into one tasty, filling casserole that is a hit with both kids and adults alike.

1 (16 ounce) box pasta
2 (24 ounce) jars pasta sauce
1 Tablespoon olive oil
½ green pepper, chopped
½ medium size onion, chopped
½ cup chopped fresh mushrooms
pinch of salt
1 pound lean ground beef
1 teaspoon garlic powder
1 cup mini pepperoni
½ cup shredded parmesan
½ cup sliced black olives
2 cups shredded mozzarella

Steps:

  • Preheat oven to 350°F. Spray a 9 x 13-inch baking dish with non-stick cooking spray and set aside.
  • Cook pasta al dente according to the package instructions. Drain and return to pot. Pour 1 jar of pasta sauce over the pasta, stir to coat, and set aside.
  • While the pasta cooks, heat olive oil in a large skillet or stockpot over medium heat. Add in the peppers, onions, and mushrooms, reserving a small amount to use to top the casserole. Sprinkle with a pinch of salt and saute over medium heat for 5-8 minutes or until onions are clear and veggies are slightly softened.
  • Add ground beef and continue cooking over medium heat, stirring frequently until ground beef is cooked through. Drain to remove any excess fat.
  • Stir ½ of a jar of pasta sauce and garlic powder into the meat mixture. Then stir in the pepperoni, parmesan cheese, and olives, again reserving a small amount to sprinkle on top of the casserole.
  • Spread the pasta evenly across the bottom of your prepared casserole dish, followed by the beef mixture, then the remaining half jar of pasta sauce. Sprinkle with shredded mozzarella and top with reserved pepperoni, peppers, olives, and mushrooms.
  • Bake for 25-30 minutes, or until cheese is melted.

1 (8 ounce) package elbow macaroni, cooked according to package directions and drained
3 dill pickles, finely chopped
3 hard-boiled eggs, finely chopped
2 cups frozen peas, thawed
3 celery ribs, sliced thinly
1/2 medium onion, finely chopped
8 ounces sharp cheddar cheese, diced into 1/4 inch cubes
1 cup mayonnaise (can use low-fat Hellmann's or Kraft)
1/2 cup milk
1/4 cup sugar or 1/4 cup Splenda sugar substitute
1/4 cup cider vinegar
salt and pepper

Steps:

  • Gently toss all the salad ingredients together in a large bowl.
  • Set aside.
  • For the dressing, combine the mayonnaise and milk.
  • Then add the sugar and vinegar.
  • Stir well, and season with salt and pepper to taste.
  • Pour the dressing over the salad, and toss gently to combine.
  • Refrigerate at least 2 hours Overnight is even better.

8 ounces uncooked spiral pasta
6 tablespoons vegetable oil
1/3 cup grated Parmesan cheese
1/4 cup red wine vinegar
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/8 teaspoon pepper
1 cup halved cherry tomatoes
1 cup (4 ounces) cubed cheddar cheese
1 cup (4 ounces) cubed part-skim mozzarella cheese
1/2 cup sliced green onions
1/2 cup sliced pepperoni (about 1-1/2 ounces)

Steps:

  • Cook pasta according to package directions. In a jar with a tight-fitting lid, combine the oil, Parmesan cheese, vinegar, oregano, salt, garlic powder and pepper; shake well. , Drain pasta; rinse in cold water. In a large bowl, combine the remaining ingredients. Add pasta. Drizzle with dressing; toss to coat. Cover and refrigerate for at least 1 hour before serving.

1 green pepper, cut into strips
1 cup KRAFT Shredded Mozzarella Cheese
24 slices OSCAR MAYER Pepperoni
1/2 cup KRAFT Tuscan House Italian Dressing
4 cups torn romaine lettuce

Steps:

  • Cook pasta as directed on package, omitting salt. Rinse with cold water; drain well. Place in large bowl.
  • Add all remaining ingredients except lettuce; mix lightly.
