1 pound ground beef
1 pound ground pork
1 (1 ounce) envelope dry onion soup mix
2 eggs, beaten
1 ½ cups dry bread crumbs
ground black pepper to taste
¾ cup water
2 cups shredded mozzarella cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the beef, pork, soup mix, eggs, bread crumbs, pepper and water. Stir in 1/2 cup of the cheese. Mix well and spread half of mixture into a 9x5 inch loaf pan. Spread remaining 1 1/2 cups cheese over meat loaf mixture. Top with remaining half of meat loaf mixture.
  • Bake in preheated oven for 60 minutes. Let cool 10 to 15 minutes before serving.

½ sweet onion, chopped
1 tablespoon minced garlic
2 pounds ground turkey
1 pound processed cheese (such as Velveeta®), cubed
½ cup crushed buttery round crackers
⅓ cup ketchup
1 egg
1 pinch garlic salt, or to taste
salt and ground black pepper to taste
aluminum foil
¼ cup ketchup, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan with cooking spray.
  • Spray a medium skillet with cooking spray. Add onion and garlic and saute until the onion is tender, about 5 minutes. Set aside to cool.
  • Mix ground turkey, cheese cubes, crushed crackers, 1/3 cup ketchup, egg, garlic salt, salt, and pepper in a large bowl. Add cooled onion and garlic mixture and mix until well combined. Transfer to the prepared loaf pan. Place the loaf pan on a baking sheet and cover with aluminum foil.
  • Cook in the preheated oven for 1 hour. Remove foil and drain any excess juices from the loaf pan. Top meatloaf with ketchup and cook, uncovered, until no longer pink in the center, about 30 more minutes. Steps:

  • For meatloaf.
  • Preheat oven to 350°F.
  • Mix all but bread and sauce.
  • Shape into a loaf.
  • Line loaf pan with two slices of white bread.
  • Put meatloaf on top of bread.
  • Bake for 45 minutes.
  • Bread will soak up the extra grease. Make sure to discard it when cooking is done.

  • Heat soup and milk over med. heat.

  • 2. In a skillet, saute the onion until lightly browned, about 5 minutes.

1 1/2 to 2 pounds ground beef, pork and veal mix (meatloaf mix) or ground sirloin, your choice
1 small onion, peeled and halved
4 sprigs fresh sage, finely chopped, about 2 tablespoons
1 egg, lightly beaten
2 handfuls bread crumbs
1 tablespoon Worcestershire sauce, eyeball it
1 rounded tablespoon Dijon mustard
Salt and pepper
1/4 cup extra-virgin olive oil, divided
1 cup chicken broth
1 large head cauliflower
1/3 cup, about 3 ounces, Boursin or other garlic and herb soft cheese
A handful grated Parmigiano-Reggiano or Romano
1/8 teaspoon grated nutmeg, eyeball it
3 tablespoons chives, chopped or snipped, about 12 blades
20 crimini or baby portobello mushrooms
1 rounded tablespoon all-purpose flour
A shot Scotch or dry sherry, optional
1 cup beef stock
1/4 cup half-and-half or cream, 1 turn of the pan

Steps:

  • Place meat in a bowl. Grate onion using a box or handheld grater directly over the meat bowl. Add sage, egg, bread crumbs, Worcestershire and mustard, salt and pepper then mix meat to combine. Score meat into 4 sections and form 4 oval shaped loaves, 1 to 1/2 inches thick.
  • Preheat 2 tablespoons extra-virgin olive oil, 2 turns of the pan, in a large nonstick skillet over medium-high heat. Add the meatloaves and cook 6 to 7 minutes on each side. Remove to a platter and cover with foil to keep warm.
  • While meatloaf cooks, add chicken stock and 1 tablespoon of extra-virgin olive oil, 1 turn of the pan, to a deep pot. Trim away greens and stems from the base of cauliflower. Cut away the core with a sharp paring knife. Set cored head into pot with broth. Cover pot and bring liquid to a boil. Reduce heat to medium low and cook cauliflower, covered, until tender, 8 to 10 minutes. Uncover the pot and mash the cauliflower. Let some liquid cook off as you smash the cheeses into the cauliflower. As the mixture thickens, turn off heat and season with salt, pepper and nutmeg. Stir in chives and transfer cauliflower to as serving dish.
  • Once meatloaves are removed, place the skillet back over medium heat. Add extra-virgin olive oil, 1 turn of the pan, and the mushrooms. Cover the skillet with foil and nest the foil into pan with a second smaller skillet, smothering the mushrooms. Cook until deep brown and tender, 7 to 8 minutes. Remove the foil, add flour and cook a minute longer. Add in a shot of Scotch or sherry, if you have either on hand, then whisk in the beef stock. Stir in half-and-half or cream and bring to a bubble. Season the mushroom gravy with salt and pepper, to taste.
  • Place the meatloaves on dinner plates and douse with hot, smothered mushroom gravy, spoon the cauliflower alongside.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray two extra-large 6-cup muffin tins with nonstick cooking spray.

1 Tbsp. milk
1/3 cup KRAFT Shredded Colby & Monterey Jack Cheeses
1 tsp. chopped fresh chives

Steps:

  • Heat oven to 350ºF.
  • Mix turkey, stuffing mix, water, onions, chiles, egg and 1/4 cup barbecue sauce just until blended; press into 12 muffin cups sprayed with cooking spray.
  • Bake 25 to 30 min. or until done (165ºF), brushing with remaining barbecue sauce for the last 5 min.
  • Meanwhile, cook potatoes in boiling water in large saucepan 15 min. or until tender; drain. Return potatoes to pan. Add cream cheese, butter and milk; mash until potatoes are smooth and ingredients are well blended. Stir in shredded cheese and chives.
  • Serve meatloaves topped with potatoes.

This is my dad's meatloaf recipe, that we've spent years "perfecting." This meatloaf is a huge crowd pleaser-- popular with anyone who loves cheese and bacon! My Dad did this meatloaf on the grill in a cast iron pan, but it's just as good in the oven!

Number Of Ingredients 13

2 lbs ground beef
1 cup Italian seasoned breadcrumbs
1 small yellow onion, diced
8 ounces sharp cheddar cheese (cut into fourths)
6 slices bacon
2 eggs
3 tablespoons ketchup
1 tablespoon parmesan cheese
1 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon pepper

Steps:

  • Preheat oven to 375 degrees.
  • In a large bowl combine ground beef with eggs and 2 tablespoons ketchup.
  • Once beef mixture is well mixed, add dry ingredients: breadcrumbs, Parmesan cheese, garlic, salt, oregano, basil, and pepper. Followed by the diced onions.
  • Set mixture aside.
  • In 9x13 pan, line the bottom of the pan with the strips of bacon-- the width, not the length of the pan (you can use a loaf pan, but I warn you, the meatloaf is greasy, and the loaf pan can get very full).
  • Take half of the meat mixture and pat it across the top of the bacon. This should be the bottom part of your loaf. Take THREE of the four pieces of cheddar cheese and place them across the center of the meat mixture (this will be your cheesy center!).
  • Take the second half of the meat mixture and add it on top of your cheese. Mold the meat into a loaf shape. The cheese should be completely covered and in the center of the loaf.
  • Finally, pull the bacon and wrap it around the loaf. Take your final tablespoon of ketchup and thinly spread it across the top of meatloaf.
  • Put meatloaf in oven and cook for 60 minutes.
  • Take final quarter of cheddar cheese and cut in to slices.
  • Place these final cheese slices on top of the meatloaf, and put meatloaf back into oven until the cheese is melted (approximately 5 minutes.) Let meatloaf sit for a few minutes to cool before serving.

I found this recipe in the 1975 edition of Crockery Cookery, and made a few adaptations. This meatloaf is so easy to put together. Pop it in the crock pot, and let it simmer all day.

18 round cheese crackers
1 cup shredded cheddar cheese
1 small onion, finely chopped
2 tablespoons minced green peppers
1/4 cup chili sauce
1/2 cup milk
2 eggs, slightly beaten
3/4 teaspoon salt
1/8 teaspoon pepper
2 lbs lean ground beef

Steps:

  • Crush the crackers with a rolling pin or blender.
  • In a bowl, mix together the crushed crackers, shredded cheddar, onion, green pepper, chili sauce, milk, eggs, salt, and pepper.
  • Mix in ground beef, and form into a 7-inch round loaf.
  • Place in crock pot.
  • Cover and cook on low for 8 hours, or until done.

CHEESY MEATLOAF

Easy, freezes well (raw), and can be tripled. If you sub in ground turkey, that is good too. While I was still working I would put meatloaf in oven (frozen) with baker potatoes (wrapped in foil) and baked carrots in the morning before I left the house, and set up my delay bake cycle on my oven and come home to a nice meal. If you do have leftovers, you can cube the leftovers up and add to spaghetti sauce or make yourself a sandwich.

1 lb ground beef
1 cup breadcrumbs
6 ounces tomato juice
1/4 cup onion, chopped
1 egg
4 olives, sliced
1/8 teaspoon pepper
1/4 teaspoon salt

1/2 cup mozzarella cheese, shredded

Steps:

  • Mix first nine ingredients.
  • Put half of meat mixture into loaf pan.
  • Top with shredded mozzarella.
  • Then cover with rest of the meat mixture.
  • Bake at 350°F oven for 1 hour and 15 minutes.
  • If you freeze it (raw), double wrap in foil.
  • To make in crockpot (which I have not done yet)--put 3 heavy duty foil strips, each measuring 18 X 3 inches in a crisscross so they resemble spokes of a wheel in crock pot. Place meatloaf in the center of the strips. Pull the foil strips up and over the meatloaf. Cover. Use the foil as handles to lift out. Estimating time at 8 hours on LOW or 4 hours on HIGH. Also, read that you can cut up two potatoes, into finger size pieces and put that underneath the meatloaf in crock pot. Ummm.

2 lbs ground chuck or 2 lbs ground turkey (I use turkey to make it less fatty because of the cheese.)
1 envelope dry onion soup mix (I prefer Lipton Beefy Onion Soup mix)
3/4 cup oats
2 eggs
3/4 cup water
1/3 cup ketchup (I prefer Heinz)
2 cups shredded cheese (I used low-fat extra-sharp cheddar and mozz.combined)

Steps:

  • Preheat 350 degrees.
  • Combine meat, soup mix, oats, eggs, water, and ketchup with large mixer on low.
  • Slowly add cheese until well-blended.
  • Shape into loaf.
  • Bake for 45 minutes.
  • Add ketchup and sprinkle more cheese on top of loaf, if desired.
  • Cook 10 more minutes.
  • Let set 10 minutes before slicing.
