Steps:
- Oven to 350. Lightly spray a 9x13 inch baking pan. In a skillet cook the leeks in 2 tablespoons of olive oil. Cook for about 5 minutes, then add in the mushrooms. Cook until mushrooms are tender. Transfer to a large bowl. Cut the sausage into ½ inch cubes and add to the bowl. Add in the remaining ingredients and stir gently to combine. Spread into pan. Sprinkle with a little more shredded cheddar. Bake 40 - 45 minutes or until lightly browned. Let stand 5 minutes before serving.

Steps:
- Preheat the oven to 350 degrees.
- Place frozen (unthawed) hashbrowns in a 9×13 pan.
- Sprinkle with shredded cheese and stir lightly to combine.
- Heat milk, butter, and salt in a separate pan until butter is melted.
- Pour over potato/cheese mixture.
- Sprinkle with Parmesan cheese.
- Bake at 350 degrees for 55-60 minutes, or until cheese is browned.
- Let stand 5 minutes before serving.

- 1. Mix all ingredients and put in a 9'' x 13'' pan or similar large casserole dish. Set aside while you make the topping. Melt butter in a small skillet, add breadcrumbs, and sauté until lightly browned. Remove from heat and sprinkle topping over potatoes. Bake at 350°F for 45 minutes.
