Don't count on having any leftovers the next day, but if you do, rewarm them in the microwave and serve them with scrambled eggs for a hearty next-day breakfast.

1 tablespoon butter
1 small onion, diced
3 cloves garlic, finely chopped
2 bags (20 oz each) refrigerated shredded hash brown potatoes
3 cups shredded Cheddar cheese (12 oz)
2 cups sour cream
1 can (10 1/2 oz) condensed cream of mushroom soup
1/4 cup water
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Spray 5-quart slow cooker with cooking spray.
  • In 8-inch skillet, melt butter over medium heat. Cook onion and garlic in butter, stirring frequently, 2 to 3 minutes or until translucent and soft.
  • In large bowl, stir onion mixture and remaining ingredients until well combined.
  • Place in slow cooker. Cover and cook on Low heat setting 3 hours; stir. Cover and cook on Low heat setting 2 to 3 hours longer or until center of casserole reaches at least 165°F and edges are bubbly. Stir.

2 large green chiles, diced
2 jalapenos, finely diced
1 poblano chile, diced
2 onions, diced
4 pounds diced frozen hash brown potatoes (2 bags)

8 slices bacon, fried and chopped

Steps:

  • Preheat the oven to 375 degrees F.

1 pound of kielbasa cut into 1/2 inch pieces
1 bag (20 ounces) refrigerated shredded hash brown potatoes
(I used Simply Potatoes, they are in the refrigerated section, if you are using frozen hashbrowns, make sure to thaw them first)
2 cups shredded cheddar cheese (8 ounces)plus extra for the top
1 cup sour cream
2 medium leeks, white and light green parts only, sliced thin (you can substitute 1 medium onion, chopped if you don't like leeks)
1 package baby bella mushrooms, roughly chopped
salt and pepper to taste

Steps:

  • Oven to 350. Lightly spray a 9x13 inch baking pan. In a skillet cook the leeks in 2 tablespoons of olive oil. Cook for about 5 minutes, then add in the mushrooms. Cook until mushrooms are tender. Transfer to a large bowl. Cut the sausage into ½ inch cubes and add to the bowl. Add in the remaining ingredients and stir gently to combine. Spread into pan. 1 Cup diced ham
2 to 3 Cups chopped broccoli (1 small frozen bag)

Steps:

  • Preheat oven to 350°F. Coat 9x13 baking dish with nonstick cooking spray. Chop frozen broccoli (thaw in microwave a bit if needed, but don't cook through). Chop/dice ham. Without the green bean addition, this tastes very much like the famous cheesy hashbrown casserole everyone seems to like so well. If you add the green beans and onions, it tastes a lot like the holiday green bean casserole. The pork steak is a delicious blend of flavors either way! I have a VERY PICKY 13 year old son who hates mushrooms or mushroom soup, and won't even eat green bean casserole, but LOVED this dish because he didn't realize it had mushroom soup in it. He even asked for seconds, then wanted the left-overs the next day. Hubby said this was one of the BEST casseroles I had ever made. No leftovers for the son, as hubby had already eaten it for breakfast the next morning! If you have never cooked with pork steak before, as I hadn't till I tried this recipe, try this. You will be surprised how EASY and TASTY this is! FIVE STARS for my family! Quick to throw together after work... about 15 minutes.... then relax for a little over an hour, and supper is ready!!! My pork steak was even frozen when I first found this recipe, and so I defrosted the meat package a little bit in microwave and then sliced the meat up while still half frozen. Worked well. I will make this again as I can keep the ingredients on hand, and even if the meat is frozen, I can still make it quickly.

1 lb pork steaks, cut into strips
20 ounces frozen hash browns
16 ounces sour cream
10 3/4 ounces cream of mushroom soup
4 ounces mushrooms (optional)
15 ounces french-sliced green beans, drained (optional)

2 teaspoons chives (optional)

Steps:

  • Cut pork steak into bite-sized strips or larger as desired, and coat with flour, salt and pepper in a large bowl. Heat oil in large skillet or dutch oven and brown meat. Saute onions with meat half way through if you want onions added. (Don't have to cook meat throughly, as it will finish cooking in oven.) Combine in saucepan sour cream, mushroom soup, mushrooms, and half of cheese. Stir and heat mixture, do not boil. Place hash browns in bottom of Pam-sprayed casserole dish or 9 x 13 inch cake pan. Add green beans on top if desired. Pour sour cream mixture over this and place pork steak on top. Sprinkle with remaining cheese and bake, covered with foil in 350 degree oven for 1 1/2 hours.
  • I prefer to use the Southwestern type of shredded hashbrowns that already has some onion and green pepper in it if I don't add the green beans.   • My Note: I made it this past weekend. He loved it. Instead of using the sharp cheddar, I used medium cheddar. I also added 1/4c red bell peppers, 1/4c green bell peppers, and 1/4c onions, and 1/4c mushrooms. Also after I serve this onto a plate, I grate some fresh parmesean cheese to give it a little kick. The peppers added such a wonderful flavor to this dish. This is going to be a favorite for a long time.
  • Don't subsitute cream of chicken or celery soup for the cream of potato. It's a key ingredient and worth the trip to the market to get it if you don't have it on hand.
  • I did cover loosely with foil after about 20 minutes when it looked like the edges were browning too early, but next time I'm just going to let it go. I didn't think a cup of ham would be enough or that this would actually serve 12, but it was just right. I used diced hash browns instead of the shreds, and shredded parmesan from a bag instead of the shaker can. Next time I might throw in some chopped jalapenos or green chiles for more zip -- bacon crumbles would be good too. Breakfast burrito idea for leftovers also sounds fabulous!
  • I made this for a church group and got rave good reviews, and many recipe requests. I agreed with other reviewers that it was very salty, if you can use any low sodium ingredients do so. To the reviewer whose results were soupy, I wonder if you might have used ready to serve, rather than condensed soup. Thanks for the reviewer this recipe! This is an addition to my original review. I recently made this again, I omitted the Parmesan cheese, instead topping it with an additional handful of cheddar. This eliminated the salt problem! Wonderful stuff, try it you will be pleased!

2 cups milk
2 tablespoons butter (you can use up to 4 for a richer taste)
1 1/2 teaspoons sea salt
shredded parmesan cheese, light dusting on top

garlic powder, to taste

8 slices OSCAR MAYER Bacon, chopped
2 cups ORE-IDA Diced Hash Brown Potatoes
1/2 lb. sliced fresh mushrooms
1 each green and red pepper, chopped
1 small onion, chopped
12 eggs
1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream
3/4 lb. (12 oz.) VELVEETA, sliced

Steps:

  • Heat oven to 350ºF.
  • Cook and stir bacon in large skillet on medium heat until crisp. Remove from skillet with slotted spoon; drain on paper towels. Discard all but 2 Tbsp. drippings from skillet.
  • Add vegetables to reserved drippings in skillet; mix well. Cook 10 min., stirring frequently. Spread onto bottom of 13x9-inch baking dish sprayed with cooking spray.
  • Whisk eggs in medium bowl until blended; stir in sour cream. Pour over vegetable mixture, spread to completely cover vegetable mixture. Top with bacon and VELVEETA.
  • Bake 40 min. or until center is set.

1 (2-lb) bag frozen hash brown potatoes
1/2 c butter, melted
1 Tbsp salt
1 tsp pepper
1 c onion, chopped
1 can(s) cream of chicken (or celery) soup
1 c sour cream
1 c milk
4 slices cooked bacon, crumbled
2 c sharp cheese (colby or cheddar), grated
TOPPING
2 Tbsp butter or margarine
1 c breadcrumbs

Steps:

  • 1. Mix all ingredients and put in a 9'' x 13'' pan or similar large casserole dish. Set aside while you make the topping. Melt butter in a small skillet, add breadcrumbs, and sauté until lightly browned. Remove from heat and sprinkle topping over potatoes. Bake at 350°F for 45 minutes.

2 lb bag of southern frozen hash browns
1/4 c melted butter
1 tsp salt
1/2 tsp pepper
2 Tbsp dried minced onion
1 can(s) cream of mushroom soup
1 can(s) cream of chicken soup
1/2 c milk, 2%
1 c sour cream
1 can(s) french's french fried onions
2 c shredded sharp cheddar

Steps:

  • 1. Mix all ingredients except cheese and french fried onions in a large bowl. Transfer to a greased 9X13 baking dish. Top with cheese and cover. Bake 1 hour at 350 degrees. Remove from oven and remove cover. Sprinkle french fried onions on top and return to oven for 3-5 minutes.
