8 ounces cooked, diced ham
2 (10.75 ounce) cans condensed cream of potato soup
1 (16 ounce) container sour cream
2 cups shredded sharp Cheddar cheese
1 ½ cups grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large bowl, mix hash browns, ham, cream of potato soup, sour cream, and Cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese.
  • Bake 1 hour in the preheated oven, or until bubbly and lightly brown. Serve immediately.

Picked this up some years back at the state fair from the California Sweet Potato Council. This dish is very rich and filling and was the only way DS would eat sweet potatoes when he was young.

1 1/2 lbs fresh sweet potatoes (yam variety)
1/4 cup butter or 1/4 cup margarine
1/2 cup onion, chopped
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon basil, crushed
1/4 teaspoon dry mustard
1/8 teaspoon pepper
1 1/2 cups milk
1 1/2 cups swiss cheese, grated
3/4 lb ham, cooked, cubed

Steps:

  • Wash sweet potatoes. Cook unpeeled sweet potatoes, covered, in small amount of boiling salt water untill tender, about 20 to 30 minutes. Cool. Peel and slice 1/4 inch thick; set aside.
  • Melt butter in medium saucepan. Add onion, cook until tender. Remove from heat; stir in flour, salt, basil, mustard and pepper. Cook over low heat until bubbly, 2 to 3 minutes. Remove from heat; stir in milk all at once. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil and stir one minute. Remove from heat. Stir in 3/4 cup of cheese and the ham.
  • Pour half of mixture into greased 2 quart casserole. Arrange half of sweet potaotoes on top. Repeat layers. Bake at 350*F, 25 minutes. Sprinkle with remaining cheese and bake 3 to 4 minutes longer, or until cheese has melted.

This is something I did one night when I had a bunch of leftovers that turned into one of my favorite comfort foods. You could switch out just about anything for anything of a similar type, chicken for the ham, different soups, etc. Make it as is or use your imagination.

3 cups leftover mashed potatoes
1 cup shredded Cheddar cheese, divided
1 (2.8 ounce) package French fried onions, divided
1 ½ cups diced leftover cooked ham
1 (10 ounce) package frozen peas and carrots, thawed and drained
1 (10.75 ounce) can condensed cream of mushroom soup
¾ teaspoon dry mustard
½ teaspoon granulated garlic
¼ teaspoon fresh ground black pepper
aluminum foil

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix 1/2 of the Cheddar cheese and 1/2 of the onions into the mashed potatoes. Spread potato mixture over the bottom and up the sides of a 2-quart casserole dish to form a shell.
  • Combine ham, frozen peas and carrots, mushroom soup, mustard, garlic, and pepper in a bowl; mix well. Spoon mixture into the mashed potato shell. Cover loosely with aluminum foil.
  • Bake in preheated oven for 45 minutes. Remove from oven and sprinkle remaining Cheddar cheese and onions over the top. Bake uncovered until cheese is melted, about 5 minutes. Remove and let rest for 5 to 10 minutes before serving.

1 onion, chopped
One 8-ounce piece deli ham, diced
1/2 teaspoon chopped fresh thyme
1/2 cup low-sodium chicken broth
One 17.5-ounce package potato gnocchi
1 cup frozen peas, thawed
1/4 cup heavy cream
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the broiler to high heat.
  • Melt the butter in a large ovenproof skillet over medium heat. Add the onions and cook until softened, about 3 minutes. Add the ham and thyme and continue to cook until the ham is lightly browned.
  • Add the chicken broth and 3/4 cup water and bring to a simmer. Add the gnocchi, stir well, cover and cook until the gnocchi is slightly tender, about 5 minutes. Remove from the heat. 1.5 (10 3/4 ounce) cans cream of mushroom soup
1 1/4 cups sour cream
1/3 cup milk
2 cups shredded kraft Italian cheese blend (8 oz. package)
3 cups cooked ham, cubed bite-sized
1 (4 1/2 ounce) jar Green Giant sliced mushrooms, drained
1 teaspoon instant minced onion
fresh coarse ground black pepper, to taste
1 1/2 cups raw asparagus, cut into 1-inch pieces
3 cups uncooked wide or dumpling egg noodles
1 1/2-2 cups finely crushed ruffles potato chips

Steps:

  • In large bowl, mix together well the first 4 ingredients.
  • Gently fold in rest of ingredients except noodles and potato chips.
  • Cook noodles 1 minute less than shortest time on directions. *I cooked mine for 6 minutes.
  • Fold in noodles.
  • Pour/spoon into lightly greased 13x9 baking dish.
  • Top with crushed potato chips.
  • Bake in 350 oven for 35 minutes til bubbly!
  • *Do not precook asparagus.
  • **Can sub a 10 oz. box frozen chopped broccoli, thawed and drained, for the asparagus if preferred.

Steps:

  • Grease a 13 x 9-inch baking dish.
  • In a bowl mix together 1-1/2 cups shredded cheddar with 3/4 cup shredded mozzarella cheese then sprinkle evenly into the bottom of the baking dish.
  • In a large skillet melt butter oven medium heat; add in sliced mushrooms and cook until they release there moisture (about 10 minutes).
  • Add in green onions and red bell pepper; saute for 3 minutes.
  • Spoon the mushroom mixture over the cheese, then sprinkle the chopped ham over the mushroom mixture.
  • In a bowl whisk together flour, eggs, 1/2 and 1/2, salt, pepper and cayenne (if using) until thoroughly blended; pour evenly over the ham.
  • Cover and refrigerate for 8-24 hours.
  • Remove from fridge 30 minutes before baking.
  • Set oven to 350°F.
  • Bake for 35-40 minutes.

2.5 Cups Shredded cheddar cheese

1 Cup diced ham
2 to 3 Cups chopped broccoli (1 small frozen bag)

Steps:

  • Preheat oven to 350°F. Coat 9x13 baking dish with nonstick cooking spray. Chop frozen broccoli (thaw in microwave a bit if needed, but don't cook through). Chop/dice ham. In a large bowl, mix together soup, sour cream, and pepper. Stir in cheese (1.5 Cups), hash browns, broccoli, and ham until well combined. Spoon evenly into baking dish. 1 medium head cauliflower, cut into bite-sized florets
1 1/2 cups milk
2 tablespoons unsalted butter, softened
2 tablespoons all-purpose flour
2 1/2 cups shredded Cheddar cheese
1/8 teaspoon dried minced onion
1 pinch garlic powder, or to taste
salt and ground black pepper to taste
3 cups chopped cooked ham
2 cups french-fried onions

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking pan.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender yet firm to the bite, 2 to 6 minutes.
  • While cauliflower steams, heat milk in a saucepan over medium-low heat. Mix softened butter and flour together until it forms a ball. Melt flour ball into heated milk; lower heat and stir constantly until thickened. Add Cheddar cheese, onion, garlic powder, salt, and pepper; heat until cheese is completely melted.

This is a favorite dish of mine for leftover ham. I like to use a mix of parmesan and white cheddar or you can use a monterey jack cheese if you prefer that, but it is just creamy and comforting. I love to bake a ham once a month. I cut it up and freeze and that way I always have a quick meal waiting to be put together. So many people only cook ham on holidays, but it is a great resource and inexpensive. Give this a try for a nice way to use your leftovers and good comfort food on a chilly night.

1 1/2 cups ham, diced (if you don't have leftover ham, buy a couple slices of baked ham from the grocery deli 3/4-inch thic)
8 ounces linguine, broken up in 4-inch pieces (spaghetti will work fine)
8 ounces cremini mushrooms, thin sliced
4 scallions, diced
1 cup frozen peas, peas to me make the dish (if you are not a pea fan, use broccoli cut in small pieces)
1 medium onion (cut in half and thin sliced)
1 cup white cheddar cheese (shredded) or 1 cup you could use monterey jack cheese
1/2 cup parmesan cheese
1/2 cup heavy cream
2 cups chicken broth
4 tablespoons sherry wine (if you don't to add sherry, you can add more chicken broth, or you can add white wine, but the sherr)
4 tablespoons butter
4 tablespoons flour
1 tablespoon parsley, chopped
1 pinch nutmeg
salt
ground black pepper

Steps:

  • Pasta -- Cook the pasta according to the directions on the package in a large pot of salted boiling water. Cook until al dente, drain and set aside.
  • Ham and Vegetables -- Now in that same large pot you cooked the pasta in, add the butter and heat to medium. Then the mushrooms, ham, onion, scallions, parsley and cook until the mushrooms and onions are soft.
  • Sauce -- To the vegetables, add the flour and stir until well blended. Then the broth, sherry, nutmeg, salt and pepper. Go easy on the salt because the broth and ham are both salty. Cook and stir until the sauce mixture thickens on medium to medium high heat. Reduce to medium and add in the cream, 1/2 of the parmesan, 1/2 of the white cheddar and the peas.
  • Combine and Bake -- Add the drained pasta to the vegetable and cheese sauce and toss well. Spray a casserole dish 13x9 or similar with Pam or a nonstick spray and heat the oven to 350 degrees. Spread the pasta mix into the casserole and top with the extra cheese. Bake about 30 minutes until bubbly and the cheese get nice and brown on top. Let set 5 minutes before serving to allow the sauce to firm up.
  • This is a absolutely great casserole. I have also done this same recipe with leftover turkey or chicken and was just as good. And don't be afraid to use a sharp cheddar or even a swiss cheese as well. I just happen to like the white cheddar and parmesan best.

2 tablespoons olive oil
1 cup chopped mushrooms
1 onion, chopped
1 green bell pepper, chopped
4 cups frozen shredded hash brown potatoes, thawed
2 cups diced cooked ham
1 (10.75 ounce) can condensed cream of chicken soup
1 cup sour cream
1 cup shredded Cheddar cheese, divided
1 cup grated Parmesan cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 3-quart baking dish.
  • Heat olive oil in a large skillet over medium heat; cook and stir mushrooms, onion, and bell pepper in hot oil until onions are translucent, about 5 minutes. Transfer vegetables to a large bowl.
  • Stir hash brown potatoes, ham, cream of chicken soup, sour cream, about 3/4 cup Cheddar cheese, and about 3/4 cup Parmesan cheese into vegetables. Spread potato mixture into the prepared baking dish. Sprinkle remaining 1/4 cup Cheddar cheese and 1/4 cup Parmesan cheese over potato mixture.
  • Bake in the preheated oven until bubbly and cheese is melted, 40 to 45 minutes. Let stand for 5 minutes before serving.

1/4 cup cubed process cheese (Velveeta)
3/4 cup cubed fully cooked ham
1/3 cup condensed cream of mushroom soup, undiluted
1-1/2 teaspoons butter, melted
1 tablespoon chopped onion
1/8 teaspoon pepper
3/4 cup mashed potatoes (without added milk and butter)
1/4 cup sour cream
1 bacon strip, cooked and crumbled
3 slices process cheese, halved

Steps:

  • In a bowl, combine the cubed cheese, ham, soup, butter, onion and pepper. Transfer into a greased shallow 3-cup baking dish. , In a bowl, combine mashed potatoes and sour cream. Spread over ham mixture. Arrange cheese slices over top of potato mixture; sprinkle with bacon. Bake, uncovered, at 350° for 15-20 minutes or until heated through.

2 cups cooked brown rice
2 cups broccoli florets
1 cup carrot, thinly sliced
6 ounces reduced-sodium ham
2 ounces swiss cheese, broken into small pieces
3 ounces low-fat cheddar cheese, shredded
1 tablespoon reduced-calorie margarine
1/2 cup low-fat milk
1/4 teaspoon ground cayenne pepper

Steps:

  • Have rice already cooked and set aside.
  • In 2 cups boiling water, drop the broccoli and carrots, bring back to a boil, reduce heat and simmer for 3 minutes.
  • Drain veggies.
  • Put vegetables and cooked rice back in sauce pan and put pan back on medium-low heat.
  • Add ham, Swiss cheese, 1 ounce of the cheddar, milk, margarine and cayenne and stir gently.
  • Sprinkle the remaining cheese evenly over the top, cover and cooke for 3 minutes, or until the cheese melts.

1 (2 lb) package frozen hash brown potatoes (thawed)
1 (8 ounce) package sliced ham (chopped)
2 (10 3/4 ounce) cans cream of potato soup
1 (16 ounce) container sour cream
2 cups shredded sharp cheddar cheese
1 1/2 cups grated parnesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Lightly grease a 9 x 13 inch baking pan.
  • In a large mixing bowl, combine potatoes, ham, potato soup, sour cream and cheddar cheese.
  • Sprinkle with Parmesan cheese.
  • Bake in preheated oven until sauce is browned and top is browned, about 60 minutes.

1 lb ham or 1 lb turkey ham, diced
1 lb pasta (elbow mac, gemelli, shapes, etc)
1 lb frozen mixed vegetables, thawed
32 ounces ready to serve cheddar cheese soup (you can substitute 2- 10.5 oz.cans condensed cheddar cheese soup with 1 cup milk, combined)
salt and pepper
1/4 cup breadcrumbs
1 dash paprika

Steps:

  • Cook pasta according to package instructions.
  • Drain pasta.
  • Stir together diced ham, vegetables, salt and pepper .
  • In a 2 qt.casserole sprayed with cooking spray : layer 1/2 pasta, ham/veggie mixture, then the other 1/2 pasta.
  • Pour soup evenly over all.
  • Top with bread crumbs and sprinkle on a little paprika.
  • Bake at 350 degrees for 35 minutes.

I came up with this one to use up all of the Christmas ham that didn't get eaten. The only thing I might recommend is adding a little bit of salt or maybe garlic powder, but I am posting it as I made it because my step-daughter actually ate 2 helpings and that rarely happens. I hope you enjoy!

2 cups cooked rice (I used the 10 minute Success Boil-in-Bag whole grain rice)
1 -2 cup cooked ham, depending on how much you had leftover (the one that I used was a spiral sliced honey ham)
1 (10 ounce) can broccoli cheddar cheese soup, condensed
3/4-1 cup milk
1/4 cup sour cream
1/2 cup French-fried onions
1 (15 ounce) can peas
1/2 cup cheddar cheese, shredded
1/4 cup French-fried onions
1/2 cup cheddar cheese, shredded
1/4 cup crouton, finely crushed (measured AFTER the croutons have been crushed)

Steps:

  • Cook rice according to package directions.
  • Preheat oven to 350.
  • Pull or dice ham into small pieces.
  • Place rice in a 13x9" baking dish and top with ham and stir to combine. Use as much or as little ham as you would like. I used almost 2 cups because I had a lot leftover from Christmas dinner.
  • In a large bowl, mix broccoli cheddar soup, milk and sour cream. Start with 3/4 c milk and add more if you would like it a little runnier. I prefer my soup base a little thicker.
  • Stir 1/2 c french fried onions, peas and 1/2 c cheddar cheese into the soup mixture.
  • When combined, pour the soup mixture over the rice/ham mixture and stir well, but gently, to combine.
  • Sprinkle 1/2 c cheddar cheese over the rice/soup mixture.
  • Top this with 1/4 c (or more) french fried onions.
  • In a plastic bag, crush croutons. It took about 1/4 bag of croutons to get 1/4 cup of crushed croutons (and I used the cheesy garlic flavor).
  • Sprinkle crushed croutons over top of all.
  • Bake, uncovered, for 20-30 minutes or until the edges start to get bubbly and it is heated through.
