1 package refrigerated diced potatoes with onions
1 carton reduced sodium fat free chicken broth
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
3 1/2 c broccoli cuts
2 c cooked ham, diced
1/2 c fat free milk
1 1/4 c shredded american cheese blend

Steps:

  • 1. Add all ingredients to the crock pot except for ham and cheese. Cook on low 6-8 hours. During last 30 minutes of cooking stir in the cheese and ham. Garnish with extra cheese if desired. Enjoy!

4 tablespoons unsalted butter, divided
8 ounces fully cooked ham, diced
3 cloves garlic, minced
1 sweet onion, diced
1/4 cup all-purpose flour
1 teaspoon dried thyme
4 cups low sodium chicken broth
1 russet potato, peeled and cubed
16 ounces broccoli florets, finely chopped
3/4 cup heavy cream
1 1/2 cups shredded extra-sharp cheddar cheese
Kosher salt and freshly ground black pepper, to taste

Steps:

  • Melt 1 tablespoon butter in a large stockpot or Dutch oven over medium heat. Add ham, and cook, stirring occasionally, until lightly browned, about 3-4 minutes; set aside. Melt remaining 3 tablespoons butter. Add garlic and onion, and cook, stirring occasionally, until translucent, about 3-4 minutes. Whisk in flour and thyme until lightly browned, about 1 minute. Stir in chicken broth, scraping any browned bits from the bottom of the pot. Stir in potato. Bring to a boil; cover, reduce heat and simmer, stirring occasionally, until potato is tender, about 10-15 minutes. Using a potato masher, mash potatoes until desired consistency is reached. Stir in ham, broccoli and heavy cream. Cover and simmer until broccoli is tender, about 5-6 minutes. Remove from heat. Gradually stir in cheese until smooth; season with salt and pepper, to taste. Serve immediately.

Steps:

1 small onion, finely chopped
2 cups finely chopped fresh broccoli
3 cups reduced-sodium chicken broth
1 can (12 ounces) evaporated milk

1 package (8 ounces) Velveeta, cubed
1-1/2 cups shredded extra-sharp cheddar cheese
1 cup shredded Parmesan cheese
Additional shredded extra-sharp cheddar cheese

2 cups cubed potatoes
1-1/2 cups water
1-1/2 cups cubed fully cooked ham
1 large onion, chopped
3 tablespoons butter

1-1/2 cups (6 ounces) finely shredded cheddar cheese
1 cup frozen broccoli florets, thawed and chopped

  • In a saucepan, bring potatoes and water to a boil. Cover and cook for 10-15 minutes or until tender. Drain, reserving 1 cup cooking liquid; set potatoes and liquid aside., In a large saucepan, saute ham and onion in butter until onion is tender. These are very similar to funeral potatoes, but made easier in the crock pot. The amounts don't have to be exact, these are just a good starting point. I have also added diced ham to make this a main course.

1 (10 3/4 ounce) can cream of mushroom soup or 1 (10 3/4 ounce) can cream of chicken soup
1 1/2-2 cups sour cream, to taste
3/4 cup diced onion
16 ounces shredded cheddar cheese
1 teaspoon ground black pepper
6 -8 medium potatoes, unpeeled, sliced thinly

Steps:

  • Mix soup, pepper, onions and sour cream in a bowl.
  • Put a thin layer of soup mix on bottom of crackpot.
  • Layer potatoes, soup mix, and cheese.
  • Repeat, ending with a layer of soup mix and cheese on top.
  • Cook on High 4 hours or Low 8 hours.
