1 (11 ounce) can cream-style corn
1 (8 ounce) container sour cream
1 egg
1 (8.5 ounce) package dry corn bread mix
1 small onion, diced
1 cup shredded Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • In a large bowl combine whole corn, cream-style corn, sour cream, egg, dry corn bread mix, onion and 3/4 cup of Cheddar cheese. Mix well and pour into prepared dish.
  • Bake in preheated oven for 25 minutes.
  • Remove from oven and sprinkle with remaining cheese. Bake for another 20 minutes.

2 cups milk

  • In large saucepan, melt margarine over medium high heat. Add celery and onion; cook and stir until tender, about 5 minutes.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Season chicken with salt and pepper.

This is a staple at our summer grill-outs. It's easy and can be prepared the day before, then baked when you need it. I use reduced fat cheddar cheese, light sour cream and 98% fat-free cream of chicken soup.

1 (32 ounce) bag frozen hash browns (shredded or cubed)
2 cups cheddar cheese (can be reduced fat)
16 ounces sour cream (can be light)
1 (10 3/4 ounce) can cream of chicken soup (can be 98% fat-free soup)
3/4 cup butter or 3/4 cup margarine
1 cup corn flakes (more if desired)

Steps:

  • Take hash browns out of freezer, keep in bag, set aside.
  • In microwave, melt 1 stick of butter in large bowl; mix in sour cream, cheese and cream of chicken soup.
  • In 9x13 pan (sprayed with Pam), spread hash browns. Spread sour cream, cheese, and soup mixture on top.
  • Melt 1/2 stick of butter on stovetop, mix in corn flakes, stir (smash them a little too) until butter is absorbed. You may need/want to add more corn flakes.
  • Sprinkle corn flakes on top of sour cream, cheese and soup mixture.
  • Bake 1 hour at 350.

1 (5-oz) pkg mahatma saffron yellow rice
1 can(s) (11-oz) green giant mexicorn, drained
1 can(s) (10-oz) cream of chicken soup
4 Tbsp butter, melted
1/2 to 1 c new york sharp cheddar cheese, grated
pepper (optional)

Steps:

  • 1. Cook rice according to package directions. Add butter, corn, soup and pepper to cooked rice; mix well. Pour in to a greased casserole dish; cover with grated cheese.
  • 2. Bake at 325 degrees for 30 to 35 minutes or until bubbly on top.

2 (14 1/2 ounce) cans whole kernel corn
1 (8 ounce) package cream cheese
1 (4 ounce) can diced green chilies
1 cup shredded colby-monterey jack cheese
seasoning (I used garlic powder and Tony Chachere's Creole Seasoning)

Steps:

  • In a medium saucepan, combine corn, cream cheese and green chiles.
  • Heat over medium high heat until the cream cheese is melted and smooth.
  • Add shredded Cheddar cheese and seasonings; heat until cheese is melted.
  • Pour into greased casserole dish and top with additional Cheddar cheese, as much as you like.
  • Bake in a preheated 350-degree oven until cheese is melted and bubbling, about 25 minutes.
  • NOTE: I drained one can of corn and did not drain the other can.
  • You may prefer to drain both cans if you want less sauce.

2 tablespoons butter or margarine
4 teaspoons all purpose flour
1/8 teaspoons garlic powder
3/4 cup milk
6oz sharp cheddar cheese
1 (3oz) pkg cream cheese, cubed
3 (10oz) pkgs frozen whole kernel corn, thawed
3oz ham, diced

Steps:

  • In a large saucepan, melt margarine or butter Stir in flour and garlic powder Add milk all at once Cook, stirring constantly, over medium heat until thickened and bubbly Stir in cheese Cook, stirring constantly, over low heat until melted Stir in corn and ham Transfer mixture to a 2 quart casserole dish Bake at 350 degrees for 45 minutes.
