EASY CHEESY HASSELBACK POTATOES



Easy Cheesy Hasselback Potatoes image

Spruce up your spuds with this family favorite recipe for hasselback potatoes loaded with cheddar and Parmesan cheese.

Number Of Ingredients 5

4 medium Russet potatoes
2 Tablespoons unsalted butter, melted
8 to 12 thin slices cheddar cheese, cut into 1-inch squares (See Kelly's Notes)
1/3 cup shredded Parmesan cheese
1 Tablespoon chopped fresh chives

Steps:

  • Preheat oven to 450°F. Line a baking sheet with foil
  • Place each potato between two wooden spoons and carefully make cuts every 1/8-inch without cutting all the way through the potato.
  • Place the potatoes on the baking sheet and brush them with the melted butter. Season them with salt and pepper.
  • Bake the potatoes for 55 to 60 minutes or until tender. Remove them from the oven and carefully insert the cheddar cheese slices into each cut in the potato. Sprinkle the tops of the potatoes with the Parmesan cheese then return them to the oven and continue baking until the cheese is melted, about 3 minutes.
  • Remove the potatoes from the oven, top them with the chopped chives and serve immediately.

1-1/2 cups half-and-half cream
1 container (8 ounces) spreadable chive and onion cream cheese
2 tablespoons dried minced onion
1 teaspoon salt
1/2 teaspoon pepper
2 packages (20 ounces each) refrigerated shredded hash brown potatoes
2 cups shredded Swiss cheese
3 tablespoons minced fresh chives, divided
2 tablespoons butter, cubed

Steps:

  • Preheat oven to 375°. In a Dutch oven, combine the first five ingredients; cook and stir over medium heat until blended. Stir in potatoes., In a greased 13x9-in. or 3-qt. baking dish, layer a third of the hash brown mixture and 2/3 cup Swiss cheese; sprinkle with 1 tablespoon chives. Repeat layers. Top with remaining hash brown mixture and cheese; dot with butter., Bake, covered, 35 minutes. Bake, uncovered, 10-20 minutes longer or until edges begin to brown and potatoes are heated through. Let stand 10 minutes before serving. Sprinkle with remaining chives.

1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup sour cream
1 small onion, finely chopped
1/4 cup butter, melted

1 package (32 ounces) frozen cubed hash brown potatoes, thawed
2 cups shredded cheddar cheese, divided

4 cups cubed potatoes (from about 4 to 5 large potatoes)
1 teaspoon salt
1 cup milk
1 (8-ounce) package cream cheese (softened)
1 tablespoon chives (fresh or frozen, chopped, plus more for ​garnish)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 teaspoon instant dried minced onion
Dash paprika

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F. Cook potatoes in a saucepan with 1 teaspoon salt in boiling water to cover for 15 minutes or until tender; and drain.

1 teaspoon margarine

This is about as simple as it gets: classically prepared mashed potatoes - just potatoes, milk, butter and salt - get a generous handful of pretty chives stirred in. Be sure to add plenty of salt, and taste as you go; good mashed potatoes rely on it.

1 1/2 pounds russet potatoes
Salt to taste
1 cup milk
4 tablespoons butter
4 tablespoons chopped chives

Steps:

  • Peel the potatoes and cut them into 2-inch cubes.
  • Put the potatoes in a saucepan and cover with water. Add salt and bring to a boil. Simmer 20 minutes or until the potatoes are tender. Do not overcook them.
  • Meanwhile, heat the milk until it is hot.
  • Drain the potatoes and put them through a food mill or ricer or mash them well with a potato masher. Return them to the saucepan. Using a wooden spatula, add the butter and chives and blend well. Mix in the milk and keep warm until ready to serve.
