1 stick butter, 1 stick, softened
4 cloves garlic, minced
⅓ cup parmesan cheese
⅓ cup shredded monterey jack cheese
⅓ cup shredded cheddar cheese
⅓ cup fresh green onion, sliced
1 baguette, 8 inch (20 cm)

Steps:

  • Preheat oven to 400°F (200°C).
  • In a bowl, combine all of the ingredients except the baguette, and mix until smooth.
  • Slice the baguette in half lengthwise, then spread the butter mixture evenly on both sides of the baguette.
  • Place on a tray lined with parchment paper and bake for about 15 minutes, until cheese is bubbly and starting to brown on the edges.
  • Slice, cool, then serve.
  • Enjoy!

1 loaf bread, baguette style
2 cups chopped cooked chicken
8 ounces cream cheese
1/3 cup diced green bell pepper
1/4 cup chopped cilantro
1/2 cup canned diced tomato, drained
1 cup shredded cheddar cheese
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Steps:

  • In a large bowl, combine all of the ingredients except for the baguette.
  • Using a bread knife, start to hollow out 1 side of the baguette leaving the outer bread and crust still intact.
  • Repeat with the other side and then use a spoon to dig out the inside bread of the baguette.
  • Using a spoon, start to fill the baguette. Push the mixture down with the bottom of an ice cream or cookie scoop. Keep filling until the baguette is full.
  • Wrap the bread with plastic wrap and place in refrigerator for at least 2 hours.
  • Slice before serving.

3 tablespoons butter
1 medium onion, thinly sliced
1 cup sliced mushrooms, caps only
2 boneless skinless chicken breast halves (pounded thin)
1/4 teaspoon dried thyme leaves, crushed (optional)
salt & fresh ground pepper, to taste
crushed red pepper flakes, to taste (optional)
garlic powder
mayonnaise, for serving (optional)
mustard, for serving (optional)
1 French baguette, halved lengthwise (about 12-inch long)
3/4 cup jarlsberg cheese or 3/4 cup swiss cheese, shredded
2 slices bacon, crisp-cooked and crumbled

Steps:

  • In a 10" nonstick skillet, melt butter & crushed red pepper flakes(if using) over medium high heat and cook onions; uncovered stirring occasionally, 15 minutes or until onions are golden. (if desired add a bit of brn sugar & it will help the onions caramelize).
  • Remove onions from skillet and keep warm.
  • Sprinkle with garlic powder.
  • In same skillet melt 1 tablespoon butter over medium-high heat and cook chicken 4 minutes or until chicken is throughly cooked, turning once.
  • In same skillet, melt remaining butter over medium heat and brown mushrooms for about 6 minutes, till all water is absorbed.
  • To serve, arrange chicken on 1/2 bread, then top with hot onions, mushrooms, cheese and bacon.
  • Bake at 375ºF for 5 minutes or until cheese is melted.
  • Top with remaining bread.
  • To serve, cut in half.
  • Sprinkle with thyme and, if desired, salt and ground black pepper, to taste.

1 teaspoon dried parsley

This is one of my husband's favorites, which is good because I love it too and it is so easy to make! I love recipes that can easily be adapted, and this one is perfect because there are so many different things you could do with it. Try it and I promise you will love it! For me the best thing about this recipe is LOTS of filling -- so if you feel like there is not enough, go ahead and double the recipe.

4 skinless, boneless chicken breast halves
1 teaspoon butter
1 (4.5 ounce) can sliced mushrooms, drained
1 egg
½ cup cheese-flavored crackers (such as Cheez-It Duoz Sharp Cheddar and Parmesan®), crushed
1 (8 ounce) package cream cheese
1 ¼ cups shredded Cheddar cheese, divided
6 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x12-inch baking dish.
  • Place a chicken breast between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken breast with the smooth side of a meat mallet to a thickness of 1/4 inch. Repeat with the other chicken breasts.
  • Melt the butter in a small skillet, and cook the mushrooms until they begin to brown, about 8 minutes. Set aside. Beat egg in a shallow bowl. Place the cracker crumbs in another shallow bowl.
  • In a bowl, mix together the mushrooms, cream cheese, 1 cup of Cheddar cheese, and Parmesan cheese; spread the mixture generously over the chicken. Roll the chicken breasts up, dip each into beaten egg, and roll the bundles in cracker crumbs. Place into the prepared baking dish. Sprinkle the bundles with the remaining 1/4 cup of Cheddar cheese.
  • Bake in the preheated oven until the chicken is cooked through, the filling has melted, and the crumbs are golden brown, about 30 minutes. An instant-read thermometer inserted into the center of a roll should read at least 165 degrees F (74 degrees C).

A real crowd pleaser that will have everyone feeling full. Worth every calorie.

125g mozzarella ball
140g taleggio cheese , rind removed
100g butter , softened
3 garlic cloves , finely chopped
handful parsley leaves, chopped
1 tsp fresh marjoram leaves, chopped, optional
1 long baguette
large pinch of paprika

Steps:

  • Light the barbecue. Chop the mozzarella and taleggio into small chunks and tip into a bowl with the butter, garlic, herbs and some salt and pepper. If you want, you can mix everything together with a wooden spoon, but I prefer to use my hands.
  • Using a bread knife, cut diagonal slices along the loaf about three quarters of the way into the bread - don't cut all the way through. If it looks like the bread won't fit on the barbecue, cut it in half and make two smaller ones.
  • Push the garlic butter generously between each cut, allowing some to ooze onto the top - it will caramelise and taste superb. Sprinkle the paprika over. Wrap the bread up like a cracker in a double thickness of foil. You can prepare to this stage up to a day ahead.
  • Put the pack straight onto the barbecue. Cook for 2 minutes then roll it over onto its side and cook for 2 minutes more. Roll it onto its other side and cook for a further 2 minutes. Have a peek - if the cheese is melting and the bread is crispy, remove it from the barbie. Pull the slices apart and eat while hot and gooey.
