CHEESY BAKED CHICKEN TACOS

How to make the BEST cheesy oven baked chicken tacos that are packed with flavor and so simple to make!

2 lbs. ground chicken
1 Tbsp butter
1 tsp olive oil
1 large yellow onion (diced)
4 cloves garlic (minced)
15 oz can diced tomatoes (drained very well)
7 oz can diced green chiles (drained)
15 oz can black beans (drained and rinsed)
2 packages (1 oz each) taco seasoning
20 taco shells (Stand n Stuff shells are my recommended type)
15 oz can refried beans (warmed slightly)
16 oz package Mexican shredded cheese blend
shredded lettuce
fresh tomatoes
minced cilantro
sour cream
taco sauce
salsa
jalapenos
guacamole
sliced green onions

Steps:

  • Preheat oven to 375°F and spray two 9x13 baking dishes with nonstick cooking spray. Set aside.
  • To a large skillet, add butter and olive oil and heat over MED HIGH heat. Add ground chicken and cook, breaking apart with a wooden spoon as it cooks, for 5-7 minutes, until fully cooked. Drain in a colander and return to skillet.
  • Add diced onion and minced garlic and cook an additional 5 minutes until onions are tender. Add taco seasoning and cook another 30 seconds or so, stirring to combine everything well.
  • Remove skillet from heat then add canned tomatoes, green chilis and black beans.
  • Place 10 taco shells in each prepared baking dish. Spread approximately 2 Tbsp refried beans on the inside of each taco shell. Top refried beans with approximately ½ cup of the prepared taco meat mixture, then add about ¼ cup shredded cheese on top of each taco.
  • Place casserole dishes side by side on the same rack. Bake for approximately 10 minutes until cheese is melted, tacos are heated through and shells are crisp and starting to get golden brown.
  • Top with desired toppings and enjoy!

Serve these smoky tacos topped with your favorite toppings. We love something bright and fresh like lime, onion, and cilantro. We've given a list of suggested toppings, but add what you love.

3 slices bacon
1 1/2 pounds boneless, skinless chicken thighs
1 1/2 teaspoons chili powder, see our homemade chili powder recipe
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon ground coriander
2 garlic cloves, minced
1/8 teaspoon cayenne pepper, or more to taste
1/4 cup chicken stock, vegetable stock or water, see our homemade stock recipe
Juice of half a lime
Salt and fresh ground pepper to taste
Tortillas, warmed
Optional taco toppings: onions, pickled red onions, cheese, sour cream or crema, avocado or guacamole, hot sauce, pickled jalapenos, lettuce or cabbage and cilantro

Steps:

  • Cook bacon in a large skillet over medium heat, turning as necessary until fat has rendered and bacon is crispy, about 8 minutes. Drain bacon on paper towels and set aside for later. Discard all but 2 tablespoons of bacon fat.
  • Season both sides of the chicken with salt and pepper. Add oil to hot pot. Add chicken to the skillet with bacon fat and cook, turning occasionally, until chicken is well browned on all sides, about 8 minutes. Turn heat to low then transfer chicken to a cutting board and cut into small pieces. (It may not be fully cooked).
  • Add the chili powder, cumin, smoked paprika, coriander, and garlic to the pan. Cook, while stirring, for 1 minute.
  • Add the chopped chicken back to the pan. Pour stock over chicken then use a wooden spoon to scrape up any brown bits stuck to the bottom of the pan. Cook until stock has thickened and coated the chicken. Stir in lime juice.
  • Serve chicken next to warm tortillas and your favorite taco toppings. Don't forget to crumble the bacon from earlier and add to the tops of the tacos.

This is really easy to make and very Yummy. My boyfriend and children all love them. We wanted something a little different from every day tacos and came up with this. We usually add sour cream, guacamole and salsa.

1 lb boneless skinless chicken breast
1 1/4 ounces taco seasoning mix, Cheesy (I always use Old El Paso)
1 red bell pepper
1 green bell pepper
1 red onion
5 -7 soft flour tortillas
1 (8 ounce) package santa fe pinto red beans and rice mix

Steps:

  • Prepare your rice according to the instructions on the package.
  • Cut the chicken into thin strips.
  • Brown in a skillet over medium-high heat. Follow instructions on the package of taco seasoning mix.
  • Slice the bell peppers and onion then saute them in a skillet.
  • Fluff your rice, heat your shells and start building your tacos.

4 slices bacon
¾ pound chicken breasts, diced
½ teaspoon kosher salt
½ teaspoon ground black pepper
1 medium shallot, finely chopped
1 clove garlic, minced
2 cups water
1 cup whole milk
4 cups elbow macaroni
1 tablespoon ranch dressing mix
3 cups broccoli florets
1 (8 ounce) package shredded Cheddar cheese
¼ cup sour cream

Steps:

  • Heat bacon in a large Dutch oven over medium heat. Cook, flipping occasionally until browned and crisp, about 10 minutes. Drain on paper towels.
  • Sprinkle chicken evenly with salt and pepper; cook in hot bacon drippings over medium-high heat, stirring often, until chicken is golden brown on all sides, about 4 minutes. Transfer chicken to a plate and set aside. Chicken will not be fully cooked at this point.
  • Add shallot and garlic to drippings and cook, stirring often, until fragrant, 2 minutes. Stir in water and milk; use a wooden spoon to scrape any browned bits from bottom of the Dutch oven. Stir in pasta and ranch dressing mix. Bring to a boil and simmer for 6 minutes.

½ teaspoon chili powder
½ teaspoon cumin
1 ½ teaspoons oregano
1 teaspoon garlic powder
1 teaspoon onion powder

½ teaspoon pepper
olive oil, to taste
2 boneless, skinless chicken breasts
4 oz cream cheese
¾ cup cheese blend
12 flour tortillas

Steps:

  • Preheat oven to 400˚F (200˚C).
  • In a bowl, add the paprika, chili powder, cumin, oregano, garlic powder, onion powder, salt, and pepper and mix to combine.
  • Place the chicken breasts on a parchment paper-lined baking sheet.
  • Drizzle with olive oil, pour half of the seasoning over the chicken and spread on both sides of the chicken. Save the remaining seasoning for later.
  • Bake for 30 minutes, flipping halfway, or until the internal temperature of the chicken reaches 165˚F (75˚C).

This is a favorite of my family. Also a favorite of mine because it is very quick to put together. I modified it from a recipe found in a Land O Lakes recipe brochure. I use turkey instead of chicken because it is available pre-packaged at my local grocery store.

1 lb ground chicken (I use ground turkey)
1 cup taco sauce (you choose the heat)
2 cups shredded Mexican blend cheese
10 taco shells
shredded lettuce
sour cream
sliced black olives
chopped tomato

Steps:

  • In large skillet, cook chicken or turkey over medium-high heat until it is no longer pink.
  • Stir in taco sauce.
  • Continue cooking until mixture just starts to boil.
  • Add cheese.
  • Remove from heat and stir just until cheese is melted.
  • Meanwhile, warm taco shells according to package directions.
  • Spoon into taco shells and serve with lettuce, tomato, sour cream, black olives or any other taco fixings your family enjoys.

½ teaspoon onion powder
½ teaspoon salt

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Mix oregano, onion powder, salt, paprika, chili powder, cumin, and pepper together in a bowl until well combined.
  • Place chicken breasts on the prepared baking sheet and drizzle with olive oil. Spread 1/2 of the seasoning mixture on both sides of chicken.
