This is the easiest recipe imaginable. It may be one of the reasons that Velveeta was invented. It's also low carb and delicious. What else do you need? I've never seen this serve more than four people, two in my household.

1 head cauliflower
Velveeta cheese, sliced 1/2 inch thick
1/4 cup heavy cream

Steps:

  • Wash the cauliflower and break into florets.
  • Steam until still crisp, but just starting to soften.
  • Drain well (let sit in colander for 5 mins.) and place in an ovenproof dish.
  • Pour the cream into the bottom of the dish.
  • Place enough cheese slices to completely cover on top of the cauliflower.
  • Place in the oven, uncovered with whatever else you are making (or at 350-400 degrees) and bake for 15 minutes, stirring every five minutes.
  • If the resulting sauce seems too thick, add an extra splash of cream, if too runny, let sit a few minutes.

4-1/2 teaspoons butter
4-1/2 teaspoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon white pepper
1-1/2 cups 2% milk
3/4 cup cubed process cheese (Velveeta)
2 packages (10 ounces each) frozen peas, thawed

Steps:

  • In a large saucepan, melt butter over low heat. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the cheese; stir until melted. Stir in peas; cook 1-2 minutes longer or until heated through.

Roasted Cauliflower and Peas With Chutney Cheese Sauce image

1 1/2 pound head cauliflower, cut into bite-size florets
3 tablespoons olive oil
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 cup frozen peas
1/4 cup unsalted butter ( 1/2 stick)
1/4 cup flour
3 cups whole milk
1 pound aged white cheddar cheese, grated
1/3 cup mango chutney
1/4 teaspoon dry mustard powder
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Cooked white rice, for serving
Chopped fresh cilantro, for serving

Steps:

  • Preheat oven to 375 degrees. Toss cauliflower with oil, salt and pepper. Arrange in a single layer on a baking sheet. Roast until almost tender and browning around the edges, about 30 minutes. Add peas to pan and stir to combine. Roast until peas are heated through, about 5 minutes more.
  • About halfway through cauliflower cooking time, prepare cheese sauce: Melt butter in a large saucepan over medium-high heat. Add flour and cook, stirring, until mixture is pale golden, about 1 minute. Whisking constantly, slowly add milk until fully incorporated. Bring to a boil and cook until thickened, about 3 minutes. Whisk in cheese, a little at a time (adding too much at once can cause sauce to break and become grainy), until smooth. Stir in chutney, dry mustard, salt and pepper.
  • Serve vegetables and sauce over rice; garnish with cilantro.
