MARY'S CHEESY SCALLOPED CABBAGE

1 small head green cabbage
2 c cheddar cheese, shredded
1 1/2 c medium white sauce
1/2 - 3/4 c fine bread crumbs, buttered
1/2 tsp salt
1 Tbsp butter
WHITE SAUCE:
3 Tbsp butter
3 Tbsp all purpose flour
1/4 tsp salt
1 1/2 c milk

Steps:

  • 1. Cut cabbage into wedges and cook uncovered until tender (about 25 minutes). Add salt to water just before cooking is completed. Drain cabbage, add butter.
  • 2. For white sauce: in a saucepan, melt butter over low heat, add flour and salt, stir until combined. Gradually add the milk, stirring constantly until thickened.
  • 3. Layer the cabbage, cheese, and white sauce in a 2-1/2 qt. casserole dish. Repeat layers.
  • 4. Top with buttered bread crumbs.
  • 5. Bake at 375 for 25 minutes, or until bread crumbs are browned.

1/4 cup milk
1 cup packed shredded American cheese or 1 Velveeta cheese
1/2 teaspoon salt, less if desired

1 cup finely crushed butter flavored cracker
4 tablespoons melted butter, more if needed

Steps:

  • Cook cabbage 5-7 minutes in salted water, drain well.
  • Combine soup, milk, cheese, salt and pepper in large bowl.
  • Microwave til cheese melts and is creamy. Stir occasionally.
  • Fold in cabbage.
  • Pour into 1-1/2 quart casserole dish.
  • Mix cracker crumbs and melted butter.
  • Sprinkle evenly over top.
  • Bake in 350º over for 30-40 minutes til bubbly.

1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced carrot
1/2 cup diced red bell pepper
3 cups shredded cabbage (I used cole slaw mix)
1/2 teaspoon dill seed
1/2 cup butter
1/2 cup flour
1 cup milk
1 cup vegetable broth
3 ounces havarti cheese, cubed
1/4 teaspoon thyme
1/2 teaspoon white pepper
3 slices center cut bacon, cooked and crumbled

Steps:

  • In a large saucepan cook vegetables in 2 cups vegetable broth until tender, about 45 minutes. Add dill seed.
  • While vegetables are cooking make sauce as follows: Melt butter in medium saucepan; stir in flour and cook 1 minute, stirring constantly. Stir in milk and remaining 2 cups vegetable broth. Cook over medium heat, stirring occasionally until thickened, about 8-10 minutes.
  • Add cheese, thyme, and white pepper.
  • When cheese has melted, add to vegetable mixture and stir well. Add crumbled bacon and stir again.
  • Serve hot and enjoy!

2 Tbsp. extra-virgin olive oil
1½ tsp. kosher salt, plus more
1 tsp. freshly ground black pepper, plus more
2 medium shallots, quartered through root end
4 garlic cloves
2 cups heavy cream
1 Tbsp. thyme leaves, plus more for serving
1 Tbsp. unsalted butter
3 oz. Gruyère, grated (about 1½ cups)
½ oz. Parmesan, finely grated (about ½ cup)

Steps:

  • Place oven racks in upper third and middle of oven; preheat to 350°F. Place cabbage on a rimmed baking sheet and drizzle with oil; season lightly with salt and pepper. Roast until tender and edges are golden, 40-45 minutes.
  • Meanwhile, bring shallots, garlic, cream, 1 Tbsp. thyme, 1½ tsp. salt, and 1 tsp. pepper to a simmer in a small saucepan over low heat. Cook, stirring occasionally, until shallots and garlic are very soft, 15-20 minutes. Let cool slightly. Transfer to a blender; blend until smooth.
  • Rub the inside of a 3-qt. shallow baking dish with butter. Arrange cabbage in dish so wedges are lying on a cut side; pour cream mixture over. Bake on middle rack, uncovered, until cream thickens, 30-40 minutes. Let cool 30 minutes.
  • Heat broiler. Sprinkle Gruyère and Parmesan evenly over cabbage. Broil until cheese is bubbling and gratin is deeply browned, about 4 minutes. Top with more thyme.
  • Do Ahead: Gratin (without cheese) can be baked 1 day ahead. Cover and chill. Bring to room temperature before sprinkling with cheese and broiling.

  • Top with crumbs.

This takes less than 20 minutes to throw together, so on busy nights I love to prepare this - it's very warm & cheesy and so it's the perfect comfort food. Plus, it's almost a 1-dish meal, though I like mine with a small baked potato & some corn on the cob on the side. I don't think any vegan cheeses come close to "Follow Your Heart" because it's so tasty and melts very well - any other substitutions I've used have not been as successful.

8 ounces fire roasted diced tomatoes
1 tablespoon nutritional yeast

Steps:

  • Chop ½ of a head of cabbage up into thin strips and place (uncooked) in the bottom of a lightly greased casserole dish.
  • Sautee mushrooms, garlic, cayenne pepper, oregano & sausage in the Braggs amino acids on medium-high heat until the mushrooms start to soften. Layer on top of the cabbage.
  • Layer ½ cup nacho cheese on top of the mushrooms/sausage mixture.
  • In same pan, add canola oil and the onion. Add salt to taste. Cook until onions are translucent. Add it on top of the cheese layer.
  • Mix the nutritional yeast with the rice, and then layer the rice on top of the onions.
  • On top of the rice, layer the entire shaved carrot.
  • On the carrot, layer the fire roasted tomatoes.
  • Add the bread crumbs on top of the tomatoes.

1 lb smoked sausage
1 medium head of cabbage
6 medium potatoes, russets
CHEESE SAUCE
1/4 stick butter
1/4 c flour
3 c milk
2 tsp salt
1 tsp onion salt
1 tsp paprika
1 tsp black pepper
pinch 1 pinch of cayenne pepper
1 clove garlic, minced
1 c sharp cheddar cheese, shredded

Steps:

  • 1. Preheat oven to 375 degrees. Grease a 13x9 pan, and set aside. This part is easy peasy...chop smoked sausge in chunks, like 1 1/2 inch pieces, chop potatoes in chunks, mine were like 1/2 inch slices, and chop head of cabbage in chunks, thick chunks are great. Place in greased 13x9 in pan.
  • 2. In a large sauce pan on medium heat, melt butter and blend in flour to create a roux, stir with a whisk. Slowly add in milk, continuing to stir with a whisk. Add salt, onion salt, paprika, cayenne pepper, black pepper and garlic. Stir constantly, sauce will thicken, usually about 7-10 minutes of stirring. Sprinkle cheddar cheese into sauce mixture, continue to stir until melted completely. Sauce will be somewhat salty, but this will bake into potatoes and cabbage for a perfect blend.
  • 3. Pour cheese sauce directly onto cabbage, potatoes and smoked sausage. Stir. Cover with aluminum foil and bake for 45 minutes at 375 degrees. Un-cover foil and continue to bake for an additional 10 minutes. Let stand for 5 minutes, serve.

1 medium onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 Tbsp worcestershire sauce
1 Tbsp my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)
10 oz can diced tomatoes with green chilies, undrained
3 c chopped cabbage
10 oz beef broth
1 c shredded sharp cheddar cheese

Steps:

  • 1. Brown the ground beef in a skillet over med. high heat and drain off the grease. Add the onion, bell pepper, garlic, worcestershire and house seasoning. Combine well. Add the tomatoes and broth, stir and then add in the cabbage. Cover and reduce the heat to medium and cook until the cabbage is tender but not mushy, about 20-25 minutes. Uncover and stir in the cheese, cook until the cheese is melted. Serve over rice if desired.

16 pkg egg noodles cooked and drained
1 stick butter
1 medium onion diced
6 clove garlic minced
1 Tbsp caraway seeds
salt and pepper to taste
1/2 c dry white wine
1 lb velveeta cubed
1/2 c heavy cream

  • 1. Add cabbage to a large pot of boiling salted water and boil until crisp tender about 5 minutes.
  • 2. Add butter to large saucepan. Add onions, garlic, and caraway seeds and cook until translucent. Add salt to taste.
  • 3. Deglaze with white wine and reduce until almost evaporated. Stir in drained cabbage. Cook 2 minutes.
  • 4. Meanwhile add heavy cream to pan with cheese. Cook until cheese is melted.
  • 5. Add cooked noodles to cabbage pan and pour in melted cheese. Stir and cook until well combined. Top with a pinch of pepper.

My dad made these when I was a kid and now it is a staple at every family barbecue. My DH has turned it into his 'pet recipe' and I must say, it is DElicious! The times are approximate because we always cook it on the grill although it can be done in the oven and they vary depending on the size of cabbage you use. Also you may not need all of the butter and probably only half of the cheese, but we always make at least two heads.

1 small head of cabbage
1/2 cup butter
1 (15 ounce) jar Cheez Whiz, we always use the store brand it seems to melt better
salt and pepper

Steps:

  • Lay cabbage on its top with the core facing up.
  • Carefully cut the core out of the cabbage and hollow it out about halfway deep and about 2 inches across.
  • Generously salt and pepper the cabbage.
  • Fill the hole with butter and wrap in two layers of foil.
  • Put cabbage on top rack of your grill and cook on medium heat for about 2 hours or until soft. Again times may vary.
  • Open foil and fill hole with cheez whiz.
  • Recover and put back on grill until cheese has had a chance to melt through.

  • In a very large Dutch oven or wok, fry the bacon until crisp; remove from pan to a paper towel-lined plate and reserve 2 tablespoons of the grease, if desired. Discard any remaining bacon grease. Sauté the cabbage, onions and bell peppers in butter or bacon grease until tender and wilted; season well with salt and pepper. Stir in the chicken, sour cream, bacon and 8 ounces of cheese. Adjust the seasoning as needed. Spread in a greased 9x13" baking pan. Top with 4 ounces of cheese and sprinkle with paprika. Bake at 450º until golden brown and bubbly, about 20 minutes.   • Preheat oven to 350°. Place cabbage wedges onto a sheet tray, drizzle with oil, and season generously with salt and pepper. Roast, turning once halfway through, until tender, about 45 minutes. Meanwhile, in a medium bowl, whisk together cream, garlic, nutmeg, and Parmesan. Set aside. Transfer cabbage into a medium baking dish, pour cream sauce over, and toss in thyme sprigs. 1 lb (450 g) Savoy cabbage, thinly sliced
1 medium onion, chopped
2 medium cloves garlic, minced
3/4 cup (180 ml) low-sodium vegetable stock
1/2 cup Cream Cheese, at room temperature
3/4 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded Cheddar

Steps:

  • Preheat the oven to 400F; lightly brush the inside of a 1.5-quart casserole dish with oil.
  • Add the oil to a medium saucepan over medium-low heat; once hot, add the cabbage and onion and cook (covered) until the vegetables are softened but not browned, about 8 minutes, stirring occasionally. Add the garlic and cook 1 minute more, stirring constantly.
  • Whisk in the vegetable stock, cream cheese, salt, pepper, and half of the cheddar, stirring until smooth. Pour the mixture into the prepared casserole dish and top with the remaining half of the cheddar..
  • Cover the dish and bake until the casserole is bubbling throughout, about 20 to 25 minutes.
  • Serve warm.

This quick casserole recipe is an easy dinner for a busy household. Ritz crackers are crumbled atop creamy soup & melted cheese. Additional cabbage makes this casserole affordable & extra nutritious!

1 small cabbage, coarsely chopped
1 large onion, chopped
1/4 cup(s) butter
- salt & pepper, to taste
1/2 cup(s) mayonnaise
1 cup(s) cream of mushroom soup or cream of chicken soup
1/4 cup(s) butter
1 cup(s) sharp cheddar cheese, shredded
1 sleeve - ritz crackers, finely crushed

Steps:

  • Preheat oven to 350 degrees F.
  • Place cabbage into a casserole dish, sprinkle the onions over top of the cabbage.
  • Melt 1/2 stick of butter & pour over the cabbage. Sprinkle with salt & pepper.
  • In a small bowl, mix soup & mayonnaise & spread over the cabbage mixture.
  • Melt the other 1/2 stick of butter & mix with the grated cheese & crushed crackers spread over top of casserole.
  • Bake for about 45 minutes or until top is brown & inside is bubbly.
