2 Ball Park® Hot Dog Buns
¼ cup olive oil
5 cloves garlic, crushed
12 slices fresh mozzarella cheese
4 tablespoons shredded Parmesan cheese
½ cup diced tomatoes
¼ cup diced red onion
1 tablespoon garlic, minced
1 tablespoon finely chopped fresh basil
1 teaspoon Balsamic glaze
1 tablespoon Marinara sauce

Steps:

  • Preheat oven to 425 degrees F.
  • In a small pan, heat olive oil on medium-low heat.
  • Saute crushed garlic in olive oil for 10 minutes. Remove from heat.
  • Split each bun in half and brush with olive oil and garlic mix. Top with salt and pepper.
  • In a large baking pan, lightly toast the buns in preheated oven, oiled side up, for 3 to 5 minutes and then remove.
  • Heat oven to broil.
  • Mix together diced tomatoes, onions, basil and olive oil in a bowl. Season with salt and pepper.
  • Evenly distribute mozzarella and shredded Parmesan over each bun half. Place in oven for 5 to 7 minutes till cheese melts and starts to brown. Remove from oven.
  • Evenly sprinkle the diced tomato mix over each bun half.
  • Top with balsamic glaze or serve with side of marinara for dipping.

These savory buns-think cinnamon rolls, but with cheese and bacon instead of a sweet sugary filling, are the perfect solution to those few pieces of leftover cooked bacon hanging out in the fridge. You can prep the dry mix up to one month ahead of time, and store it in a container at room temperature. Just give it a shake before using to re-mix the ingredients.

2 cups all-purpose flour, plus more for rolling out dough
1 tablespoon granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 cup buttermilk
8 tablespoons (1 stick) butter, melted
1 1/2 cups shredded Monterey Jack
6 slices cooked bacon, finely chopped

Steps:

  • Preheat the oven to 425 degrees F.
  • To make the dough, whisk together the flour, sugar, baking powder, baking soda and salt in a deep bowl.
  • In a separate bowl or measuring cup, whisk together the buttermilk and 6 tablespoons of the melted butter. Pour over the dry ingredients, and stir together with a wooden spoon until it forms a shaggy dough.
  • Dump the dough onto a lightly floured surface. Using your fingertips, gently press the dough out into a 12-by-8-inch rectangle. Sprinkle the cheese on top, leaving a 1/4-inch border. Evenly sprinkle the bacon over the cheese. Roll the dough into a log, starting from the longest (12-inch) side nearest you. Pinch the ends closed. Cut into 8 equal pieces.
  • Using a pastry brush, use 1 tablespoon of the butter to coat the bottom and sides of an 8-inch round cake pan. Arrange the rolls, cut-side down, in the pan. Gently press them down with your fingertips to flatten slightly. Brush the tops of the buns with the remaining melted butter.
  • Bake until golden brown and the cheese is bubbly, 23 to 25 minutes. Cool in the pan for 5 minutes before serving.

5-3/4 to 6-3/4 cups all-purpose flour, divided
3 tablespoons sugar
1-1/2 teaspoons salt
2 packages (1/4 ounce each) active dry yeast
2 tablespoons butter, softened
2 cups warm water (120° to 130°)
1-1/2 cups shredded cheddar cheese
1/4 cup dried minced onion

Steps:

  • In a large bowl, combine 2 cups flour, sugar, salt, yeast and butter. Gradually add hot water. Beat for 2 minutes on medium speed. Add 1 cup flour and beat on high speed 2 minutes. , Stir in cheese, onion and enough of the remaining flour to form a soft dough. Turn out onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place dough in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down and turn out onto a slightly floured surface. Divide dough into 20 pieces; shape into smooth balls and place on greased baking sheets. Cover and let rise in a warm place until doubled, about 45 minutes. Bake at 400° for 15-20 minutes. Remove from the pans and cool on wire racks.

1 1/2 teaspoons salt
2 1/2 cups low-fat cheddar cheese (shredded)
1 tablespoon dill
1/2 tablespoon garlic powder
1/2 teaspoon chipotle pepper
1 1/2 tablespoons instant yeast
1 1/2 tablespoons sugar
1 1/2 cups warm water
1/4 cup olive oil
1/3 cup onion (minced)

Steps:

  • mix yeast, water, and sugar and set aside for 5 min
  • mix flour, onion, and spices.
  • add yeast mix and oil to flour mix all at once and stir until dough forms.
  • knead until smooth and elastic and not too sticky, adding more flour if needed. cover with a dish cloth and leave in a warm place (like your oven that was left on the lowest setting for 5 min but be sure to put an oven mitt under the bowl) for about 30 min or until doubled in size.
  • punch down dough and place on a lightly floured surface. roll out into about a 1/4 inch thick rectangle and sprinkle about 1 1/2 cups of the cheese over top.
  • roll up lengthwise like a jelly roll and cut into 1 1/2 inch slices (these tend to spread sideways rather than up). place into a greased pan, about an inch apart so when they spread they'll be just touching. i used the bottom of a roasting pan since my lasagna pan was a bit too small. return to the warm place until doubled again (probably more like 20 min this time).
  • top with the remaining cheese now that there's enough surface area to put it.
  • bake at 325 for about 30 min or until exposed bread bits are starting to turn a bit golden, cool and pull apart carefully.

yeast dough, one loaf size
1 eight ounce brick of cream cheese, softened
1/4 cup soft butter
2 cups chopped ham
1 1/2 cups broccoli
2 cups fresh grated cheese, sharp cheddar or your choice
1 cup grated parmesan cheese
1 cup green onions finely chopped

Steps:

  • 1. Let the cream cheese come to room temperature so it is easier to spread.
  • 2. Use your favorite bread dough, enough for one loaf of bread and let it rise for about an hour. Line a large sheet pan with parchment paper.
  • 3. Plan ahead. Prepare the ham and vegetables. I chop my ingredients small.
  • 4. Roll out the dough with a rolling pin in a rectangular size on a cutting board, about 1/4 inch thick.
  • 5. Brush melted butter over the dough, and then spread the softened cream cheese over the buttered dough.
  • 6. Add the chopped ham to the dough, and press it down into the dough with your fingers.
  • 7. Add the chopped broccoli. Press it down.
  • 8. This is the cheese I used. You can use whatever you like. Sharp cheddar is wonderful. So is Monterey Jack and Pepper Jack. For a lighter Brunch Bun for a ladies luncheon, select Fontina or Gruyere cheese.
  • 9. Add the cheese to the dough. Press it down.
  • 10. Add the onions. Press down.
  • 11. Add the Parmesan cheese to the dough and pat it down with your fingers. Now, roll it up into a long log. Start rolling it from the long side of the dough as depicted in the photo. Hold it firmly. It will be slightly lumpy. Slice it into 1 1/4 inch slices, as if you were making sweet rolls. Lift carefully with a spatula and place the slices on the parchment paper on the sheet pan. (Lay the slices down)
  • 12. Place the slices about 1 1/2 inches apart. Let the slices rise again for about 40 minutes.
  • 13. Bake in a 350 degree oven for 30 to 40 minutes until golden brown on the tops and the bottoms of the buns. Brush warm tops with butter and sprinkle with sea salt. This recipe makes about 16 Brunch Buns.

  • Preheat your oven to 225°C/205°C (fan). Cut the top off the head of garlic, so as to slightly expose the cloves inside and place on a piece of kitchen foil. Drizzle with 2 tbsp of olive oil, then wrap the garlic in foil. Bake for 35 minutes and let cool. Next, remove the mushy garlic cloves from their pods.
  • While your garlic is in the oven, add the remaining 2 tbsp of olive oil to the water and mix with the flour, yeast and salt (at opposite sides of the bowl). Mix until well combined and transfer to a lightly floured surface. Knead for 8-10 minutes until smooth and elastic. Put the dough in a bowl, cover with cling film and leave to rise until doubled in size (about 40 minutes).
  • Put the ball of dough back on the surface, knock back and roll into a baguette-shaped piece of dough. Divide into 15 pieces of (roughly) the same size, rolling each one into a small ball.
  • Roll out each ball into a flat disk. Take a lump of cheese and place it in the middle, then top with garlic. Pinch up the edges and seal. Place your lookbol (pinched side down) on an oiled baking tray. Repeat for the rest of your dough. Make sure you don't leave too much room in between if you want to make a tear 'n' share; otherwise space well apart.
  • Cover with a dampened kitchen towel and leave until doubled in size (about half an hour).
  • When the dough is nearly ready, preheat the oven to 200°C/180°C (fan). Bake for 25 minutes.
  • Remove from the oven, brush with 1 tsbp of oil and sprinkle with poppy seeds. You can eat them straight away (do be careful not to burn your tongue... hot cheese and whatnot) or cold.

700g strong bread flour , plus extra 5 tbsp for crosses and dusting
3 x 7g sachets fast-action dried yeast
500ml warm whole milk
140g mature cheddar , grated
5 tbsp grated parmesan (or vegetarian alternative)

Steps:

  • Mix the flour, yeast and 2 tsp salt in a big bowl. Make a well in the centre and pour in the milk. Mix with a wooden spoon, then your hands, to a soft dough. Knead for 10 mins, then put back in the bowl. Lightly cover with oiled cling film and leave somewhere warm-ish until doubled in size - about 30 mins.
  • Tip the dough onto a lightly floured surface and knead in most of the cheese. Dust a large, flat baking sheet with flour. Shape the dough into 12 round buns and arrange on the sheet with a 2-3cm gap between each. Loosely cover with another sheet of lightly oiled cling film and leave to prove until nearly doubled in size.
  • Heat oven to 200C/180C fan/gas 6. Mix the 5 tbsp flour for the crosses with the Parmesan and 5 tbsp water. Spoon into a disposable piping bag and pipe a line along each row of buns, then repeat in the other direction to make crosses. Scatter with the remaining cheddar and bake for 20-25 mins until golden. To reheat from frozen, warm in a low oven before serving.
