Number Of Ingredients 13

4 oz thin sliced bacon, ( 4 or 5 slices )
1 onion ( chopped
1 red bell pepper, ( seeded and chopped )
2 ribs of celery ( sliced and chopped )
1 clove of garlic ( minced )
8 large eggs ( lightly beaten )
2 c whole milk ( could use 1 large can of evaporated milk
mixed with 1 can of water in place of whole milk )
1/2 tsp salt
1/4 tsp black pepper
12 slice white bread 1/2 inch thick ( crust removed ) cut into 1 in. cubes
1 c grated cheddar cheese
2 large fresh tomatoes -sliced

Steps:

  • 1. Coat the inside of the slow cooker with cooking spray - In a Large skillet over Medium High Heat ,- Cook Bacon till Crispy ( about 5 to 7 minutes ) Transfer Bacon to a Paper Towel lined plate - Pour off all but 1 TBSP. of Bacon grease - Add onion Bell pepper and celery to Skillet - cook, stirring often till softened, ( about 3 to 5 minutes ) When softened Add the garlic, and saute 1 minute longer - Remove Skillet From Heat - Take Bacon and coarsley Chop. Set Aside
  • 2. In a Large Bowl, Lightly Beat Eggs, Milk, Salt , and Pepper - Add Bread cubes and Mixture fom the Skillet, bacon, cheese,and tomatoes, Stir Well and Pour Mixture into the Crock Pot, Cover and cook on LOW , about 3 to 3 1/2 HOURS , to check for Doness, insert a knife in the middle, if it comes out clean it's done .

12 slice your favorite bread, cut into cubes
3 c sliced mushrooms, fresh
1/4 c diced onion
10 3/4 oz can cream of mushroom soup( reg. or fat-free)
4 large eggs
2 1/2 c milk
1 tsp dried thyme leaves,crushed between fingers
1/8 tsp of each dry mustard and black pepper
1 c shredded swiss cheese (4 oz. pkg.)

Steps:

  • 1. Heat oven to 375^. Spray a 3-qt. shallow dish with buttery cooking spray. Combine and place prepared bread cubes,onions and mushrooms into the dish.
  • 2. Beat together the soup,eggs, milk, thyme,dry mustard and pepper in a medium bowl with a whisk. Pour mixture over bread mixture , pressing the mixture down to coat evenly. Let stand for 30 minutes to soak up liquid. Bake for 35 minutes. Sprinkle cheese over casserole evenly and bake for 10 minutes more or until cheese has melted. Serve with gravy over top of each serving, if desired.

This is a very basic, yet satisfying way of having bread pudding. It is a little indulgent I have to admit, but not overly so if you serve it with a big salad on the side. I hope you enjoy!

Number Of Ingredients 9

1 teaspoon butter, soft
4 slices whole wheat bread, make sure to use large slices (original says toast, but I used whole spelt soda bread)
2 eggs
150 ml whipping cream
100 ml milk
1 pinch nutmeg, freshly grated
1 pinch hot paprika
salt and black pepper
100 g gouda cheese, shredded (or cheddar)

Steps:

  • Grease a 15X15 cm casserole dish with the butter.
  • Half bread slices diagonally and layer into the dish.
  • In a bowl beat eggs with milk and cream. Season with nutmeg and paprike as well as salt and pepper to taste.
  • Pour the egg mixture over the bread slices and top with shredded cheese.
  • Bake in the preheated oven at 200°C/400°F for 20 minutes or until set and nicely browned.
