.66 cup beer
3 cups shredded Monterey Jack cheese
2 tablespoons all-purpose flour
½ cup frozen chopped spinach, thawed and drained
1 tablespoon chopped fresh cilantro
salt and pepper to taste

Steps:

  • In a medium saucepan over medium heat, bring beer to a boil. Lower heat. Slowly stir in Monterey Jack cheese and flour. Cook and stir until cheese is melted but not bubbly.
  • Mix spinach, cilantro, salt and pepper into the beer mixture. Serve warm.

1 cup salsa (I use hot)
2 cups shredded American cheese
1 cup shredded monterey jack cheese
4 ounces cream cheese
1/3 cup beer

Steps:

  • Combine salsa, American cheese, Monterey Jack cheese, and cream cheese in a medium pan.
  • Cook and stir over low heat until all cheese are melted.
  • Stir in beer and heat through. Serve warm (in a chafing dish or mini-crockpot) with chips.

1 pkg (8 oz.) cream cheese, at room temperature
1 envelope (1 oz.) ranch seasoning and salad dressing mix
1 tbsp. chopped chives
3/4 cup Cheez Whiz from 15 oz. jar
1/4 tsp. garlic powder
Baby carrots, broccoli florets, radishes and thin pretzel crackers optional.
1/2 cup beer
1/4 tsp. cracked pepper

  • In bowl, whisk cream cheese, Cheez Whiz, beer, seasoning mix, garlic powder and pepper until blended and smooth. Transfer to serving bowl; sprinkle with chives. If desired serve with carrots, broccoli, radishes and pretzel crackers.

3 slices OSCAR MAYER Butcher Thick Cut Applewood Smoked Bacon, finely chopped
1 clove garlic, minced
1 small onion, finely chopped
1 bottle (12 oz.) lager-style beer
1 pkg. (8 oz.) KRAFT Shredded Cheddar Cheese
2 Tbsp. flour
1 tsp. dry mustard
1/8 tsp. crushed red pepper
dash LEA & PERRINS Worcestershire Sauce
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cut into cubes
3 Tbsp. KRAFT Classic Ranch Dressing
2 green onions, sliced

Steps:

  • Cook bacon in large saucepan until crisp. Remove bacon from pan with slotted spoon; drain on paper towels. Add garlic and onion to drippings in pan; cook and stir on medium heat 5 min. or until caramelized. Stir in beer; bring to boil. Reduce heat to medium-low; simmer 5 min.
  • Combine cheese, flour, mustard and pepper; gradually add to bacon mixture, stirring constantly. Stir in Worcestershire sauce; cook and stir until cheese is melted. Stir in cream cheese; cook and stir until cheese is melted and mixture is blended.
  • Pour into serving bowl. Spoon dressing over dip; swirl gently. Top with onions and bacon. Serve warm.

How to make Cheesy Bacon & Beer Dip

3 slices applewood smoked bacon, diced
1 clove garlic, minced
1 small onion, finely diced (about ½ cup)
Kosher salt, to taste
1 bottle (12 oz.) lager-style beer
1 pkg. (8 oz.) shredded Cheddar cheese
2 Tbsp. all-purpose flour
1 tsp. dry mustard
Pinch of crushed red pepper flakes
Dash of Worcestershire sauce
4 oz. (½ of 8-oz. pkg.) cream cheese, cut into cubes
3 Tbsp. ranch dressing
2 green onions, sliced
WHEAT THINS Big Snacks

Steps:

  • SET a heavy-based saucepan over medium heat. Add bacon and saute for 7 min. until golden and crispy. Remove with a slotted spoon and set aside. Add garlic and onion to pan with bacon fat and saute for 5 min. until well caramelized. Season with salt. Add beer and bring to a boil. Simmer for 5 min. to allow beer to reduce slightly.
  • IN a large bowl, toss cheese with flour, mustard and pepper flakes. While stirring gently, add cheese to the saucepan. Add Worcestershire and continue to cook until cheese is melted. Stir in cream cheese and cook just until melted. Pour into bowl and swirl in ranch dressing. Top with green onions and reserved bacon bits.
  • SERVE warm with WHEAT THINS Big Snacks.
