2 pounds ground beef
1 large onion, finely chopped
1 medium green pepper, finely chopped
1 pound process cheese (Velveeta), cubed
1 pound pepper jack cheese, cubed
1 jar (16 ounces) taco sauce
1 can (10 ounces) diced tomatoes and green chiles, drained
1 can (4 ounces) mushroom stems and pieces, drained and chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
Tortilla chips

Steps:

  • In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in the cheeses, taco sauce, tomatoes, mushrooms and olives. Cook and stir over low heat until cheese is melted. Serve warm with tortilla chips.

This cheesy Mexican-inspired taco casserole is a simple freezer-friendly dinner you can make ahead of time and heat up later. This recipe also includes freezing and defrosting instructions for those busy weeknights. Whether you make this beef taco casserole for dinner tonight or prep it now for a time-saving freezer meal, you're guaranteed to have delicious results.

1 lb lean (at least 80%) ground beef
1 package (1 oz) Old El Paso™ 25% less sodium taco seasoning mix
2/3 cup water
1 red bell pepper, cut into 1-inch strips
2 3/4 cups Old El Paso™ Thick 'n Chunky salsa
1 package (12 oz) frozen whole kernel sweet corn
6 Old El Paso™ flour tortillas for soft tacos & fajitas (6 inch)
2 cups shredded Colby-Monterey Jack cheese blend (8 oz)

Steps:

  • Heat oven to 350°F. In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in taco seasoning mix, water and bell pepper strips. Simmer 3 to 4 minutes, stirring frequently, until thickened. Stir in salsa and corn.
  • Spray 13x9-inch (3-quart) baking dish with cooking spray. Cut tortillas in half; place 6 tortilla halves in bottom of baking dish.
  • Top with half of beef mixture (about 3 1/2 cups). Sprinkle with 3/4 cup of the cheese and remaining tortilla halves. Top with remaining beef mixture and cheese.
  • Spray piece of foil large enough to cover baking dish with cooking spray. Cover baking dish with foil sprayed side down. Bake 35 to 40 minutes or until heated through and cheese is melted.
  • To Make Ahead:Wrap foil-covered casserole in double layer of plastic wrap; label and freeze up to 3 months. To thaw and bake:Thaw overnight or until completely thawed in refrigerator. Remove plastic wrap. Bake 1 hour to 1 hour 10 minutes or until center is hot (165°F) and cheese is melted. To bake from freezer (no thawing):Heat oven to 350°F. Remove plastic. Bake 1 hour 30 minutes to 1 hour 40 minutes or until center is hot (165°F) and cheese is melted.

6 ounces dry extra-wide egg noodles, uncooked
1 pound ground chuck beef (80% lean)
2 cups frozen Southwest mixed vegetables (corn, black beans, red peppers)
1 (10 ounce) can Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
1 (10 ounce) can red enchilada sauce
1 ¼ cups water
1 ¼ cups shredded Mexican blend cheese
¼ cup thinly sliced green onions
1 teaspoon Sour cream

Steps:

  • Preheat oven to 400 degrees F. Spray 13x9-inch glass baking dish with cooking spray. Place uncooked noodles in baking dish.
  • Heat large skillet over medium-high heat. Add beef; cook 5 to 7 minutes or until crumbled and no longer pink. Drain. Add vegetables, undrained tomatoes, enchilada sauce and water to skillet; stir. Bring to a boil. Pour mixture over noodles.
  • Cover dish tightly with foil; bake 15 minutes. Stir; sprinkle with cheese and cover with foil. Bake 10 minutes more or until noodles are tender. Sprinkle with green onions. Serve with sour cream, if desired.

1 (14 ounce) package kraft macaroni & cheese dinner mix
1/2 cup milk
1/2 cup butter or 1/2 cup margarine
1 lb ground beef
1 (1 1/4 ounce) package taco seasoning mix (taco bell home originals preferred)
3/4 cup water
3/4 cup sour cream (breakstone "or" knudsen preferred)
1 1/2 cups shredded cheddar cheese, divided
1 cup salsa (Taco Bell Home Originals thick 'n chunky preferred)

Steps:

  • Preheat oven to 400 degrees.
  • Prepare dinner as directed on package.
  • While macaroni is cooking, brown meat and drain.
  • Add taco seasoning mix and water to the meat; simmer 5 minutes.
  • Stir sour cream into prepared dinner.
  • Spoon half of the dinner mixture into 8-inch square baking dish; top with layers of the meat mixture, 1 cup of the cheese and remaining dinner mixture.
  • Cover.
  • Bake 15 minute.
