CHEESY BBQ CHICKEN PIZZA PINWHEELS
BBQ chicken pizza reimagined!

Steps:
- Preheat oven to 400°. Grease 8 or 9 inch round baking pan; set aside.
- Lightly flour a clean work surface and roll out the room temperature pizza dough to approximately 18x10-inch rectangle.
- Spread BBQ sauce over the surface of the dough leaving a 1/2-inch border all around the edges.
- Sprinkle 1/2 cup of mozzarella cheese and 1/2 cup cheddar cheese over the dough, then top with chicken, onion, and bacon.
- Starting on the long side, roll the dough away from you into a tight cylinder, tucking and pulling as you go. Pinch the seams together to seal.
- Cut into 8 equal slices and place cut side down in the prepared pan.
- Bake for 25 minutes. Sprinkle the remaining mozzarella and cheddar cheese on top and continue baking for another 5 minutes or until the cheese is melted.
- Garnish with fresh parsley and serve immediately with additional BBQ sauce for dipping.

I first made this pizza to use up some leftover chicken. It turned out to be so yummy now I cook the chicken just so I can make the pizza! This is great for a busy weeknight because you can get all of the ingredients ready ahead of time. Definitely use the smoked cheese if you can find it- it really gives it a whole other level...

- 1. Preheat the oven to 425 degrees. In a bowl, combine the shredded chicken with the barbecue sauce.
- 2. Spread the pizza crust dough out on a greased 12 inch pizza pan, or a greased 13x9 baking sheet.
- 3. Spread the barbecue chicken on the crust, and top with the caramelized onions. Sprinkle with grated cheese. Bake at 425 for 14-16 minutes. * I made the caramelized onions in the crockpot. So easy and you can make a lot and freeze some. I'll include a link to this recipe in the comment section below.
