4 lbs chicken breasts ((sliced in half, crosswise))
1 1/4 cup bbq sauce
10 oz Monterey Jack cheese (grated)
1 lb bacon ((cooked))
1 cup tomatoes ((freshly diced))
3 tbsp sliced green onions ((optional) )
1 Tbsp salt, pepper, and paprika
3 Tbsp sunflower oil ((for every 4 chicken breasts, fried))

Steps:

  • Generously season the chicken breasts with salt, pepper, and paprika on both sides. Set aside.
  • Heat a 12-inch skillet over high heat. Drizzle with 3 Tbsp of oil and sear each side of the chicken for 2-3 min on each side.
  • Transfer the chicken onto a large baking sheet and continue to fry the remaining chicken in batches.
  • Spoon 1 heading Tbsp of BBQ sauce over each chicken breast.
  • Top each chicken with 1 slice of bacon (I break mine in half), and sprinkle chicken with shredded cheese.
  • Bake at 300°F for 20-25 minutes or until the cheese melts and chicken is done.
  • Garnish with diced tomatoes and scallions, if desired.

8 slices bacon
4 boneless chicken breasts, skin on
½ teaspoon salt
½ teaspoon pepper
¾ cup Heinz Tomato Ketchup
⅓ cup maple syrup
2 tablespoons grainy Dijon mustard
2 tablespoons lemon juice
1 clove garlic, minced
Lemon wedges
Chopped fresh chives

Steps:

  • Cook the bacon until just opaque. Blot on paper towels. Sprinkle chicken evenly with salt and pepper. Wrap each chicken breast in bacon, securing strips in place with toothpicks. Set aside. Preheat the grill to medium-high.
  • Blend ketchup with maple syrup, mustard, lemon juice and garlic. Brush half the sauce all over chicken. Place chicken on grill and turn heat down to medium. Grill, turning and basting twice with remaining sauce until bacon is almost crisp, about 15 minutes or until chicken is cooked through.
  • Squeeze lemon wedges over chicken and sprinkle with chives. Remove toothpicks before serving.

1/3 cup barbecue sauce (your favorite(Sweet Baby Ray's is ours)
8 slices bacon, cooked
1 cup cheddar cheese, shredded
4 scallions, trimmed and sliced
1 small tomatoes, chopped

Steps:

  • Preheat oven to 350°.
  • Spray 3-quart baking dish with cooking spray.
  • Place chicken in prepared dish; sprinkle with salt and pepper.

1 tablespoon olive oil
2 cups Italian bread crumbs, divided
4 slices peppered bacon
4 (5 ounce) skinless, boneless chicken breast halves
½ cup shredded Parmesan cheese, divided
2 large eggs, well beaten

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with olive oil, then sprinkle 3 pinches bread crumbs across the bottom.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 11 minutes. Drain bacon slices on paper towels.
  • Filet chicken breasts 90% of the way through and open like a hot dog bun. Spread 2 tablespoons chopped Parmesan cheese on one side of each breast. Top each with a bacon slice and 1 1/2 tablespoons shredded Parmesan.
  • Close the breasts. Dip in beaten egg, then in bread crumbs. Place in the prepared baking dish. Sprinkle remaining shredded Cheddar over top.
  • Cook in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
