BACON-WRAPPED POTATOES
I received this recipe for bacon-wrapped potatoes years ago from a friend. It's a delicious new twist to a baked potato. I recently served these potatoes to visiting relatives from Norway, and they were a big hit. I love to cook and even wrote my own cookbook several years ago. -LaVerna Mjones, Moorhead, Minnesota

- Layer onion slices on cut side of two potato halves; top with other potato half. Wrap each potato with two bacon strips. Secure with toothpicks. Place on a lightly greased baking pan. Bake, uncovered, at 325° for 1 hour and 20 minutes or until potato is tender and bacon is crispy. Discard toothpicks.

Steps:
- Scrub potatoes, pat dry and pierce with a fork.
- Bake at 425 for 55-65 minutes or until soft.
- While potatoes are baking, cook bacon in a skillet until browned, cool and crumble.
- In 2 Tbsp of bacon grease, saute onion and green pepper until still tender crisp, then add mushrooms and saute until mushrooms are cooked, then set aside.
- When potatoes are cooked, cut a slice from the top of each.
- Scoop out the flesh, keeping the shell intact.
- Mash potato, adding 1 cup of the cheese, milk, butter, egg, salt, vegetable mixture and half of the bacon.
- Spoon mixture into the shells, top with remaining cheese and bacon.
- Bake at 350 for 20 minutes or until slightly brown on top.

- Heat oven to 425ºF.
- Cook bacon in large skillet until done but still pliable. Meanwhile, bake potatoes in foil-lined 15x10x1-inch pan sprayed with cooking spray 5 min. or just until potatoes are thawed.
- Stack Singles; cut into quarters. Cut each quartered stack in half. (You will have 24 strips.) Place 1 Singles strip on top of each potato nugget; wrap tightly with bacon piece. Secure with wooden toothpicks; return to baking sheet.
- Bake 12 to 15 min. or until bacon is crisp and potatoes are heated through.

- Heat gas or charcoal grill. Cut 2 (18x12-inch) sheets of heavy-duty foil. Spray with cooking spray.
- Add cut potatoes to medium bowl. Drizzle with oil; sprinkle with ranch dip mix. Add jalapeño chile; stir until evenly coated. Place equal amount of mixture on center of each sheet of foil. Evenly sprinkle with bacon.
- Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
- Place packs on grill over medium heat. Cover grill; cook 12 minutes. Rotate packs 1/2 turn; cook 12 to 14 minutes longer or until potatoes are tender. Remove packs from grill, cut large X across top of each pack. Carefully fold back foil, and sprinkle potatoes with cheese. If desired, garnish with sliced jalapeño chile.
