7 slices bacon
28 fancy toothpicks
28 cherry tomatoes
3 leaves romaine lettuce, cut into 28 (1 1/2-inch) pieces
1/2 cup Original Bisquick™ mix
1 lb ground beef
1 egg
1/4 cup mayonnaise
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
2 oz Cheddar cheese, cut into 1/4-inch cubes (about 1/2 cup)

Steps:

  • In 10-inch nonstick skillet, cook bacon over medium heat, turning often, until browned but not overly crisp. Drain on paper towels. Discard all but 1 tablespoon drippings. Cut each bacon slice into 4 pieces.
  • On each toothpick, thread 1 tomato half, 1 bacon piece and 1 lettuce piece; set aside.
  • In large bowl, mix remaining ingredients except cheese. Fold in cheese. Shape tablespoonfuls of mixture into meatballs; flatten slightly to resemble hamburgers.
  • In same skillet, heat bacon drippings over medium-high heat. Cook burgers in drippings 2 to 3 minutes on each side or until meat is no longer pink. Insert 1 toothpick in each burger; serve immediately.

3 cups bread flour
2 tablespoons sugar
1 package (1/4 ounce) quick-rise yeast
1-1/2 teaspoons salt
3/4 cup warm water (120° to 130°)
2 tablespoons olive oil
1 pound lean ground beef (90% lean)
3 garlic cloves, minced
1/8 teaspoon pepper
1 cup grated Parmesan cheese
1 jar (10 ounces) sun-dried tomato pesto
1 large red onion, chopped
1/4 cup bacon bits
1 cup shredded part-skim mozzarella cheese
1 cup sharp shredded cheddar cheese

Steps:

  • In a large bowl, combine 2 cups flour, sugar, yeast and salt. Add water and oil; mix until smooth. Stir in enough remaining flour to form a firm dough., Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 10 minutes., Meanwhile, in a large skillet over medium heat, cook the beef, garlic and pepper until meat is no longer pink; drain., On a floured surface, roll dough into a 15-in. circle. Transfer to a greased 14-in. pizza pan. Build up edges slightly. Prick dough thoroughly with a fork. Bake at 450° for 5-8 minutes or until lightly browned., Sprinkle crust with Parmesan cheese. Top with pesto, meat mixture, onion, bacon bits, and mozzarella and cheddar cheeses. Bake for 15-20 minutes or until cheese is melted.

  • Heat grill to medium heat.

This is the ultimate burger! Filled with Swiss cheese, topped with bacon, peppers and onions and Spicy Chipotle Aiolo Sauce. The sauce is the best! It goes on burgers, sandwiches, salads and works great for a veggie dip!

FOR THE BURGERS:
4 slices Turkey Bacon
½ cups Onion, Sliced Into Strips
1 cup Green Bell Pepper, Sliced Into Strips
1 pound Lean Ground Beef
¼ teaspoons Garlic Powder
¼ teaspoons Ground Black Pepper
2 whole Wedges Of Laughing Cow Swiss Cheese, Sliced In Half
4 whole Wheat Hamburger Buns
FOR THE CHIPOTLE AIOLI SAUCE:
3 Tablespoons Fat Free Mayonnaise
3 Tablespoons Plain Greek Yogurt, Non-fat
2 teaspoons Chopped Chipotle Chiles In Adobo
1 teaspoon Minced Garlic
½ teaspoons Ground Cumin
4 teaspoons Lime Juice, Fresh

Steps:

  • For the burgers:
  • In a pan over medium heat, cook turkey bacon until it's nice and crispy. Once bacon is done being cooked, take the bacon out of the pan and set aside. Add bell pepper and onion into the same pan and cook until tender about 10 minutes. When done, set aside.
  • Add ground beef into a small bowl. Add garlic powder and ground pepper and mix well.
  • Divide the raw meat into 8 equal balls (I used my scale to measure into 2 ounces for each). Flatten out the ball, into a hamburger shape, and place half of a cheese wedge onto the center of 4 of the pieces of hamburger. Take the other four pieces of the hamburger and place on top of the cheese. Squish the two burgers together and seal the edges so the cheese doesn't ooze out.
  • Place on a preheated medium heat grill and cook until done-about 5 minutes per side.
  • Place burger on buns, top the burgers with bacon, peppers and onions and sauce.
  • For Spicy Chipotle Aiolo Sauce:
  • In a small bowl place all of the sauce ingredients together and whisk until combined.
  • Makes 3/4 cups or 12 tablespoons of sauce.
