2 pounds ground beef
2 (15 ounce) cans diced new potatoes
1 cup chopped onion
4 cups milk
1 pound processed cheese food (such as Velveeta ®), cut into chunks
½ pound sharp Cheddar cheese, cut into chunks
ground black pepper to taste
⅔ cup mashed potatoes

Steps:

  • Heat a large pot or Dutch oven over medium-high heat. Cook and stir beef until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add diced potatoes and onion; cook and stir until onion is tender, 5 to 10 minutes.
  • Mix milk, processed cheese food, and Cheddar cheese into beef mixture; bring to a boil. Reduce heat and simmer, stirring often, until heated through and cheese is melted, 15 to 20 minutes; season with pepper. Add mashed potatoes for a thicker chowder; cook until heated through and thickened, about 5 minutes.

1/2 pound ground beef
3/4 cup chopped onion
4 tablespoons butter, divided
2 cloves garlic, minced
1 cup diced carrots
1 teaspoon dried basil
1 teaspoon dried parsley
3 cups chicken broth
4 cups diced peeled potatoes
1/4 cup flour
1 1/2 cups evaporated milk
2 cups cubed process American Cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup sour cream
Chopped dill pickle
Chopped tomato

Steps:

  • In a saute pan brown the ground beef. Drain and set aside. In same saute pan saute onion in 1 tablespoon butter until tender. Add garlic, carrots, basil and parsley. Saute about 3 minutes. Add broth and beef and potatoes. Bring to a boil. Reduce heat and cover, simmer for 15 to 20 minutes or until carrots and potatoes are tender. Meanwhile melt remaining butter in a small skillet. Add flour and cook, stirring, for 3 to 5 minutes. Gradually add evaporated milk, stirring constantly, cooking and stirring for 6 to 8 minutes. Gradually stir the sauce into the soup. Bring to a boil and cook for 2 minutes. Reduce heat to low. Add cheese, salt and pepper. Continue to stir until cheese melts. Remove from heat and blend in sour cream. Garnish each serving with chopped fresh tomatoes and dill pickle slices.

1 celery rib, thinly sliced

2-1/2 cups 2% milk, divided
1 cup shredded cheddar cheese

  • In a large saucepan, cook beef and onion over medium heat 6-8 minutes or until meat is no longer pink, breaking into crumbles; drain. Add potatoes, water, celery, bouillon and salt. 1/2 cup celery, chopped
1 green pepper, chopped
1 onion, chopped
4 cups potatoes, diced
3 beef bouillon cubes
3 cups water
6 tablespoons flour
4 cups milk
2 cups shredded cheddar cheese

Steps:

  • Brown ground beef in large pot. Drain off grease. Add potatos, onions, peppers, celery, salt and bouillon cubes. Pour in water and bring to a boil. Reduce heat cover and simmer for 15 to 20 minutes or until vegetables are tender. Whisk flour into milk and slowly pour into pot with meat and vegetables. Stir until soup is thickened slightly. 4 cups milk
2 cups grated American cheese (or cheddar if you prefer)
1 cup O'Brien potatoes (the cubed kind, not shredded)

Steps:

  • In a skillet, brown beef until almost done.
  • Stir in the onions and cook till onions are soft and meat is no longer pink. Drain off any remaining fat.
  • In a soup pan over medium heat, combine milk & cheese, cooking until just beginning to boil, stirring often.
  • Add beef, onion and potatoes to cheese sauce.
  • Lower heat and simmer for 20 minutes or until potatoes are tender.
  • Season with pepper.

Steps:

  • In a large saucepan over medium heat, cook and crumble beef until no longer pink; drain and set aside. In same saucepan, melt 1 tablespoon butter over medium heat. 2 celery, diced
2 cups water
3 cups chicken broth
2 lbs hamburger, browned and drained
1 teaspoon dried basil
1 (12 ounce) can evaporated milk
1 lb Velveeta cheese, diced
1/4 cup sour cream
salt
pepper

Steps:

  • Brown hamburger and onion, drain.
  • Place meat, onions, carrots, celery, basil, broth and water into crock pot. Cook on low 4-5 hours or until potatoes are tender.
  • Add the milk, cheese and sour cream and cook another 2 hours.
  • Add salt and pepper to taste.
