1 pound ground beef
1 tablespoon avocado oil
1 small onion (,finely chopped)
3 tablespoons tomato paste
1 1/2 teaspoons sweet paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon chili powder
1/2 teaspoon freshly ground black pepper
2 tablespoon all-purpose flour ((Gluten Free: dissolve 1 tablespoon cornstarch in the beef broth))
2 cups whole milk
1 3/4 cup natural non-MSG beef broth
2 cups dried whole wheat elbow macaroni pasta
(Gluten Free: Use GF Macaroni)
2 cups shredded Cheddar cheese

Steps:

  • Heat the oil in a large skillet over medium-high heat and brown the ground beef until no pink remains. Add the onions and cook until softened, about 5 minutes. Stir in the tomato paste, seasonings and flour. Pour in the milk and broth and stir. Stir in the macaroni.
  • Bring to a boil then reduce to medium-low, cover and simmer for 10-12 minutes or until the macaroni is done. For al dente check after 9 minutes.
  • Stir in the Cheddar cheese until melted.
  • Serve immediately garnished with some chopped fresh parsley if desired.

The recipe is super quick and budget-friendly, leaning on pantry ingredients you probably already have on hand. We use shredded Cheddar to make the dish extra cheesy and finish with chopped parsley for a fresh bite. Perhaps best of all: Everything cooks in one pot, even the pasta!

2 tablespoons vegetable oil
1 large onion, diced
2 cloves garlic, minced
1 tablespoon chili powder
1/2 teaspoon smoked paprika
Pinch crushed red pepper flakes, optional
Kosher salt and freshly ground black pepper
1 pound ground beef, 80/20
2 tablespoons tomato paste
1 tablespoon Dijon mustard
5 cups low-sodium chicken stock or broth
10 ounces elbow macaroni
2 cups shredded Cheddar, about 8 ounces
4 ounces cream cheese
1 cup flat-leaf parsley leaves and tender stems, chopped, plus more for garnish, optional

Steps:

  • Heat the oil in a large pot over medium-high heat. Add the onion and cook, stirring occasionally, until softened 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the chili powder, smoked paprika, red pepper flakes (if using), 1 teaspoon salt and a few grinds of black pepper and stir to combine. Add the beef and break it up into small pieces with a large spoon; cook, stirring occasionally, until beef is cooked through and no longer pink in the center, 6 to 7 minutes. Stir in the tomato paste and Dijon until combined. Pour in the chicken stock and 1 teaspoon salt, stir to combine and bring to a boil, 6 to 7 minutes. Add the elbow macaroni and cook, stirring occasionally, until the sauce has thickened and the pasta is al dente, 9 to 11 minutes. Remove from the heat and stir in the Cheddar and cream cheese until smooth. Fold in the parsley. Garnish with more parsley, if desired.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.

This is one of those happy accidents that happened when I had to make up dinner from what I had in the cabinet. It serves a whole family and the kids love it. I used a mixture of what was left in the bottom of the pasta boxes for the pasta. Any short pasta will work. Try adding broccoli, peas or carrots as a variation.

1 ½ pounds ground beef
¼ cup chopped onion
1 (10.75 ounce) can condensed cream of onion soup
1 (10.75 ounce) can condensed cream of chicken soup with herbs
1 (10.75 ounce) can condensed Cheddar cheese soup
1 cup water
¼ cup sour cream

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne, and cook for 8 to 10 minutes, or until tender. Drain.
  • Heat a large skillet over medium-high heat. Add ground beef and onion; cook, stirring to crumble the beef, until evenly browned. 2 tablespoons sweet pickle relish
2 tablespoons yellow mustard

Steps:

  • In 12-inch skillet, brown beef, onion and garlic over medium-high heat, stirring frequently, until thoroughly cooked; drain.
  • Stir in hot water, milk, sauce mix and uncooked pasta (from Hamburger Helper box), tomatoes, relish and mustard. Heat to boiling, stirring occasionally.

1 (28 ounce) can crushed tomatoes (I used Contadina with roasted garlic)
2 cups water
1 (7 1/4 ounce) box macaroni & cheese (cheese packet reserved)
2 cups frozen mixed vegetables
1/2 lb browned ground beef (I season with salt, pepper, onion powder, and garlic when browning)
1/4 cup milk
3 slices processed cheese

Steps:

  • Combine crushed tomatoes and water in pot and bring to a boil; add macaroni and stir. Meanwhile rinse frozen veggies under hot water to thaw, drain and add to pot along with ground beef; stir.
  • In a small bowl combine milk and cheese packet stirring until there are no lumps; stir into pot.
  • Break cheese slices into small pieces and melt on top of mixture and then stir.
  • This will become very thick as the macaroni absorbs all the liquid, feel free to add more water for a soupier consistency (or tomato juice to avoid a watery flavor).
