Homemade burgers and chips beat shop-bought every time. Why not make double and freeze a batch?

1 ¼kg lean beef mince
1 onion , finely chopped
140g breadcrumb
100g mature cheddar , grated
small bunch parsley , chopped
1 tbsp Worcestershire sauce
1 egg , lightly beaten with a fork
1 tsp mild chilli powder
2 ½kg bag of potato , cut into chunky chips
3 tbsp plain flour
10 tsp olive or sunflower oil
burger buns , lettuce, sliced red onion, tomatoes, gherkins, and sauces or relishes, to serve

Steps:

  • Tip the mince into a large bowl with the onion, breadcrumbs, cheese, parsley, Worcestershire sauce, egg, chilli powder, ½ tsp salt and some pepper. Mix together well with your hands, then divide the mixture into 10 and shape into burgers.
  • Bring 2 large saucepans of water to the boil (or prepare the chips in batches if you don't have enough big pans). Add the chips, bring the water back to the boil and set your timer for 3 mins. After 3 mins, drain the potatoes well and tip onto one or two large kitchen-papercovered trays. Scatter with the flour and some seasoning and gently toss to coat.
  • Freeze the burgers and chips (see freezing tips, below) or, to cook straight away, heat oven to 200C/180C fan/gas 6. In a baking tray, toss the chips in a little oil, then roast for 35-40 mins until crisp and golden. Meanwhile, heat a griddle pan, grill or barbecue until hot, then cook the burgers for about 5-8 mins on each side, or until cooked to your liking. Sandwich the burgers in toasted buns with salad and sauces, then serve with the chips.

1 tablespoon vegetable oil
1/2 onion, finely chopped
1 1/4 pounds ground beef, broken into pieces

Steps:

  • Heat a large cast-iron skillet over medium-high heat. Add the vegetable oil, then add the onion, ground beef, 1/2 teaspoon salt and a few grinds of pepper. Cook, undisturbed, until the beef starts to develop a crust, 1 to 2 minutes. Flip with a spatula, breaking up the meat. Continue cooking until browned, about 30 more seconds. Stir in the pickled peppers, then arrange the cheese over the meat mixture; remove from the heat and let melt.
  • Spread the mayonnaise on both sides of the rolls. Divide the beef among the roll bottoms using a spatula. Top with lettuce, tomatoes, ketchup, hot sauce and the roll tops. Serve with potato chips.

1 hamburger bun, split
⅓ pound ground beef
1 pinch salt
4 processed cheese singles (such as Kraft®)
1 tablespoon thousand island salad dressing (such as Kraft®)
1 slice tomato
1 leaf lettuce
1 slice onion

Steps:

  • Preheat a skillet over medium heat. Lightly toast both halves of the hamburger bun, cut sides down, 2 to 3 minutes. Set aside.
  • Separate beef into 2 portions and form each into a thin patty slightly larger than the bun. Lightly salt each patty and cook on one side for 2 to 3 minutes. Flip patties over and immediately place two slices of American cheese on each one. Cook until meat has reached desired doneness, 2 to 3 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Assemble the double cheeseburger in the following order: bottom bun, dressing, tomato, lettuce, beef patty with cheese, onion, beef patty with cheese, and top bun.

1 1/2 cups hot water
2 cups milk
1 package Hamburger Helper™ cheeseburger macaroni
5 cups slightly crushed tortilla chips
1 1/4 cups Old El Paso™ salsa (any variety)
2/3 cup sour cream
Sliced ripe olives, if desired
Green onion, sliced, if desired

Steps:

  • Cook beef in 10-inch skillet over medium-high heat, stirring occasionally, until brown; drain.
  • Stir in hot water, milk, uncooked pasta and sauce mix (from Hamburger Helper box). Heat to boiling, stirring occasionally.
  • Reduce heat; cover and simmer about 12 minutes, stirring occasionally, until pasta is tender. Remove from heat and uncover (sauce will thicken as it stands).
  • Arrange 1 cup tortilla chips on each of 5 serving plates. Spoon about 1 cup beef mixture over tortilla chips on each plate. Top each with 1/4 cup salsa and about 2 tablespoons sour cream. Sprinkle with olives and onions.

1 pound ground beef chuck (20 percent fat)
4 teaspoons softened butter
4 hamburger buns, split
Coarse salt and ground pepper
4 slices melting cheese, such as American or mild cheddar
Toppings, such as shredded iceberg lettuce, pickle chips, thinly sliced red onion, mustard, ketchup, and mayonnaise

Steps:

  • Heat broiler. Divide beef into 4 rounds and place each between two layers of plastic wrap. Using a rolling pin, roll beef into 1/4-inch-thick patties. Butter inside of each bun. Place on a baking sheet, buttered side up, and toast under broiler.
  • Heat a large cast-iron skillet or griddle over high. Generously season patties on both sides with salt and pepper. Working in batches, cook burgers 1 to 2 minutes. Flip and top each with cheese; cover and cook 1 to 2 minutes more. Place burgers on buns and serve with desired toppings.
