CHEESE-STUFFED BLOOMING ONION RECIPE BY TASTY

Here's what you need: medium sweet onions, milk, eggs, flour, garlic salt, black pepper, paprika, canola oil, marinara sauce, mozzarella

3 medium sweet onions, peeled
1 ½ cups milk
2 eggs
1 ½ cups flour
1 tablespoon garlic salt
1 tablespoon black pepper
1 tablespoon paprika
canola oil, for frying
marinara sauce, for serving
2 slices mozzarella

Steps:

  • Cut just the top off an onion and place it cut-side down.
  • Using a sharp knife, go around the root of the onion and make 4 evenly spaced cuts, being careful not to cut all the way through. Go back around and make 2 additional cuts between each quarter.
  • Flip the onion over and coax apart its layers (or "petals").
  • Place 2 slices of mozzarella cheese on top of each other, cut them into ½-inch (1 cm) slices, then cut them in half.
  • Place a piece of cheese in between all of the onion petals.
  • Freeze the onion for 1 hour.
  • In a medium bowl, whisk together the milk and the eggs.
  • In large bowl, whisk together the flour, garlic salt, black pepper, and paprika.
  • Place the onion in the wet mixture, turning it until every petal is coated.
  • Place the onion in the dry mixture, coating every petal.
  • Coat the onion in the egg wash and dry mixture one more time.
  • Place onion in the freezer for 20 minutes.
  • Heat canola oil to 375ºF (190ºC) in a deep-fryer or Dutch oven.
  • With tongs, add the onion to the oil for 2 minutes or until it is browned and crispy on all sides.
  • Move onion to plate covered in paper towels and allow to drain for 5 minutes.
  • Enjoy!

The tender mellow flavor of the roasted onion melts together perfectly with the blue cheese and bacon to create a side dish that is out of this world.

4 large-sized sweet onions (Vidalia, Maui sweets, sweet yellows)
1 stick butter (room temperature)
2/3 cup blue cheese (crumbled)
4 strips bacon (crisped and crumbled)
1/2 teaspoon dried thyme (crushed)
salt and pepper to taste

Steps:

  • Trim the ends off of the onions, and peel. Using a melon baller or small spoon, scoop out the inside of the onion to create a cavity. (Be careful not to dig all the way through the bottom).
  • In a small bowl mix together butter, cheese, bacon, and thyme. Season lightly with salt and pepper. (Blue cheese is a bit salty so go easy).
  • Using a spatula or small spoon, stuff the mixture into the onions, completely filling the center.
  • Place each onion on a square of aluminum foil. Draw foil up to create a sealed pouch. (Keep the foil from touching the sides of the onion, and make sure the top is sealed to hold in steam).
  • Heat your grill on high. Reduce heat to medium low and place the foil pouches directly over the heat. Close the lid of the grill and cook for 30 - 40 minutes. (Cooking time will vary upon size of onions). Resist the temptation to open the grill and the pouches.
  • Remove from grill and allow to stand for a full 5 minutes before opening the pouches. (Caution, the steam from the pouches will be hot).
  • Using tongs or a spoon carefully transfer the onion onto a plate or bowl. Use a spoon to drizzle any remaining butter from the bottom of the pouch over the onion.

Sweet onions stuffed with ham, cremini mushrooms and Gruyere cheese. A summer must at our house when the new crop of sweet onions come on.

2 medium sweet onions
1/4 teaspoon coarse salt, plus more for cooking water
1 tablespoon olive oil, divided
3 ounces cremini mushrooms, cut into 1/2 inch pieces (4 or 5)
2 ounces ham, cut into 1/4 inch pieces
1/8 teaspoon fresh ground black pepper
1 1/2 tablespoons red wine (Madeira preferred)
2 tablespoons chopped fresh parsley
1 ounce grated gruyere cheese (about 1/2 cup)

Steps:

  • Preheat oven to 400°; peel onions and slice 1/2" from the top of each; discard; slice just enough from the bottoms to allow the onions to stand upright.
  • Use a melon baller to hollow out the inside of each onion, leaving a 1/3" to 1/2" wall; set aside; chop the removed parts and set 1/2 cup aside; save the rest for another use.
  • Gently add onions to a pot of boiling, salted water and boil for 5 minutes; remove with a slotted spoon and set aside to dry on a wire rack.
  • Saute reserved chopped onions in 1/2 T oil until translucent, about 8 minutes; add mushrooms, ham and pepper and saute until browned, about 5 minutes.
  • Deglaze pan with wine and pour mixture into a small bowl; let cool for 2 or 3 minutes; add the parsley and cheese and stir to combine.
  • Stuff the onions; place in a small roasting pan and drizzle with remaining 1/2 T oil; cover with foil and bake until tender, about 50 minutes; remove foil 10 minutes before done and allow to brown.

4 large sweet onions
1 pound ground beef
1/2 pound bulk pork sausage
1 package (10 ounces) frozen chopped spinach, thawed and drained
5 slices day-old bread, crumbled
1/2 to 2/3 cup beef broth
1/2 cup grated Parmesan cheese
1 egg, beaten
1 tablespoon minced fresh parsley
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg

Steps:

  • Peel onions and cut 1/2 in. off tops and bottoms. Place onions in a large saucepan. Cover with boiling water. Cook until tender, about 20 minutes; drain. , Cool slightly. Carefully remove inside layers of onion, separating into eight individual shells (refrigerate remaining onion for another use). Drain on paper towels. , In a skillet, cook beef and sausage over medium heat until no longer pink; drain. Add spinach; cook and stir for 2 minutes. 1 medium onion
1 tablespoon butter
1 tablespoon all-purpose flour
1/4 teaspoon salt
1/2 cup milk
1/3 cup shredded cheddar cheese

Steps:

  • Slice onion and separate into rings; place in a greased 1-qt. baking dish and set aside. In a small saucepan over low heat, melt the butter. Stir in the flour and salt until smooth. 6 medium yellow onions (about 2 pounds)
2 bacon strips, cut into 1-inch pieces
1/4 cup dry bread crumbs
2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley flakes
1 tablespoon butter
1-1/2 cups sliced fresh mushrooms
1/4 teaspoon salt
Dash each pepper and ground nutmeg
1/2 cup beef broth
Additional parsley, optional

Steps:

  • Preheat oven to 375°. In a Dutch oven, bring a small amount of water to a boil. Peel onions; using a slotted spoon, place onions in boiling water. Cook for 4-6 minutes more until softened; remove and let stand until cool enough to handle. Cut a 1/4-in. slice off the top of each onion. Remove center, leaving a 1/2-in shell. Chop centers and tops of onions; set aside. In a skillet, cook bacon until crisp; remove to paper towel to drain. In the drippings, saute chopped onion until tender. Stir in bread crumbs and parsley. Add the butter and mushrooms; cook until mushrooms are tender. Add bacon, salt, pepper and nutmeg. Stuff onion shells; place in an ungreased shallow 1-qt. baking dish. Pour broth around onions. Bake, uncovered, until tender, 45 minutes, basting frequently during the first 15 minutes. If desired, sprinkle with parsley.
