VEAL ROLLS STUFFED WITH PROSCIUTTO AND CHEESE



Veal Rolls Stuffed with Prosciutto and Cheese image

12 thin slices veal, about 11/2 pounds, cut as for scaloppine
1/4 cup chopped prosciutto or cooked ham
1/2 pound ground lean pork
1 teaspoon plus 3 tablespoons butter
1/2 cup finely chopped onion
1/2 teaspoon finely minced garlic
1/2 cup fine fresh bread crumbs
1/8 teaspoon grated nutmeg
Freshly ground black pepper, to taste
1/2 teaspoon grated lemon rind
1 egg, lightly beaten
1/4 cup freshly grated Parmesan cheese
Salt, to taste
1/4 cup flour
1/2 cup dry white wine
1 cup fresh or canned chicken broth

Steps:

  • Put the slices of veal between sheets of plastic wrap and pound with a flat mallet without breaking the tissues. Set aside. Combine the prosciutto and pork in a mixing bowl. Melt 1 tablespoon of the butter in a small skillet and cook the onion, stirring, until it is wilted. Add this to the mixing bowl. Add the garlic, bread crumbs, nutmeg, pepper, lemon rind, egg and cheese. Blend well. Lay out the pieces of veal on a flat surface. Sprinkle with salt and pepper. Spoon an equal portion of the filling on each slice. Wrap the meat around the filling, folding and tucking the ends in envelope fashion. Tie each roll neatly in 2 places with string. Sprinkle with salt and pepper. Dredge the rolls all over in flour and shake off any excess. Select a heavy skillet large enough to hold the rolls in 1layer without crowding them. Melt the remaining 3 tablespoons of butter and, when it is quite hot but not browned, add the veal rolls. Cook, turning occasionally, until the are nicely browned all over, 3 or 4 minutes. Reduce the heat and continue cooking over moderately low heat for about 15 minutes. Add the wine and stir to dissolve the brown particles that cling to the bottom and sides of the pan. Add the chicken broth. Bring to the boil and let cook over high heat for about 5 minutes. Remove the strings and serve the veal rolls with the sauce spooned over.

1 package egg roll wrap
3 cans whole green chilies
8 ounces cheese (Cheddar,jack or pepper jack cut in one ounce sticks)
1/2 box cornstarch
oil (for deep frying)

Steps:

  • Drain green chiles.
  • Sprinkle cornstarch on sheet pan.
  • Open up chile and place on egg roll wrapper with corner facing you.
  • Place cheese stick on chile and roll up, tucking in corners and moistening edges to seal.
  • Toss in cornstarch, dusting liberally.
  • (Can be made up to this point a day ahead. Leave in cornstarch. Cover and refrigerate.) Shake off excess cornstarch and deep fry in 350 oil to cover until lightly golden and cheese just starts to ooze out.
  • Drain on paper towels and keep warm in 250 oven.
  • Serve as a side dish or appetizer with your favorite Mexican meal.
  • Add your favorite condi- ments/sauces.

6 boneless chicken breast halves
1 (8 ounce) package cream cheese
1/2 cup cooked spinach, well drained
1 tablespoon minced garlic
1/8 teaspoon nutmeg
seasoning salt and pepper (or use cayenne)
2 large eggs (mixed with 2 teaspoon water)
1 1/2 cups dry unseasoned breadcrumbs
1/4 cup grated parmesan cheese
1/3 cup melted butter
1/2 teaspoon garlic powder

Steps:

  • Heat oven to 375 degrees.
  • Flatten the chicken breast to about 1/4-inch thickness.
  • In a large bowl, mix together cream cheese, spinach, garlic, nutmeg, seasoning salt and pepper (or cayenne pepper) until well combined.
  • Mix the dry breadcrumbs with Parmesan cheese in a shallow bowl; set aside.
  • Mix together the melted butter with garlic powder; set aside.
  • Spoon equal amounts of mixture across the narrow end of each breast.
  • Roll up jelly-roll style, and secure with toothpicks.
  • Dip the stuffed breast into the egg, then roll into the dry breadcrumb mixture.
  • Place into a buttered baking dish, seam-side down.
  • Drizzle with butter/garlic mixture.
  • Bake for about 30 minutes.

1 lb ground beef
1 (10 1/2 ounce) can cream of chicken soup
1/2 cup milk
1 teaspoon mayonnaise
1 cup shredded cheese
1 (8 ounce) can refrigerated crescent dinner rolls

Steps:

  • Preheat oven to 425°F.
  • Brown beef and season with a dash of garlic powder, salt and pepper.
  • Drain grease.
  • Stir in mayonnaise.
  • Combine cream of chicken soup and milk and heat until smooth.
  • Separate each roll and spoon 1 tsp of meat mix onto wide end of roll and sprinkle with cheese.
  • Roll up.
  • Spray Pyrex dish with Pam.
  • Spread enough of soup mix to cover bottom of dish.
  • Place crescent rolls in dish.
  • Pour approximately 2/3 of soup mix over crescent rolls.
  • Sprinkle rolls with remaining meat mix and cheese.
  • Pour remaining soup mix over rolls.

1 clove garlic, minced
1/8 t nutmeg
salt and freshly ground pepper to taste
1 large egg, beaten with 1 T water
1/2 cup unseasoned dry bread crumbs
3 T butter, melted

Steps:

  • Heat oven to 375 degrees. Flatten chicken breasts between sheets of waxed paper to uniform 1/4 inch thickness. . In large bowl, beat cream cheese with next 5 ingredients until combined. Spoon equal amunt of mixture across narrow end of each breast. Roll jelly style; secure with toothpicks. Dip in egg, then roll in crumbs; shake off excess. In baking dish arrange chicken in one layer, seam side down. Drizzle with butter. Bake 25-30 minutes until golden.

16 ounces cheddar cheese, sharp, shredded
8 ounces green olives, stuffed
2 medium green bell peppers
12 large French rolls
6 ounces tomato sauce
1 medium onion

Steps:

  • Cut the tops off of the rolls and hollow them out leaving a thin shell.
  • Grind all of the ingredients and bread in a meat grinder or food processor and stuff back into the rolls.
  • Place the tops back on the rolls and secure with tooth picks.
  • Bake on an ungreased cookie sheet at 350 degrees F. for about 45 minutes.
  • Serve Hot.

2 tablespoons Dessert Masala
1/2 cup heavy cream cheese
1/4 cup finely chopped or slivered raw pistachio nut

1 1/2 cups sugar
8 green cardamom pods, crushed lightly to break the skin
1/2 teaspoon coarsely ground green cardamom seeds

  • 1. Prepare the paneer cheese in advance. Prepare the dessert masala. Then, in a small nonstick saucepan, mix together the cream and pistachios and bring to a boil over high heat. Reduce the heat to medium-low and simmer until quite thick, 3 to 5 minutes. Set aside to cool and thicken further. Then prepare the dessert masala.2. Place the paneer cheese in a food processor and process until it's smooth and starts to gather into a soft and pliable dough (just before it forms a ball). Divide the dough into 15 equal portions, and shape each portion into a 2-inch patty. Then, with your thumb, press into the center of each patty to make a slight depression. Place about 1/2 teaspoon of the pistachio-cream mixture into the depression. Fold the patty in half to cover the filling, pressing it lightly between your clean palms, then roll it into a 2-inch log. Repeat with all the dough portions. Cover and set aside.3. Place the water, sugar, cardamom pods, and cardamom seeds in a pressure cooker and bring to a boil. Turn off the heat and add the logs. Secure the, lid of the pressure cooker, place it over high heat, and cook until the regulator indicates high pressure, then cook about 1 minute more. Remove from the heat and allow the pot to depressurize on its own, 12 to 15 minutes. Carefully open the lid of the pressure cooker and simmer over medium heat until the logs are somewhat firm, 3 to 5 minutes. Set aside to cool, about 10 minutes.4. Transfer each raj-bhog, one by one, to a tray, tilting the tray to one side to allow them to drain, 15 to 20 minutes. Cabbage Rolls Stuffed with Maltese Cheese image

A stuffed cabbage roll recipe that is different from others in that it is filled with cheese. Sounds like a healthier manicotti!

2-3 - white cabbages
28 ounce(s) maltese cheeselets (about 8) or ricotta cheese
2 tablespoon(s) parmesan cheese, grated
2 - eggs, well beaten
2 tablespoon(s) sultanas
1 tablespoon(s) fennel seeds
1/2 - lemon, zested
2 cup(s) passata (may substitute tomato puree)
1 - onion, finely chopped
1 small bunch flat leaf parsley, finely chopped
- olive oil
- salt
- pepper

Steps:

  • Remove the core of the cabbages and gently pry the leaves to separate. In a large pot of salted boiling water add the cabbage leaves and boil for 5 minutes.
  • Remove from the heat and leave the leaves in the water for a further 15 minutes. Drain and set aside.
  • Prepare your cheese mixture by mixing the cheeselets with the grated cheese, eggs and some seasoning (salt and pepper) . Divide the cheese mixture into two. In one mixture add the fennel seeds and the other mixture add the sultanas and lemon zest.
  • Add some oil into two large dishes (if using two mixtures, if only using one mixture then only one dish is required).
  • Take one cabbage leaf at a time and add a tablespoon of mixture at the end of the leaf. Firstly fold the sides of the cabbage leaf into the center and then roll the leaf around the cheese mixture. Place into the dish Continue to do this until all of the mixture has been used up (make sure to separate the two different cabbage rolls with different fillings into two dishes). Place each cabbage roll tightly next to each other until the dish has been filled. It is fine to add the cabbage rolls on top of each other. Drizzle with a little more olive oil and seasoning.
  • Simmer gently for 35 - 45 minutes until the bottom of the cabbage rolls are slightly golden. The egg and cheese melds into the cabbage rolls. While the rolls are simmering prepare your tomato sauce.
  • In a small pan or pot fry the onions in olive oil for 10 minutes. Add the passata and gently simmer for about 15 minutes. Add the parsley and salt and pepper to taste to the sauce once the passata has finished simmering. Once the rolls have finished cooking serve with the tomato sauce.
