DATES STUFFED WITH CREAM CHEESE AND PECANS
This is a recipe that my mother makes as a quick appetizer for special occasions. It may seem like an odd combination of flavors at first, but trust me, these can be addictive!

- "Butterfly"the dates, making sure that they are still attached along one side Spread the dates open and fill with a generous amount of cream cheese.
- Place a pecan over the filling.
- Close the date, shaping it back into its original shape.
- Eat and enjoy!

- If using bamboo skewers, soak in water for at least 30 minutes.
- Prepare the grill for direct cooking over medium heat (350° to 450°F).
- In a small saucepan combine the vinegar and sugar. Bring to a simmer and cook until the mixture coats the back of a spoon, about 10 minutes, stirring occasionally. Set aside.
- In a small bowl mash the blue cheese and pecans together with a fork. Make a small slice the length of each date and pull out the pit. Stuff each date with about 1 teaspoon of the cheese mixture, pressing it closed as much as possible. Thread two dates on each skewer so that the skewer goes through both halves of each date. Lightly spray with the canola oil.
- Brush the cooking grates clean. Grill the dates over direct medium heat, with the lid closed, until heated through, about 1 minute.
- Arrange the dates on a platter and let cool for 10 minutes. Serve the dates warm with the glaze.

These sweet and savory goat cheese stuffed dates topped with roasted pecans and fresh thyme are a quick and easy appetizer that everyone will love.

- Preheat oven to 400°F. Chop pecans and add to a small bowl with maple syrup, paprika, salt and fresh thyme. Toss pecans and spread on a baking sheet lined with parchment. Roast pecans for 8-10 minutes. Remove from oven and let cool.
- Cut dates in half and remove pit.
- Stuff each date with goat cheese, top with pecans and garnish with fresh thyme.

- Beat with an electric mixture until mixture is creamy.
- Using a scant teaspoon for each, pipe or mound cheese mixture onto the flat side of half of the pecans.
- Top with remaining pecans, flat side down.
- Cover and chill for 30 minutes before serving.
