EASY CHEESY POTATOES



Easy Cheesy Potatoes image

These potatoes are loaded with creamy goodness like sour cream and cheddar cheese and make a perfect side dish!

Number Of Ingredients 6

3 pounds diced potatoes (or 30 ounces country style hash browns)
¼ cup butter (melted)
1 cup sour cream
1 cup cream of chicken soup (or cream of cheddar)
¼ cup green onion (chopped)
2 cup cheddar cheese (divided)

Steps:

  • Preheat oven to 375˚F and grease a 9x13 inch baking dish.
  • If using fresh potatoes, place in a saucepan with cold water. Simmer 12-14 minutes or until fork tender. Drain and allow to cool slightly.
  • Melt butter, add sour cream, soup, onion and 1 ½ cups cheese.
  • Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.
  • Top with remaining cheese and bake for 28-30 minutes or until browned and bubbly.

1 (2 lb.) bag frozen cubed hash brown potatoes, thawed
1 can cream of chicken soup (campbell's)
1 can cheddar soup (campbell's)
16 oz. sour cream
1 (8 oz.) pkg. extra-sharp cheddar cheese, grated
1 celery rib very thinly sliced or chopped small
1/2 small onion, finely chopped
1/4 tsp. garlic powder
1/8 tsp. poultry seasoning
1 1/2 cups "chicken in a biskit" crackers, can sub club crackers or corn flakes if you can't find them
6 Tbl. melted butter

Steps:

  • 1. In large bowl combine well everything but the potatoes, crackers and butter. Fold in potatoes well. Pour into 13x9 glass baking dish. Smooth top even and flat. Mix crackers and butter and evenly sprinkle over the top. Bake in 350º oven for 50 minutes or til bubbly and potatoes are tender. Let set 5-10 minutes before serving. *If serving with chicken, you can exchange the poultry seasoning for ground rosemary instead if you'd like. It's good that way, too.

2 cups sour cream
1 teaspoon salt

2 cups shredded Cheddar cheese
⅓ cup sliced green onions
1 (30 ounce) package Ore-Ida® Shredded Hash Brown Potatoes
2 cups crushed corn flakes cereal
¼ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F. Coat 13x9 baking dish with nonstick cooking spray.
  • In a large bowl, whisk together soup, sour cream, salt and pepper. Stir in cheese, onion and hash browns until well mixed. Spoon evenly into baking dish.
  • In a medium bowl, mix together cereal and butter. Sprinkle evenly on top of hash brown mixture.
  • Bake uncovered for 45 to 50 minutes, or until hot and bubbly. Allow to rest for 5 minutes before serving. Season with additional salt and pepper to taste if desired. Garnish with additional sliced green onion if desired.

5 tablespoons butter, divided
1/4 cup all-purpose flour
1/2 teaspoon salt
2 cups milk
1/2 cup shredded cheddar cheese
1/2 cup shredded Romano cheese
8 cups sliced cooked peeled potatoes
1 tablespoon lemon juice
1/4 cup dry bread crumbs

Steps:

  • In a large saucepan, melt 4 tablespoons butter. Stir in the flour and salt until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat., Stir in the cheeses until melted. Add potatoes; stir gently to coat. Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with lemon juice., In a small skillet, melt the remaining butter. Add bread crumbs; cook and stir over medium heat until lightly browned. Sprinkle over potato mixture. Bake, uncovered, at 350° for 40-45 minutes or until hot and bubbly.

This recipe was given to me by my mother-in-law. I slightly modified it. It is a must have for my family's Easter dinner.

1 pound frozen hash brown potatoes
2 (10.75 ounce) cans condensed cream of mushroom soup
1 small onion, chopped
1 pint sour cream
2 ½ cups shredded Cheddar cheese
salt and pepper to taste
4 ½ cups crispy rice cereal squares
⅔ cup butter

Steps:

  • Place hash browns in the bottom of a 9x13 inch baking dish. In a medium bowl, stir together soup, onion, sour cream, cheese, salt and pepper until well combined. Pour over hash browns. Crush the cereal and mix with the butter. Sprinkle mixture over soup layer. Cover and let rest in refrigerator 24 hours.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Bake in preheated oven 45 minutes, until golden, hot and bubbly.
