SPINACH AND CHEESE LASAGNA ROLLS
These Italian-inspired roll-ups from Cindy Romberg of Mississauga, Ontario are fast and fun to make. They may look elegant, but they are also very kid-friendly.

- In a small bowl, combine the spinach, mozzarella, cottage cheese, 1/2 cup Parmesan cheese and egg. Spread a heaping 1/3 cupful over each noodle. Roll up; place seam side down in a 9-in. square baking dish coated with cooking spray. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Pour marinara sauce over roll-ups. , Cover and bake at 350° for 33-38 minutes or until bubbly. Sprinkle with remaining Parmesan cheese.

CREAM CHEESE AND SPINACH STUFFED CHICKEN ROLLS

- Heat oven to 375 degrees. Flatten chicken breasts between sheets of waxed paper to uniform 1/4 inch thickness. . In large bowl, beat cream cheese with next 5 ingredients until combined. Spoon equal amunt of mixture across narrow end of each breast. Roll jelly style; secure with toothpicks. Dip in egg, then roll in crumbs; shake off excess. In baking dish arrange chicken in one layer, seam side down. Drizzle with butter. Bake 25-30 minutes until golden.
MINI SPINACH AND CHEESE PIZZA ROLLS

- 3. Slice roll into 12 pieces. Place cut side up in prepared muffin cups. Sprinkle with Parmesan cheese. Bake for 16 to 18 minutes or until golden brown. Let stand in muffin cups for 2 minutes. Carefully remove from cups and serve warm.

- Preheat oven to directions on the crescent roll dough.
- Unroll the crescent roll dough until it is flat.
- Spread the cream cheese in a medium-thickness, even layer over the dough.
- Sprinkle frozen spinach liberally on top of the cream cheese.
- Roll the dough back together tightly, smooth edges of dough to keep any cracks from forming. Once rolled, slice into even pieces, smooth edges again. *To make slicing easier, you can put roll the dough into some foil and put it in the freezer for 10 minutes or so.
- Place slices on an ungreased cookie sheet, and bake according to directions on the dough package. Remove, let cool, and watch them disappear!

CHEESE AND SPINACH ROLLS

- Place washed spinach leaves in a covered pan over high heat, until wiltered, drain and chop roughly. Beat egg yolks and cream together, season and add fetta and spinach. Brush 4 pastry sheets with butter and top each with buttered second sheet, cut each set into quarters. PLace a spoonful of the mixture into each rectangle fold in the sides and roll. PLace onto a baking tray brush with melted butter, sprinkle with sesame seeds. Bake at 200 for 15-20 minutes or until golden brown
