PINEAPPLE AND CHEESE SALAD

Pineapple and Cheese Salad image

Don't be turned away by the title, this is the most delicious, decadent salad. It's almost dessert. My Grandmother created this and passed it down to me. My co-workers have come to love it and my kid's friends all beg me to make it when they come over to the house. It's also a fav for holiday dinners!

EASY ELEGANT COTTAGE CHEESE AND PINEAPPLE SALAD

Easy Elegant Cottage Cheese and Pineapple Salad image

Individual servings of a very colorful starter or attractive salad on the side which can be made ahead of time. Super easy for a beginner cook and good for you too! Before you think, eeks, mayonnaise, give it a try, it works really well. Of course you could omit the mayonnaise if you prefer. When we were kids my mom used to make this for us for lunch or for salad at dinner and we all loved it! :)

ROBO'S LO-CAL TUNA, PINEAPPLE, COTTAGE CHEESE, AND BASIL SALAD

Robo's Lo-Cal Tuna, Pineapple, Cottage Cheese, and Basil Salad image

I've been mixing tuna with my cottage cheese at lunch for years and I've also enjoyed pairing fresh basil with pineapple. One day, I put it all together and came up with this recipe. Sometimes, I eat it in a bowl, sometimes with crackers, or bread, but anyway it's eaten, it hits all the high notes and is wonderfully satisfying.

MAMA'S CHEESE AND PINEAPPLE SALAD

Mama's Cheese and Pineapple Salad image

This is a recipe my mother has made since I was a child out of the 1960 Better Homes and Garden Cookbook. It is no longer in the newer cookbooks. It is a staple at our holiday dinners and always the first thing to go. She usually makes this the night before. I could almost skip the meal and put the bowl and spoon in front of me and I am done! ENJOY! ~ Pamela Schorr, Little River, SC
