1 cup butter, softened
2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 cups shredded sharp cheddar cheese
3 cups crisp rice cereal

Steps:

  • In a bowl, cream the butter until fluffy. Slowly mix in the flour, salt and cayenne pepper. Stir in cheese and cereal. Shape into 1-1/2-in. balls and place on ungreased baking sheets. Bake at 350° for 15-17 minutes or until lightly browned. Serve warm or cold.

1 cup butter, softened
3 cups shredded sharp cheddar cheese
2 cups all-purpose flour
1/4 cup minced chives
1/2 teaspoon salt
1/2 teaspoon hot pepper sauce
Dash garlic salt
2 cups crisp rice cereal

Steps:

  • In a large bowl, cream butter and cheese until light and fluffy. Beat in the flour, chives, salt, pepper sauce and garlic salt. Stir in cereal. Shape into four 6-1/2x1-1/2-in. logs. Wrap securely and refrigerate for 1 hour or until firm., Unwrap and cut into 1/4-in. slices. Place on ungreased baking sheets. Bake at 325° for 20-25 minutes or until edges are crisp and lightly browned. Remove to wire racks to cool. Store in the refrigerator or freezer.

HOMEMADE POTATO CHIPS WITH BLEU CHEESE AND CHIVES



Homemade Potato Chips with Bleu Cheese and Chives image

4 Yukon gold potatoes, about 2 pounds
Peanut oil, for frying
Kosher salt
1 pound bleu cheese, finely crumbled
1 bunch chives, chopped

Steps:

  • Peel the potatoes and slice them into thin 1/8-inch slices using a mandolin or sharp knife. Rinse the slices in several changes of water until the water runs clear. Drain them and pat them dry.
  • Put about 3 inches of oil into a large deep pot; it should not come up more than half way. Bring the oil up to 325 degrees F over medium-high heat. Working in batches, carefully add the potato slices, a dozen at a time. Stir them to make sure they are not sticking together. Fry until they are a golden brown, about 3 to 4 minutes. Remove and drain them well on paper towels; season with salt. Repeat with the remaining potato slices.
  • Heat the oven to 450 degrees F. Place a layer of the chips onto a baking dish and sprinkle with some of the bleu cheese and chives. Place another layer of chips onto that and some more cheese and chives. Continue until you have used up all the chips and cheese. Put into the oven and bake until the cheese has melted, about 5 minutes. Garnish with more chives.

Steps:

  • Preheat oven to 350°F (180˚C).
  • In a medium-sized mixing bowl, combine cheddar cheese, bacon, chives, salt, and pepper.
  • Spoon cheese mixture into a greased mini muffin tin. Press mixture into mini muffin tin.
  • Bake for 5-8 minutes or until cheese is melted and edges are slightly brown.
  • Cool on cooling rack or paper towel for 10 minutes.

100g light soft cheese
50g fat-free bio yogurt
1 crushed garlic clove
handful of snipped chives
a little lemon juice
fresh ground pepper
125g pack of chopped smoked salmon
a few sprigs of chopped dill
chilli dipping sauce
half a grated cucumber
a handful of chopped mint

Steps:

  • For the dip base, mix 100g light soft cheese with 50g fat-free bio-yogurt.
  • For garlic & herb, stir in crushed garlic clove, snipped chives, a little lemon juice and fresh ground pepper.
  • For the fish dip, take the chopped smoked salmon and a few sprigs of chopped dill and stir in the base dip.
  • For spice-lovers, stir a little chilli dipping sauce, to taste, through the base mix.
  • Go Greek and stir through grated cucumber, and a handful of chopped mint.
