This reinterpretation of meatballs combines breakfast sausage, cheddar cheese, and onion for a very flavorful holiday appetizer, enough for a crowd of hungry folks.

1 1/4 cups all-purpose flour
1/2 teaspoon coarse salt
1/4 teaspoon ground pepper
1/2 teaspoon cayenne pepper
1 1/2 teaspoons baking powder
2 cups grated cheddar (1/2 pound)
1 pound bulk breakfast sausage
1/2 large yellow onion, grated on large holes of a box grater
3 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 400 degrees. In a large bowl, whisk together flour, salt, pepper, cayenne pepper, and baking powder. Add cheddar and toss to coat. Add sausage, onion, and butter. With your hands, mix until well combined and roll mixture into 1-inch balls. Place balls, 1/2 inch apart, on a parchment-lined baking sheet. Bake until balls are golden and cooked through, 25 minutes. Serve warm.

1 lb bulk pork sausage with sage
2 1/2 cups shredded sharp Cheddar cheese (10 oz)
2 cups original all-purpose baking mix
1 Braeburn apple, peeled, shredded (2 cups)
Paprika, if desired

Steps:

  • Heat oven to 400°F. Line cookie sheets with cooking parchment paper.
  • In large bowl, mix sausage, cheese, baking mix and apple with hands until well blended. Shape mixture into 1 1/2-inch balls; place 1 inch apart on cookie sheets.
  • Bake 12 to 14 minutes or until golden brown and no longer pink. Sprinkle lightly with paprika. Serve warm.

I came up with this recipe on Thanksgiving morning for breakfast, and all of them were eaten in less than 30 minutes. My family said this was the absolute best sausage balls I had ever made. They are moist, not dry at all, cheesy, buttery, and a little spicy. Just delicious! I hope your family enjoys them as much as mine.

1 box red lobster cheddar bay biscuit mix
1 lb hot sausage (mild, any flavor will work)
1 c shredded sharp cheddar cheese
3/4 c buttermilk (cold)
1/4 tsp red chili flakes
4 Tbsp butter melted

Steps:

  • 1. Preheat oven to 400 degrees. Mix dry biscuit mix with packet of seasoning that comes with the mix, red chili flakes, and shredded cheese with wire whisk.
  • 2. Using your hands, break up the pound of sausage into the mix, then add buttermilk. Incorporate all ingredients together, and again, I do this with my hands so not to over mix.
  • 3. Drop 1 inch balls onto a baking sheet sprayed with cooking spray or lined with parchment paper. Bake for 10-15 minutes or until lightly brown, remove from oven and brush on melted butter. Return to oven for 3-5 minutes more, or until golden brown. Enjoy the best sausage balls you will ever bake!

1 1/4 cups Bisquick
4 ounces cheddar cheese, shredded

  • Mix all ingredients well. A dough hook on a Kitchen Aid mixer works well or you can use your hands.
  • Roll into 1" balls.
  • Bake @ 400° for 20-25 minutes, until golden brown.

These cheesy sausage balls are great for anytime that you have a get-together. Everybody loves them and they get gobbled up quick! You can make them ahead of time, bake, cool and freeze, then reheat in the oven as needed.

2 oz cream cheese, room temperature
1/8 tsp seasoned salt
1 lb ground pork breakfast sausage, uncooked
8 oz sharp cheddar cheese, grated
2 c biscuit mix

Steps:

  • 1. Lightly spray a 9"x13" pan with cooking spray or butter lightly.
  • 2. In a large bowl, use a fork to combine cream cheese with seasoned salt and beat until fluffy.
  • 3. Add sausage and cheese and, using your hands, mix very well until the cream cheese is incorporated. (TIP: Use food safe plastic gloves to save your hands from a messy clean-up.)
  • 4. Add biscuit mix and continue to mix well. (This is a stiff dough and it takes some time and patience. Don't be tempted to add any liquid or it will not turn out right.)
  • 5. Place oven rack in middle position and preheat oven to 350 degrees Fahrenheit.
  • 6. Take a medium pinch of the dough and roll into a ball about the size of a small walnut and place in prepared pan. Continue making balls until dough is gone.
  • 7. Cover pan with aluminum foil and bake for 20 minutes.
  • 8. Remove foil, rotate pan and bake for another 20 minutes.
  • 9. Remove from oven and quickly remove sausage balls from fat in pan and place on paper towels.
  • 10. Arrange on serving plate and serve hot or at room temperature.
  • 11. Place any leftovers in an airtight refrigerator container, or zipper bag, and keep refrigerated. May be frozen and reheated.
