CHEESY ONION FOCACCIA

this recipe makes a golden brown loaf with a pleasing onion flavor enhanced by garlic and Italian seasoning. With melted cheddar and Parmesan cheese on top, this bread tastes best when served warm.

3/4 cup water (70° to 80°)
2 tablespoons olive oil
1 teaspoon salt
2 cups bread flour
1 tablespoon sugar
1-1/2 teaspoons active dry yeast
2 medium onions, quartered and sliced
1/4 cup butter
3 garlic cloves, minced
2 teaspoons Italian seasoning
1 cup shredded cheddar cheese
2 tablespoons grated Parmesan cheese

Steps:

  • Place the first six ingredients in a bread machine pan in the order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1-2 tablespoons of water or flour if needed). , When the cycle is completed, turn dough onto a lightly greased 12-in. pizza pan; pat into a 10-in. circle. Cover and let rise in a warm place until doubled, about 30 minutes. , Meanwhile, saute onions in butter in a large skillet until softened. Reduce heat to medium-low; cook, stirring occasionally, for 30 minutes or until deep golden brown. Add garlic and Italian seasoning; cook 1 minute longer., Make deep indentations 1 in. apart in dough, using the end of a wooden spoon handle. Top with onions and cheeses. Bake at 400° for 15-18 minutes or until golden brown. Serve warm.

1 package (1/4 ounce) active dry yeast
1-1/4 cups warm water (110° to 115°), divided
1 tablespoon honey
3 cups (375 grams) all-purpose flour
1/4 cup plus 3 tablespoons olive oil, divided
3/4 teaspoon kosher salt
1 teaspoon flaky sea salt, optional

Steps:

  • In a large bowl, dissolve yeast in 1/2-cup warm water and honey; let stand for 5 minutes. Add flour, 1/4 cup oil, salt and remaining 3/4-cup water; mixing until smooth (dough will be wet). Scrape the sides of the bowl clean; cover and let rise in a warm place until doubled, about 45 minutes., Preheat oven to 425°. Brush a 13x9-in. baking pan with 1 tablespoon oil. Gently scrape dough directly into pan. With oiled hands, gently spread dough. If dough springs back, wait 10 minutes and stretch again. Make indentations in the dough with your fingers. Drizzle with remaining 2 tablespoons oil; let rise until doubled in size, 30-40 minutes. , If desired, sprinkle with sea salt. Bake until golden brown, 20-25 minutes. Cut into squares; serve warm.

This rustic red onion & rosemary focaccia makes a great partner to salads and antipasti

Number Of Ingredients 5

1batch white bread dough (see 'Goes well with' recipe below)
5 tbsp olive oil
2 large red onions , sliced
handful rosemary sprigs
1 tsp sea salt flakes

Steps:

  • Make the basic dough, adding 2 tbsp olive oil and only a pinch of salt. While the dough is rising, cook onions in 1 tbsp olive oil for 5 mins until soft, then set aside.
  • When the dough has risen, knock it back and stretch it to fit an oiled Swiss roll tin about 25 x 35cm. Leave the dough to prove for about 20 mins.
  • Heat oven to 200C/fan 180C/gas 6. Spread the onions over the dough and scatter with the rosemary. Press your fingers into the dough to make dimples, drizzle the remaining oil over and scatter over the salt, then bake for 30 mins until golden. Leave to cool, then serve cut or torn into squares.

My nephew proclaims this the "King" of breads! I make this for him and my dinner guests often. It's easy and fairly fool-proof with a bread machine. A great accompaniment to soup and salad! The cook time does not include the bread machine time.

1 1/8 cups water
1 tablespoon olive oil
3 tablespoons chopped onions
1/2 teaspoon salt
1 tablespoon sugar
3 cups bread flour
1 1/2 teaspoons yeast
1/2 cup shredded cheddar cheese
1 tablespoon olive oil (or mister to spray bread)
coarse salt

Steps:

  • Place first 7 ingredients in bread machine according to machine directions.
  • Process on dough cycle.
  • Remove dough and form into a large semi-flat round.
  • Cover and let rise until double, approximately 45 minutes.
  • Uncover and press cheese into dough with fingertips.
  • Spritz or drizzle oil over the dough and sprinkle with salt.
  • Bake at 350 for 20-25 minutes or until bottom is slightly browned.
  • Slice into pie wedges and serve.

MINI CARAMELIZED ONION FOCACCIA

3/4 cup warm water (105 to 115 degrees F)
1 package active dry yeast
1/2 teaspoon superfine or regular granulated sugar
2 tablespoons butter, melted in microwave for 1 minute
1 3/4 cups all-purpose flour
1/2 teaspoon fine salt
1/3 cup extra-virgin olive oil
3 large red onions, peeled and sliced about 1/2-inch thick
Kosher salt
1 tablespoon sherry vinegar
1 tablespoon honey
Cornmeal, for dusting baking sheets
1/4 cup extra-virgin olive oil, for brushing
About 20 sprigs fresh thyme, leaves picked
4 ounces firm plain goat cheese, roughly crumbled, refrigerated until ready to use

Steps:

  • For dough:
  • Whisk together the warm water, yeast, sugar, and melted butter in a small bowl; let stand until yeast is dissolved, about 10 minutes.
  • Whisk 1 1/4 cups flour and salt together in a medium bowl. Add yeast mixture to flour mixture and stir with a wooden spoon until mixture clumps together. Mix until incorporated. Add more flour, a little at a time, if dough is too wet.
  • Turn dough out onto a lightly floured work surface and knead until smooth and elastic, about 3 minutes. Divide dough into 12 equal pieces; roll each into a ball. Place on a flour-dusted baking sheet; cover with plastic wrap. Let rise in a warm place until doubled in size, about 45 to 60 minutes. (Dough can be made up to this point 1 day ahead. Keep covered and refrigerate.)
  • For caramelized onions:
  • Heat oil in a large nonstick skillet over medium-high heat. Add onion slices to skillet and season with 1/2 teaspoon kosher salt. Cook onions without turning until they are softened and beginning to brown, about 5 to 7 minutes. Add sherry vinegar and honey and stir well to incorporate; reduce heat to medium and continue to cook until onions are tender and brown, occasionally stirring gently, about 10 minutes. Season, to taste, with salt.
  • Remove skillet from heat and cool. (Onions can be prepared up to 1 day ahead. Cover and refrigerate.)
  • Preheat oven to 450 degrees F.
  • Sprinkle 2 baking sheets lightly with cornmeal. Roll out each dough ball to 3 to 4-inch rounds. Transfer 6 rounds to each prepared baking sheet. Pierce dough all over with fork. Brush generously with extra-virgin olive oil. Arrange onions evenly atop each round, leaving 1/4-inch plain border. Top with thyme leaves. Bake flatbreads until crusts are puffed and golden, about 12 to 15 minutes. Sprinkle crumbled goat cheese on top of each mini focaccia. Transfer to serving platter and serve immediately.

2 cups bread flour
1 tablespoon sugar

4 large onions, sliced
3/4 cup shredded mozzarella cheese (3 ounces)
2 tablespoons grated Parmesan cheese

Steps:

  • Measure carefully, placing all dough ingredients in bread machine pan in the order recommended by the manufacturer.
  • Select Dough/Manual cycle. Do not use Delay cycle.
  • Grease cookie sheet. Pat dough into 12-inch circle on cookie sheet. Cover and let rise in warm place about 30 minutes or until almost double.
  • Meanwhile, melt butter in 12-inch skillet over medium heat. Cook onions in butter 25 to 30 minutes, stirring occasionally, until onions are brown and caramelized; remove from heat.

Just looking at this golden cheesy bread will make you drool, and the smell is incredible. This is from TOH Apr 2005. To say that we love it would be an understatement! Preparation time includes dough cycle of 1 hour but that will depend on the bread machine.

Jalapeno, Onion, Cheddar Foccacia Bread image

This recipe is a Bread Machine recipe. It takes a little attention in the beginning, but it's so worth it. It turns out so moist and flavorful!

Number Of Ingredients 10

1 c hot water (80°f)
2 Tbsp olive oil
3 c all purpose flour, sifted
2 Tbsp each of powdered milk and sugar
1 tsp coarse salt
1 tsp granulated garlic
2 tsp active dry yeast
1-2 jalapeno, fresh, cut into rings
1/2 c diced sweet onion
2 c cheddar cheese, grated

Steps:

  • 1. Grate cheese, dice onions, and slice jalapeno into rings, mix together and set aside.
  • 2. Sift 3 c of flour into mixing bowl. Add sugar, salt, granulated garlic and powdered milk. Mix together.
  • 3. Place water and oil in bread machine pan. Add flour mix, make an indention in the center of flour and place in yeast.
  • 4. Place machine on DOUGH ONLY cycle. Once dough has formed a ball, start putting in the cheese mixture a little at a time until it is all mixed in with the dough. You may need to add a little flour if the dough seems too moist. The cheese breaks down and adds moisture.
  • 5. Once it's all incorporated, let it finish kneading and rising.
  • 6. After dough has risen and beeper sounds, remove and place in a oil sprayed 11x13 baking dish. Spread out dough with your hands, and poke your fingertips into the dough to make little "dimples". Cover with a towel and let rise to about double in size.
  • 7. Once risen, bake at 400° for 20 minutes on middle rack of oven. Enjoy!
