Low Carb Cheddar and Garlic Cauliflower Mash image

This recipe is great for anyone on a low-carb diet and has that occasional mashed potato craving.

1 head cauliflower, chopped
2 cloves garlic
1 bay leaf
water to cover
½ cup shredded Cheddar cheese
2 tablespoons butter
2 tablespoons sour cream
salt and ground black pepper to taste

Steps:

  • Place cauliflower, garlic, and bay leaf in a pot; pour in enough water to cover. Bring mixture to a boil and cook until cauliflower is tender, about 20 minutes. Drain and discard bay leaf.
  • Transfer cauliflower and garlic to a blender; add Cheddar cheese, butter, and sour cream. Blend mixture until desired consistency is reached; season with salt and pepper.

This family winter warmer is full of flavour and goodness. Adapt for meat lovers by adding sausages

1 tbsp oil
1 onion, finely chopped
1 garlic clove, finely chopped
1 large carrot, finely chopped
1 leek, chopped
1 tbsp tomato purée
400g can chopped tomato
200g can butter bean, drained
400g can flageolet bean, rinsed and drained
200ml dry cider
250ml vegetable stock
few sprigs thyme, leaves only
cheddar & parsley mash (see tip below)
2 sausages
1 tsp olive oil per portion

Steps:

  • Heat oil in a large pan and fry the onion, garlic, carrot and leek until soft but not coloured. Add the tomato purée, chopped tomatoes, butter beans, flageolet beans, cider, stock and thyme and simmer for 15-20 mins until the stew has thickened and the veg are tender.
  • Meanwhile, if you're adding sausages to any portion, snip each sausage into 3-4 chunks. Heat the olive oil in a frying pan and brown the chunks for 5 mins, then stir in appropriate portions of the stew and gently simmer for the remaining cooking time. Serve with the mash.

1 teaspoon grapeseed oil
2 pounds English or Irish sausage
24 ounces Guinness beer
1 medium onion, diced
6 large potatoes, peeled and cut into 1-inch chunks
1 large white onion, diced
1 cup shredded white Cheddar
4 tablespoons butter, cut into cubes
1/2 cup heavy cream
3 to 4 liters canola oil, as needed for deep-frying
1/4 cup all-purpose flour
2 tablespoons cornstarch
1 tablespoon garlic powder
1 tablespoon paprika
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 white onion sliced thin

Steps:

  • For the bangers: Heat grapeseed oil over medium-high heat in a saute pan with a lid. Sear sausage on all sides. Add beer and onion to pan, turn heat down to low and braise until sausage is cooked through, about 50 minutes.
  • For the mash: Boil potatoes and onion until potatoes are tender and strain. Return to pot and stir in cheese, butter, and heavy cream. Mash by hand, then whip with an electric beater and keep warm.;
  • For the tobacco onions: Heat deep-fryer to 375 degrees F or as directed by manufacturer for similar foods.
  • Remove sausage to a utility platter and let rest. Strain braising liquid through a chinois and return to pan. Let reduce by two-thirds.
  • Make the tobacco onions, by combining flour, cornstarch, garlic powder, paprika, salt and pepper. Dust onions with mixture and deep-fry until crispy. Drain on paper towels.
  • Slice sausage on the bias. Spoon some mashed potatoes in the center of serving plate. Top with sausage and tobacco onions. Serve with some braising liquid.

ENGLISH COTTAGE PIE WITH CHEDDAR AND PARSNIP MASH



English Cottage Pie With Cheddar and Parsnip Mash image

I made this last night and it went down a treat! The parsnips were a great addition, as well as giving an extra vegetable to your kiddies instead of just potatoes. My daughters cleaned their plates and have asked for it again tonight. I made the mince mixture in advance which cut down cooking time in the evening. You can make it even more nutritious by adding some more diced vegetables. From Delicious magazine

2 tablespoons vegetable oil
1 onion, finely chopped
1 large carrot, diced
500 g beef mince
1 tablespoon tomato puree
300 ml beef stock, hot
1 1/2 tablespoons Worcestershire sauce
3 -5 fresh thyme leaves
350 g floury potatoes
350 g parsnips
3 tablespoons 1% low-fat milk
1/4 teaspoon freshly grated nutmeg
50 g mature cheddar cheese, grated

Steps:

  • Preheat the oven to 180ºC/fan160ºC/gas 4.
  • Heat the oil in a pan over medium heat and add the onion and carrot and cook, stirring for 5 minutes.
  • Add the mince, turning the heat up and cook for 5 minutes until it is completely browned; Add the tomato puree, stir for 1 minute and add the beef stock, Worcestershire sauce and thyme.
  • Bring it to the boil, cover and simmer for 20 minutes; Uncover and cook for a further 5-10 minutes until most of the liquid has been absorbed; Check the seasoning and then spoon into a 2 litre ovenproof dish.
  • For the mash, cut the parsnips and potatoes into medium sized pieces and put into a large pan of cold salted water; Bring to the boil and simmer for 15 minutes or until tender; Drain and return to the pan for 30 seconds to get rid of any excess moisture; Mash with the milk and nutmeg, season and set aside.
  • Spoon the mash onto the mince; Rough it up with a fork and sprinkle with the cheese.
  • Bake for 25 minutes, until the mash is golden and crisp in places.

150 ml cream
