2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
5 tablespoons cold unsalted butter, cut into bits
2 oz coarsely grated extra-sharp Cheddar (3/4 cup)
1 1/2 tablespoons chopped fresh dill
3/4 cup whole-milk plain yogurt
1/3 cup whole milk

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Pulse flour, baking powder, sugar, baking soda, and salt in a food processor until combined. Add butter and pulse until mixture resembles coarse meal. Add Cheddar and dill and pulse until just combined. Whisk together yogurt and milk, then add to food processor and pulse until dough just comes together. Spoon 12 (1/4-cup) mounds of dough about 2 inches apart onto an ungreased large baking sheet and bake until puffed and pale golden, 12 to 15 minutes.

2 cups all-purpose flour
2 teaspoons sugar
1 teaspoon dill weed
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1/4 cup cold butter, cubed
2/3 cup buttermilk
1/4 cup egg substitute
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • In a large bowl, combine the first six ingredients. Cut in butter until mixture resembles coarse crumbs. Combine buttermilk and egg substitute; stir into flour mixture just until moistened. Stir in cheese., Turn onto a lightly floured surface; knead 8-10 times. Pat to 3/4-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. , Place 1 in. apart on an ungreased baking sheet. Bake at 400° for 12-16 minutes or until golden brown. Serve warm.

3 cups all purpose flour
4 1/2 teaspoons baking powder
1 tablespoon sugar
1 1/2 teaspoons dry mustard
1 teaspoon salt
1/4 cup (1/2 stick) chilled unsalted butter, cut into pieces
1/4 cup chilled vegetable shortening, cut into pieces
1 cup plus 2 tablespoons milk
1/4 cup chopped fresh chives or green onions
3 tablespoons (packed) chopped fresh dill or 1 tablespoon dried dillweed
2 1/2 cups lightly packed grated extra-sharp cheddar cheese (about 8 ounces)

Steps:

  • Position rack in center of oven and preheat to 450°F. Mix flour, baking powder, sugar, mustard and salt in large bowel to blend. Add butter and shortening; rub with fingertips until mixture resembles coarse meal. Whisk milk, chives, and dill in medium bowl. Pour into dry ingredients; stir until moist dough forms. Mix in 2 cups cheese.
  • Turn dough out onto floured surface; knead lightly to distribute cheese evenly. Roll out dough to generous 1/2-inch thickness. Using floured 2 1/2 inch cookie cutter, cut into biscuits. Gather scraps; roll out to generous 1/2-inch thickness and cut out additional biscuits.
  • Transfer biscuits to heavy large ungreased baking sheet. Top with 1/2 cup cheese. Bake until biscuits are golden, about 15 minutes. Transfer to platter. Serve warm or at room temperature. (Can be made 6 hours ahead. Let stand at room temperature. If desired, wrap biscuits in foil and rewarm in 350°F. oven for 5 minutes.)

1 1/2 cups plus 2 tablespoon all-purpose flour
2 teaspoons baking powder
1 teaspoon paprika
3/4 teaspoon salt
5 tablespoons cold unsalted butter, cut into small pieces
2 tablespoons chopped dill
1 cup coarsely grated sharp Cheddar
1/2 cup whole milk
1/4 cup heavy cream

Steps:

  • Preheat oven to 375°F with rack in middle.
  • Whisk together flour, baking powder, paprika, and salt in a large bowl. Add butter and blend with your fingertips until mixture resembles coarse meal with some pea-size butter lumps. Add remaining ingredients and stir just until a dough forms.
  • With floured hands, divide dough into 8 portions and gently form into 2-inch-high biscuits. Arrange 2 inches apart on an ungreased baking sheet.

1 teaspoon table salt

6 tablespoons cold, unsalted butter, cubed
1 cup extra-sharp white cheddar, finely grated

  • Preheat oven to 425. Line a baking sheet with parchment paper.

2 cups All-purpose Flour
1 Tablespoon Baking Powder
½ teaspoons Baking Soda
1 teaspoon Kosher Salt
1-½ stick Unsalted Butter, Cold And Cut Into Cubes
1 cup Shredded Sharp Cheddar Cheese
3 Tablespoons Fresh Dill, Chopped
½ cups Buttermilk, Cold
1 whole Egg, Beaten And Cold
1 whole Egg, Beaten With Below Amount Of Water
1 Tablespoon Water
1 Tablespoon Freshly Ground Black Pepper

Steps:

  • Preheat oven to 400 F. Line a baking sheet with parchment paper and set aside.
  • In a large bowl, mix together flour, baking powder, baking soda and salt. Add butter and, using your hands or a pastry cutter, mix and break down until the mixture is coarse and crumbly. Add cheddar and dill and toss to combine.
  • In a separate bowl, whisk together buttermilk and 1 egg until combined. Add it to the flour mixture. Mix until barely combined.
  • Lightly knead the dough until it forms into one solid mass. Sprinkle a work surface with flour and place dough onto it. Press the dough into a 1/2 inch thickness. Cut out the biscuits using a biscuit cutter (or cut into squares using a knife). Recombine scraps, press them into a 1/2 inch thickness and cut it to get more biscuits. Recipe should yield 8 biscuits total (you might have a little more or less if you used a knife).
  • Transfer biscuits to the prepared baking sheet. Combine the egg and water in a small bowl to make an egg wash. Brush each biscuit with egg wash and top with a few turns of freshly ground pepper.
  • Bake for 10-12 minutes until lightly golden brown. Like most things, these are best served warm. Enjoy!
