"THIS BREAD is the perfect accompaniment to a piping-hot bowl of chili. In addition to a garnish of cheddar cheese on the chili, which Mom often added, we had her wonderful bread, chock-full of cheese flavor. Sometimes I'll make the dough into rolls or soft breadsticks."

Number Of Ingredients 9

2 packages (1/4 ounce each) active dry yeast
2 cups warm water (110° to 115°)
3 cups shredded cheddar cheese
1/2 cup minced chives
1/4 cup butter, softened
1/4 cup sugar
1-1/2 teaspoons salt
1 teaspoon dried thyme
5-3/4 to 6-1/4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the cheese, chives, butter, sugar, salt, thyme and 3 cups flour. Beat on medium for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Shape into two loaves and place in greased 9x5-in. loaf pans. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 350° for 40-45 minutes or until golden brown. Remove from pans to cool on a wire rack.

This is another quick and easy and delicious bread machine recipe! This recipe was given to me by my neighbor, who always is the beneficiary of loaves of bread from me! You can substitute 1 1/2 teaspoons bread machine yeast for the active dry yeast. Do not use the delay bake function for this bread. Cook time is an estimate but may vary depending on your bread machine.

3 tablespoons granulated sugar
1 tablespoon baking powder
1 teaspoon salt
1 (12-ounce) bottle Irish stout beer
1 cup grated Irish cheddar cheese (about 4 ounces)
1/4 cup chopped chives
1/4 cup Irish butter, melted

Steps:

  • Preheat oven to 375° F. Line 8 1/2- x 4 1/2-inch loaf pan with parchment paper, or coat with butter. In a mixing bowl, thoroughly whisk together the flour, sugar, baking powder, and salt. Pour in the beer and mix until the dry ingredients are evenly moistened. Fold in 3/4 cup of the cheese and the chives. Transfer the batter to prepared pan. Pour the melted butter evenly over top of the dough. Bake about 30 minutes then scatter the remaining 1/4 cup of cheese over the top. Return the loaf to the oven and bake 15 to 20 minutes longer or until a tester inserted near the center comes out clean. Cool in the pan for 5 minutes. Turn out and serve warm, sliced.

1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/2 to 1 teaspoon salt (it depends on what cheese and add-ins you're using)
1/4 teaspoon freshly ground white pepper (or more to taste; you could even add a pinch of hot pepper)
3 large eggs, at room temperature
1/3 cup whole milk, at room temperature
1/3 cup extra-virgin olive oil
3 ounces coarsely grated cheddar or other cheese
2 ounces cheddar or other cheese, cut into very small cubes
1/2 cup minced chives or other herbs
1/3 cup toasted walnuts, chopped (optional)

Steps:

  • Getting ready: Center a rack in the oven and preheat the oven to 350°F. Generously butter an 8-by-4 1/2-by-2 3/4-inch loaf pan (I used a 6-cup Pyrex pan for this). If your pan is larger (probably 9-by-5-by-2 3/4-inch), go ahead and use it-your cake will be lower and you'll have to check it for doneness a little earlier. Procedure 1. Put the flour, baking powder, salt, and pepper in a large mixing bowl and whisk the ingredients together to combine. 2. Put the eggs in another mixing bowl; whisk for about 1 minute, until they're foamy and blended. Whisk in the milk and olive oil. 3. Pour the wet ingredients over the dry ingredients and, using a sturdy rubber spatula or a wooden spoon, gently mix until the dough comes together. There's not need to be energetic-beating the dough toughens it-nor do you need to be very thoroughly. Just stir until all the dry ingredients are moistened. Now, stir in the cheese, grated and cubed, the herbs and the toasted walnuts, if you're using them. You'll have a thick dough. Turn the dough into the buttered pan and even the top with the back of the spatula or spoon. 4. Slide the pan into the oven and bake for 35 to 45 minutes, or until the bread is golden and a slender knife inserted into the center of the loaf comes out clean. Transfer the pan to a cooling rack, wait about 3 minutes, then run a knife around the sides of the pan and turn the loaf over onto the rack; invert and cool to room temperature right-side up. 5. The cake can be served when it is still slightly warm, but I think it tastes better when it has cooled completely. In fact, I like to give it a little while to "ripen." If you'd like, you can wrap the room temperature cake in plastic film and wait a few hours or overnight to serve it. Slice the bread about one-half-inch thick and cut the slices into strips or cubes.

2 c lukewarm ( 95º) water
2 pkg (1/4 oz. each) or 1 1/2 tbsps active dry yeast
2 Tbsp sugar
1 1/2 c + 2 tbsps grated aged cheddae cheese
1/2 c chopped fresh chives
2 Tbsp butter, unsalted
2 tsp salt
4 1/2 c all purpose flour

Steps:

  • 1. 1. Pour water into large mixing bowl. Sprinkle yeast and sugar over water; stir to dissolve. Set aside until foamy, about 10 minutes. Add 1 1/2 cups of the Cheddar cheese, chives, butter and salt; mix until combines. Beat in flour, 1/2 cup at a time, until dough is sticky and soft. Cover; let rise in warm place until doubled in size, 1 hour.
  • 2. Punch down dough with wooden spoon; mix one minute. Place dough on floured work surface; cut in half. Place each half in a greased 9-by-5-inch loaf pan. Smooth top (dough will be sticky). Sprinkle tops with remaining cheddar cheese. Cover with plastic wrap; let rise until doubled in size, 45 minutes.
  • 3. Heat oven to 375º. Bake until loaves are golden brown on top and sound hollow when tapped, about 30 minutes. Cool in pans on wire rack 30 minutes. Remove from pans to cool completely. Nutrition information per slice: 155 calories, 26% calories from fat, 2.7 grams saturated fat, 13mg cholesterol, 290mg sodium, 23g carbs, 6g protein, 0.9g fiber.
