SOUTHERN APPLE TUNA SALAD

I grew up eating a similar tuna salad, I have since adjusted it to be a little healthier than before. The apples make it fresh and delicious! Serve on bread of your choice with lettuce. Yum!

2 (5 ounce) cans tuna, drained
1 tablespoon olive oil
1 tablespoon mayonnaise, or more if needed
1 small apple - peeled, cored, and chopped
¼ small onion, minced
1 tablespoon sweet pickle relish
½ teaspoon dill weed
salt and ground black pepper to taste

Steps:

  • Stir the tuna, olive oil, mayonnaise, apple, onion, relish, and dill together in a bowl until evenly mixed. Season with salt and pepper. You can serve immediately, though is tastes much better after being refrigerated overnight.

Found this recipe on a Hellman's mayo coupon card. Sound delicious, light and refreshing. Posting here for safe keeping. When I make it, my preference would be to use the tuna in the foil packets (no draining necessary). Feel free to use your favorite brand of products. I suspect this would be good using chicken instead of tuna too or served over lettuce, etc :) If you try it, I hope you enjoy it!

10 ounces albacore tuna in water, drained and flaked (2 5 oz cans)
1/3 cup mayonnaise
1/4 cup celery, finely chopped
1/4 cup apple, diced
1/4 cup cranberries, dried
1/4 cup walnuts, coarsely chopped (optional)
4 slices cheddar cheese or 4 slices muenster cheese, diced
2 tablespoons red onions, finely chopped
2 (8 inch) pita breads, halved

Steps:

  • Combine first 8 ingredients in a bowl.
  • Stuff pita bread halves with tuna mixture and enjoy!

3 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
Sugar
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1 apple (such as Honeycrisp)
1/2 bulb fennel, thinly sliced
Jar of tuna in oil (such as Oritz White Tuna in Organic Extra-Virgin Olive Oil)
Mayonnaise
Finely chopped fresh basil leaves
Wheat crackers and escarole leaves, for serving

Steps:

  • Whisk together lemon juice, Dijon mustard, a pinch of sugar, and extra-virgin olive oil; season with kosher salt and freshly ground pepper. Cut the apple into matchsticks and toss with dressing. Add sliced fennel and a jar of tuna in oil; toss to combine. Pack in a bento box or other resealable container.
  • Stir together mayonnaise and finely chopped fresh basil leaves; season with salt and pepper. Pack in a small compartment of your bento box (or a separate resealable container). Eat tuna salad with basil-mayo, wheat crackers, and escarole leaves.
