This is my mother's recipe for spaghetti sauce and is wonderful! It is a chunky, meaty sauce. We usually make this in two 5 quart pots and freeze them in 2-3 cup portions, great for OAMC. It uses jars of spaghetti sauce for ease and flavor, you could also purchase a warehouse sized can of spaghetti sauce and flavor to taste to cut costs. Also add more vegetables as desired and if the mixture is too thick add another jar or a can of sauce.

6 (32 ounce) jars spaghetti sauce, assorted flavors to taste
7 lbs Italian sausages
10 lbs lean ground beef
1/8-1/4 cup sugar, to taste
5 bell peppers, yellow, red and green
2 onions
2 (8 ounce) cans mushrooms
2 tablespoons italian seasoning

Steps:

  • Slice sausages into 1/2" to 1" slices or remove casings and crumble. Brown meats with onions until browned. Drain fat.
  • Add chopped veggies and all remaining ingredients.
  • Bring just to a boil, then cover and reduce heat, allowing sauce to simmer 4-6 hours.

1 pound lean ground beef (90% lean)
1/2 cup chopped sweet red pepper
1/4 cup chopped green pepper
1/4 cup chopped celery
1/4 cup chopped onion
2 garlic cloves, minced
1/4 pound sliced fresh mushrooms
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 can (6 ounces) tomato paste
1/2 cup water
1 bay leaf
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon pepper
Hot cooked spaghetti
2 tablespoons shredded Parmesan cheese

Steps:

  • In a large skillet, cook the beef, peppers, celery, onion and garlic over medium heat until meat is no longer pink and vegetables are tender; drain. Add the mushrooms; cook for 2 minutes. , Stir in the tomatoes, tomato paste, water, bay leaf, sugar, salt, basil, oregano and pepper. Bring to a boil. Reduce heat; cover and simmer for 45 minutes, stirring often. Discard bay leaf. Serve sauce over spaghetti. Sprinkle with Parmesan cheese.

Pasta and broccoli are cooked in the same pot, then drained and stirred together with reserved pasta water, cream cheese, butter, and Parmesan for the easiest sauce ever. One carbo-licious bite, and all your cares will melt away.

Number Of Ingredients 6

4 ounces short pasta, such as penne
Kosher salt and freshly ground black pepper (optional)
1 1/2 cups fresh or frozen broccoli florets
2 1/2 ounces cream cheese (1/3 cup)
1 tablespoon unsalted butter
1/2 ounce Parmigiano-Reggiano, finely grated (1/3 cup), plus more for serving

Steps:

  • Cook pasta in a pot of generously salted boiling water 2 minutes less than per package instructions. Reserve 1 cup pasta water and cover to keep warm. Add broccoli to pot; continue boiling until pasta is al dente and broccoli is bright green, 1 to 2 minutes more. Drain.
  • Return pot to medium heat; add cream cheese, butter, and 2/3 cup reserved pasta water. Cook, stirring, until mixture is smooth and simmering. Remove from heat; stir in pasta, broccoli, and Parmigiano-Reggiano. Toss with more pasta water as needed until sauce clings to pasta. Serve with more Parmigiano and black pepper.

1 onion, chopped
4 cloves garlic, minced
1 small green bell pepper, diced
1 (28 ounce) can diced tomatoes
1 (16 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon salt
½ teaspoon black pepper

Steps:

  • Combine ground beef, onion, garlic, and green pepper in a large saucepan. Cook and stir until meat is brown and vegetables are tender. Drain grease.
  • Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.

MIMI'S FANTASTIC THICK SPAGHETTI SAUCE

A few years ago I came upon a sauce that was so good but........... I altered it quite a bit to fit our family. This is now the best sauce I have ever had and if you follow the measurements, it will come out the same every single time. I use Tuttoroso brand in the puree, paste, and sauce because that is the one my friend's mother always used. She was from Italy and made the best sauce in the world. Hubby loves it and comments on it whenever we have it which is once a week. It freezes well and is great with meatballs even thought there is a lot of meat in the sauce. Serve it with garlic bread and you will be sooooo happy.

1 lb italian sweet sausage
1 lb hamburger (I use chuck (80% I think it is)
2 fresh garlic cloves (minced)
1/2 medium onion (chopped)
2 (28 ounce) cans tomato puree (see note above on the brand I use)
2 (6 ounce) cans tomato paste
2 (8 ounce) cans tomato sauce
2 1/2 cups water
3 1/2 teaspoons basil
2 1/2 teaspoons parsley
2 teaspoons brown sugar (could use white if you want to)
1 teaspoon salt
1/8 teaspoon black pepper
1/4 cup parmesan cheese

Steps:

  • In a heavy pot, brown sausage and hamburg, breaking it up into smaller pieces.
  • Add chopped onions and minced garlic and cook till meat is done; add tomato paste and stir until it is mixed in well.
  • Add tomato puree, sauce, and water (when measuring the water, put it into the puree can to rinse it all out and then add to meat mixture).
  • Add basil, brown sugar, salt, parsley, and black pepper and mix well.
  • Add the Parmesan cheese (yes, to the the sauce) and mix it in well.
  • Simmer on low for 2-4 hours stirring occasionally so it won't burn; if you think it needs some thinning down, add about 1/8 cup water at a time; don't add too much because you want it thick so it will stick to your pasta.
  • Cook your spaghetti and enjoy! Eat what you want and freeze the rest in containers that will hold the amount you will eat at a sitting.
