This is my mother's recipe for spaghetti sauce and is wonderful! It is a chunky, meaty sauce. We usually make this in two 5 quart pots and freeze them in 2-3 cup portions, great for OAMC. It uses jars of spaghetti sauce for ease and flavor, you could also purchase a warehouse sized can of spaghetti sauce and flavor to taste to cut costs. Also add more vegetables as desired and if the mixture is too thick add another jar or a can of sauce.

6 (32 ounce) jars spaghetti sauce, assorted flavors to taste
7 lbs Italian sausages
10 lbs lean ground beef
1/8-1/4 cup sugar, to taste
5 bell peppers, yellow, red and green
2 onions
2 (8 ounce) cans mushrooms
2 tablespoons italian seasoning

Steps:

  • Slice sausages into 1/2" to 1" slices or remove casings and crumble. Brown meats with onions until browned. Drain fat.
  • Add chopped veggies and all remaining ingredients.
  • Bring just to a boil, then cover and reduce heat, allowing sauce to simmer 4-6 hours.

So I'm a new cook and I wanted to make a meat sauce for our dinner. I saw a lot of great recipes on here but seemed really complicated..so I cheated! This is doctored up Ragu..I don't think you can mess it up..I honestly don't know the exact measurements I just kept tasting as I went along..I fooled my husband though. He claims its the best spaghetti sauce he's ever had lol!

1 lb ground beef
1 lb Ragu pizza sauce
1/2 cup Italian dressing
1 tablespoon garlic salt
1 tablespoon onion powder
1 tablespoon basil leaves
1/2 tablespoon crushed red pepper flakes

Steps:

  • brown the meat- I put some garlic salt in the meat for flavor.
  • put Ragu in medium saucepan and heat on low.
  • throw in all the ingredients above as well as the meat once it has browned.
  • keep stirring and tasting.
  • the Italian dressing is what makes it and is what i kept adding.
  • serve when its just the way you like!
  • sauce was on low heat for about 30 min while I experimented but I do not think it will take that long next time.

A few years ago I came upon a sauce that was so good but........... I altered it quite a bit to fit our family. This is now the best sauce I have ever had and if you follow the measurements, it will come out the same every single time. I use Tuttoroso brand in the puree, paste, and sauce because that is the one my friend's mother always used. She was from Italy and made the best sauce in the world. Hubby loves it and comments on it whenever we have it which is once a week. It freezes well and is great with meatballs even thought there is a lot of meat in the sauce. Serve it with garlic bread and you will be sooooo happy.

1 lb italian sweet sausage
1 lb hamburger (I use chuck (80% I think it is)
2 fresh garlic cloves (minced)
1/2 medium onion (chopped)
2 (28 ounce) cans tomato puree (see note above on the brand I use)
2 (6 ounce) cans tomato paste
2 (8 ounce) cans tomato sauce
2 1/2 cups water
3 1/2 teaspoons basil
2 1/2 teaspoons parsley
2 teaspoons brown sugar (could use white if you want to)
1 teaspoon salt
1/8 teaspoon black pepper
1/4 cup parmesan cheese

Steps:

  • In a heavy pot, brown sausage and hamburg, breaking it up into smaller pieces.
  • Add chopped onions and minced garlic and cook till meat is done; add tomato paste and stir until it is mixed in well.
  • Add tomato puree, sauce, and water (when measuring the water, put it into the puree can to rinse it all out and then add to meat mixture).
  • Add basil, brown sugar, salt, parsley, and black pepper and mix well.
  • Add the Parmesan cheese (yes, to the the sauce) and mix it in well.
  • Simmer on low for 2-4 hours stirring occasionally so it won't burn; if you think it needs some thinning down, add about 1/8 cup water at a time; don't add too much because you want it thick so it will stick to your pasta.
  • Cook your spaghetti and enjoy! Eat what you want and freeze the rest in containers that will hold the amount you will eat at a sitting.

1 green bell pepper
1 red bell pepper
1 large onion
1 lb hot italian sausage or hamburge
8 oz sliced mushrooms. or more
2 can(s) tomato sauce(hunts)15 oz
1 can(s) tomato paste(hunts)12 oz
1 can(s) tomato paste(hunts) small
1 can(s) petite diced tomatoes
2 tsp minced garlic
1-2 Tbsp italian seasoning
1 tsp seasoning salt
1/2 tsp black pepper
garlic salt, to taste

Steps:

  • 1. Dice onions & peppers to your liking.( We like medium) Brown sausage or ground beef with peppers & onions over med high heat.(Peppers will still be crunchy) Drain if desired.( I ususally drain beef, & partially drain sausage.) Reduce to medium.
  • 2. Add all tomato sauce, then paste, stirring to blend.Add diced tomatoes.
  • 3. Add all seasonings& mushrooms. Cover. Allow to cook for 5-10 min. Stirring to avoid sticking.Reduce to med low. Stir occasionally. Taste. Add garlic salt if needed. Serve over pasta of your choice.
  • 4. This sauce can be eaten after 30 min., but tastes better if cooked longer. I make this in the morining before work, put the whole pot in fridge, Then pop it back on the stove when I get home to reheat slowly. Something about the sauce getting cold & reheating just makes it taste even better.
  • 5. I also use this sauce for baked ziti, chicken parmesean, manicotti & lasangna.
  • 6. Used this sauce from freezer to make Tammy Todd's skillet lasangna! So easy & so good!

2 large onions, chopped
2 medium green bell peppers, chopped
1 cup chopped celery
3 -4 garlic cloves, minced
2 tablespoons olive oil
2 lbs ground beef
1 (4 ounce) can sliced mushrooms, undrained
3 (6 ounce) cans tomato paste
1 (16 ounce) can whole tomatoes, undrained and coarsely chopped
3 (8 ounce) cans tomato sauce
2 tablespoons Worcestershire sauce
2 teaspoons chili powder
2 teaspoons dried oregano
1 teaspoon dried Italian seasoning
1 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons vinegar
1/4 teaspoon curry powder
hot sauce (about 3 drops)
2 bay leaves
1/2 cup water
1/2 cup Burgundy wine (or other dry red wine)
hot cooked spaghetti
shredded sharp cheddar cheese (optional)
grated parmesan cheese (optional)

Steps:

  • Saute onion, green pepper, celery, and garlic in hot oil in a large pot until the vegetables are tender.
  • Add in ground beef; cook until meat is browned, stirring to crumble the meat; drain well and return to pot.
  • Stir in the next 15 ingredients; cover, lower heat and simmer for 1 hour, stirring occasionally.
  • Take out bay leaves; stir in Burgundy wine.
  • On individual plates, spoon sauce over cooked spaghetti; sprinkle each serving with cheese, if desired.
