- cut eggs in half lengthwise, scoop out yolks into mixing bowl.
- add cheese, onion,relish, mustard and mayonnaise.
- mix well.

- 1. Mix together the mayo and mustard in a small bowl. Slice the eggs crosswise with an egg slicer or knife.
- 2. Spread some mayo mixture on each cracker, top with a slice of egg, skipping the end pieces with no yolk. Sprinkle a pinch of paprika, then pepper, and top with a small snippet of fresh dill. Serve.
- 3. A note about the crackers, in the US, Ritz, plain or wheat, In Thailand and SEA, think Rosi or Magic brand, plain or whole wheat, local made and cost less than Ritz which are imported.

Steps:
- Slice the eggs in half from top to bottom.
- Scoop the yolks into a medium mixing bowl and lay the whites aside.
- Place the peppercorns into a pepper mill and grind fine.
- Add the pepper, caper liquid, mayonnaise, mustard, salt and sugar to the egg yolks and using a fork, stir to thoroughly combine.
- Place the mixture into a zip-top plastic bag and cut a small hole at one of the corners.
- Pipe the mixture into each of the white halves.
- Finish garnish with capers.
- Chill for at least 1 hour in the refrigerator before serving.
