CHAYOTE SOUP

Chayote Soup image

This recipe will fool you into thinking you're eating a cream-based soup. It's spicy, different, and really pretty. It's extremely versatile. Tastes best when it's made at least a day in advance.

CHAYOTE SOUP WITH LEMONGRASS AND GINGER

Chayote Soup with Lemongrass and Ginger image

In Indonesia, the sourness in this soup would typically come from tamarind, which can be hard to find in the United States. A shot of lemon juice works well instead.

CRAWFISH MIRLITON (CHAYOTE) SOUP

Crawfish Mirliton (Chayote) Soup image

My Cajun mother makes a wonderful mirliton casserole for the holidays that's always a hit. I had a craving for mirliton and crawfish one day, and pieced together this soup from several recipes and a few traditional Cajun cooking methods. Some people prefer to peel and pit mirliton before using them, but the whole fruit is edible. Crawfish tails are usually mostly cooked before being peeled and bagged, but it's best to be on the safe side. Sauteing them first makes sure that they are fully cooked and flavors the butter for the rest of the soup.

Time 1h15m

Yield 8 serving(s)

Number Of Ingredients 11

4 cups chicken broth

CREAM OF CHAYOTE SOUP

Cream of Chayote Soup image

Related to squashes and cucumbers, mild-flavored chayotes - sometimes called vegetable pears - are believed to be indigenous to Mexico and are grown throughout the country. The most common variety, pale green and about the size and shape of a large pear, are used in this soup. If you can't find them, substitute zucchini (courgettes), which approximate the flavor, or use cauliflower or kohlrabi.

ASPARAGUS, CHAYOTE AND WHITE BEAN SOUP

ASPARAGUS, CHAYOTE AND WHITE BEAN SOUP image

Categories     Soup/Stew     Bean     Sauté     Low Fat     Vegetarian     Quick & Easy     Dinner     Lemon     Squash     Spring     Summer     Healthy

Yield 4 people

Number Of Ingredients 11

1 chayote squash, peeled and cubed
10 stalks asparagus
1 can (14oz) small white beans, drained and rinsed
4 cups chicken stock
2 Tbls minced sweet onion
1 clove garlic, minced
1 Tbls olive oil
1/8 tsp black pepper
1 lemon, cut into eighths
grated parmesan cheese
1 red Serrano chile, seeded and cut into rings (optional)

Steps:

  • Peel and cube the squash. Trim the asparagus and cut into 1" lengths, reserving the tips. Heat oil in a large pot and sauté the onions over medium heat until soft, about 2 minutes. Try not to brown the onions. Add the garlic, sauté for 1 min, add the squash and asparagus stalks and sauté for 5 minutes more or until the squash just starts to soften. Add the chick stock, white beans, black pepper and Serrano chile and simmer for 10 minutes. Add the asparagus tips during the last 3 minutes of cooking. Serve with lemon wedges, parmesan and cracked black pepper. The Serrano chile will add just a touch of heat to the broth, but it adds a bright red contrast to the otherwise pale green vegetables. Your guests should be warned - the chile is here for looks and flavor, not for eating!
