24 cherry tomatoes
2 cloves garlic, smashed
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon fresh thyme leaves
1/2 teaspoon light-brown sugar
1/4 teaspoon coarse salt
18 large eggs
Coarse salt and freshly ground black pepper
2 to 3 tablespoons extra-virgin olive oil
2 large white onions, halved and sliced crosswise into 1/4-inch-thick slices
6 to 8 ounces Swiss chard, stems sliced thin, leaves sliced into ribbons
3/4 cup cow's milk feta, crumbled

Steps:

  • Tomatoes: Preheat oven to 325 degrees. In a 9-inch pie plate, place tomatoes and garlic cloves. In a small bowl, whisk together olive oil, balsamic vinegar, thyme, light-brown sugar, and salt. Drizzle over tomatoes and garlic and bake in the oven until tomatoes are wilted and caramelized, 40 to 45 minutes. Set aside.
  • Frittata: Increase oven temperature to 425 degrees, with the rack in the upper third of the oven. Lightly beat eggs in a large bowl with a whisk. Season with salt and pepper; set aside.
  • In a 12-inch nonstick skillet, heat oil over medium-high heat. Add onions, season with salt and pepper, and cook, stirring, until tender, 12 to 15 minutes. Reduce heat to medium and add the stems of the chard; cook until tender, 3 minutes. Add the chard leaves and stir to combine. Cook until wilted, about 1 minute. Pour egg mixture into skillet. Cook, using a heatproof spatula to gently stir and push eggs from edges to center of pan so runny parts run underneath, until eggs begin to set, about 2 minutes.
  • Scatter cooked tomatoes on top of the frittata and evenly distribute feta cheese on top. Transfer frittata to oven and cook until top is set and has puffed slightly, about 15 minutes.
  • Gently run a spatula around the edges and underneath the frittata and carefully slide out of the pan onto a cutting board. Slice into wedges and serve hot, warm, or at room temperature.

Nonstick vegetable oil spray
1 12-ounce bunch Swiss chard, stems and center ribs removed
1 tablespoon olive oil
1 cup chopped onion
8 ounces mild Italian sausages, casings removed, sausage broken into 1-inch pieces
8 large eggs
1/4 cup heavy whipping cream
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 cup crumbled feta cheese (about 4 1/2 ounces)
Fresh Italian parsley leaves

Steps:

  • Preheat oven to 325°F. Spray 8 x 8 x 2-inch glass baking dish with nonstick spray. Bring large pot of salted water to boil. Add Swiss chard and cook just until wilted, about 2 minutes. Drain. Finely chop chard, then place in kitchen towel and squeeze dry. Set chard aside.
  • Heat oil in large nonstick skillet over medium-high heat. Add onion to skillet and sauté until soft, 4 to 5 minutes. Add sausage and sauté until brown and cooked through, breaking up with fork, 5 to 7 minutes. Remove from heat and cool.
  • Whisk eggs, cream, salt, and pepper in large bowl to blend. Add chard and cooled sausage mixture, then feta; stir to blend. Transfer mixture to prepared baking dish.
  • Bake frittata until set in center, 45 to 55 minutes. Transfer baking dish to rack and cool frittata 15 to 20 minutes. Place platter atop dish with frittata. Using oven mitts, hold baking dish and platter firmly together and invert frittata onto platter; place another platter atop frittata and invert again so that frittata is right side up. Cut frittata into 20 pieces. DO AHEAD: Can be made 1 day ahead. Place frittata pieces on rimmed baking sheet. Cover and chill. Rewarm in 325°F oven until heated through, about 10 minutes.
  • Transfer frittata pieces to platter. Garnish each piece with parsley; serve warm or at room temperature.

1 lb swiss chard
4 garlic cloves, minced
1 cup chopped onion
2 teaspoons olive oil
6 egg whites
2 whole eggs
3 tablespoons chopped fresh basil
1/4 teaspoon salt
1/4 teaspoon black pepper
1 medium tomatoes, sliced

Steps:

  • Chop the chard. In a skillet, sauté the garlic and onions in 1 tablespoon of the oil.
  • Add the chard, cover and lower the heat and cook for 10 minutes.
  • Remove from heat and drain if juicy.
  • In a large bowl, beat the eggs, salt and pepper until blended. Stir in the chard.
  • Coat the bottom of a skillet with the remaining oil and return to medium heat.
  • When hot, pour egg mixture and arrange tomato slices on top.
  • Cover and cook until the edges are firm and the bottom is golden and beginning to brown. Turn frittata over and cook for about 5 more minute until eggs are cooked.
  • Serve immediately or at room temperature.

1 1/2 pounds chard, preferably green and red, mixed
1 tablespoon butter
1 tablespoon vegetable oil
1/4 cup minced shallots or onions
5 eggs
4 tablespoons light cream
Salt and freshly ground black pepper to taste
1/4 cup cubed Cheddar cheese

Steps:

  • Wash the chard thoroughly; put in a large kettle and steam over medium heat in the water that clings to the leaves. Cover pot while steaming. When chard is tender, after about 10 minutes, drain, reserving liquid for another use, like making a broth, and coarsely chop the tender leaves.
  • Preheat oven to 350 degrees.
  • Put the butter and oil in a saute pan, a straight-sided quiche pan or a shallow baking dish that can go in the oven. When the butter has melted and the foam begins to subside, add the minced shallots and saute briefly until they are translucent but not brown. Add chopped chard and mix well. Remove from heat.
  • In a bowl combine eggs, cream, salt and pepper and beat thoroughly. Pour this batter over the chard, lifting edges of the chard with a fork to let batter run underneath. Dot the top with cheese cubes and put in middle of oven. Bake 20 to 25 minutes.
  • Remove and let cool slightly. To serve, cut into squares or wedges.

1/2 pound shiitake mushrooms, stems removed, quartered
1/2 pound cremini or button mushrooms, stems trimmed, quartered
1 red onion, cut in half and thinly sliced lengthwise
1/2 pound Swiss chard, stems trimmed, roughly chopped
1 tablespoon fresh thyme leaves, plus sprigs for garnish
1 teaspoon salt
1/4 teaspoon freshly ground pepper
2 whole large eggs
8 large egg whites
2 tablespoons freshly grated Parmesan cheese
Olive oil cooking spray

Steps:

  • Heat oven to 400 degrees. Coat a 12-inch nonstick ovenproof skillet with olive oil cooking spray, and place over medium-high heat. Add mushrooms and onion, and saute until mushrooms start to release their juices, stirring frequently. Reduce heat to medium low, and cook until mushrooms are soft and golden brown. Add Swiss chard, thyme, 1/4 teaspoon salt, and pepper, and cook until wilted and all the liquid has evaporated. Transfer to a baking pan lined with paper towels, and set aside.
  • Combine eggs, egg whites, and remaining 3/4 teaspoon salt in the bowl of an electric mixer fitted with the whisk attachment, and whip until soft peaks form, 4 to 5 minutes. Coat a clean 12-inch nonstick ovenproof skillet with olive-oil cooking spray, and place over medium-high heat. Add two-thirds of the egg mixture to the pan, layer with reserved vegetables, and top with remaining egg mixture. Sprinkle top with Parmesan, and transfer pan to oven. Cook until eggs are set and frittata is golden brown, about 15 minutes. Run a spatula around edges of pan to loosen frittata if necessary; transfer to a serving plate. 1 onion, thinly sliced

  • Preheat the oven to 400 degrees F. Place the potatoes in a pot, cover with cold water and season with salt. Bring to a boil; reduce the heat to medium and simmer until just tender, about 10 minutes. Drain and set aside.

8 large swiss chard leaves, with stems
2 tablespoons extra virgin olive oil, divided
1 medium red onion, peeled and thinly sliced
1/2 teaspoon salt, divided
2 teaspoons fresh rosemary, minced

Steps:

  • Wash the Swiss chard; cut off stems, dice finely, and set aside.
  • Chop the leaves.
  • Heat 1 tablespoon olive oil in a nonstick 9-inch skillet with an ovenproof handle. Add onion, ¼ teaspoon of salt, and rosemary. Sauté 10 minutes over medium heat, until the onions are very soft and just starting to brown.

1 tablespoon olive oil
1/2 cup chopped onion
4 cups chopped swiss chard
4 eggs
3 egg whites
1/4 cup chopped green onion
1/2 cup shredded provolone cheese
2 tablespoons milk
1 teaspoon salt
1/4 teaspoon cayenne pepper

Steps:

  • Place potatoes in a saucepan.
  • Add a slight amount of water, salt and pepper.
  • Bring to a boil; cook for 5 minutes or until potatoes are tender; drain and set aside.
  • In a large skillet, heat oil on medium-low heat.

Egg White Frittata With Zucchini, Black Olives, and Chard image

My mom's garden is incredible. This recipe provides a perfect use for her bounty of zucchini and Swiss chard. It's also a delicious, very satisfying dish that's simple to make. The coconut milk adds richness and body without introducing coconut flavor but you could use cream, half-and-half, or any other kind of milk, dairy or non-dairy, instead. Lower fat contents will yield a lighter result.

1 lb zucchini, cut into 3/4-inch to 1-inch dice
12 ounces chard leaves
2 tablespoons olive oil, divided
1/2 small onion, diced
1 garlic clove, minced
1/2 teaspoon Greek oregano
1/2 cup ripe black olives, chopped
10 egg whites
1/3 cup coconut milk (*not* the coconut milk that comes in a carton and is meant for drinking)

Steps:

  • Generously sprinkle zucchini pieces with fine sea salt and set aside on a cutting board or in a colander for about 30 minutes.
  • Blot the zucchini with a towel, toss with enough olive oil to coat (about 1 Tbsp), and spread in a single layer on a baking sheet lined with parchment paper. Roast at 425 degrees F. for about 8 minutes; stir and roast another 5 to 8 minutes, until zucchini pieces are tender and slightly caramelized.
  • Trim the chard by removing and discarding the stems. Cut the leaf blades into 1/2-inch ribbons.
  • Bring about a quart of salted water to a boil in a wide skillet. Add the chard and simmer uncovered for about 5 minutes, turning the leaves over occasionally with a spatula. Drain the chard and spread on a cutting board to cool. When it's cool, squeeze excess moisture from the chard.
  • Saute the onion in the remaining 1 Tbsp of olive oil until soft; add the garlic and oregano and saute another minute or so. Add the chard and olives, and cook for another couple of minutes. Remove from heat. Stir in the zucchini.
  • In a bowl, blend the egg whites and coconut milk. (If using canned coconut milk, shake the can vigorously before opening to blend the contents.) Stir in the vegetables. Pour the mixture into a lightly greased 8 by 8 baking dish.
  • Cover the dish with foil and bake at 350 degrees F. for 30 minutes or until the eggs are set.

  • Preheat broiler with rack in top third. Heat 1 tablespoon oil and garlic in a 10-inch broilerproof nonstick skillet over medium. When fragrant, add chard stems and leaves. Season with salt and cook, stirring, until just tender, 4 minutes. Transfer to a bowl.

  • Preheat the oven to 375 degrees Fahrenheit. In a 12-inch ovenproof skillet, slightly brown the onions in olive oil over medium heat. Add the garlic and saute for 1 or 2 minutes. Add the chard and saute for 1 or 2 minutes. Add the chard and saute until wilted, about 5 minutes. Distribute the ingredients evenly over the pan and then pour the eggs over top. Gently lift chard with a spatula to allow some of the egg to flow evenly underneath after this, DO NOT TOUCH. You don't want scrambled eggs. When the edges of the frittata begin to cook - after about 2 minutes - gently add half of the cheese, distributing it evenly. In about a minute, place the pan in the oven. After about 5 minutes the eggs will begin to set; add the rest of the cheese. Cook for another 5 minutes or until the eggs reach desired firmness. Let rest for a few minutes before serving.

2 teaspoons finely chopped garlic
1 package (8 oz) sliced fresh cremini mushrooms
3 cups chopped Swiss chard
8 eggs
3 tablespoons whipping cream
3/4 teaspoon salt
1/2 teaspoon pepper
4 oz fontina cheese, shredded (1 cup)

Steps:

  • Set oven control to broil. In 10-inch ovenproof nonstick skillet, heat oil over medium heat. Cook garlic and mushrooms in oil 4 minutes, stirring frequently, until mushrooms are tender. Add Swiss chard; cook 2 minutes or until just wilted. Reduce heat to medium-low.
  • In medium bowl, beat eggs, whipping cream, salt and pepper until well blended. Pour over mushroom mixture. Cook 8 to 9 minutes, without stirring, until eggs are set around edge and beginning to brown on bottom (egg mixture will be uncooked on top). Sprinkle with cheese.
  • Broil frittata with top about 5 inches from heat about 4 minutes or until eggs are cooked on top and light golden brown. (Frittata will puff up during broiling but will collapse when removed from broiler.) Cut into squares.

BAKED FRITTATA WITH YOGURT, CHARD AND GREEN GARLIC



Baked Frittata With Yogurt, Chard and Green Garlic image

Inspired by the signature Provençal chard omelet called truccha, this beautiful baked frittata incorporates thick Greek yogurt and lots of green garlic. It will puff up in the oven, but then it settles back down. Use a generous bunch of chard for this - green, red or rainbow - and save the stalks to use in the chard stalk and chickpea purée that I'm also posting this week. I like to serve the frittata at room temperature, or I grab a cold slice for lunch. It's a wonderfully portable dish. The filling can be prepared through Step 4 up to 3 days ahead. The frittata keeps well for 2 or 3 days in the refrigerator.

1 generous bunch Swiss chard (1 to 1 1/4 pounds with stems), either green, rainbow or red
Salt to taste
2 tablespoons extra-virgin olive oil
1 bulb green garlic, papery shells removed, chopped
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
6 eggs
2/3 cup plain Greek yogurt or drained yogurt (2 percent or whole milk)
Freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Bring a large pot of water to a boil.
  • Strip chard leaves from stems. Wash both leaves and stems thoroughly. Set aside stems for another purpose. You should have about 6 cups leaves, tightly packed.
  • Add a generous amount of salt and the greens to the boiling water. Blanch greens for about 1 minute, until tender, and transfer to a bowl of cold water. Drain and take up chard by the handful to squeeze out excess water. Chop medium-fine. You should have about 1 1/2 cups chopped chard.
  • Heat 1 tablespoon of the olive oil over medium heat in a heavy skillet and add green garlic, thyme and rosemary. Add a generous pinch of salt and cook, stirring often, until the garlic is fragrant, 2 to 3 minutes. Add chopped chard and cook, stirring, until ingredients are combined and greens are nicely coated with oil. Remove from heat.
  • Place remaining tablespoon of olive oil in a 2-quart gratin or baking dish, or in a 9-inch ovenproof skillet, and place in oven for 5 minutes. Meanwhile, whisk eggs in a large bowl. Season with salt (about 1/2 teaspoon) and freshly ground pepper to taste. Whisk in yogurt. Stir in greens mixture.
  • Remove baking dish from the oven, brush sides with hot oil, and scrape in the egg mixture. Place in oven and bake 30 minutes, or until set and slightly puffed. Remove from oven and allow to cool for at least 10 minutes before serving. Serve hot, warm, room temperature or cold.

400g Chard, washed and chopped (keeping stalks separate)
2tbs Olive oil
1 Medium onion, chopped
2 Garlic cloves, chopped
6 Eggs
150g Cheese, grated
200ml Creme fraiche
Salt and pepper

Steps:

  • Preheat oven to 180C. Using a large frying fan with a heatproof handle, heat the oil over a medium heat and saute the onion, when soft add the garlic and chard stems, cook for a couple of minutes, then add the chard leaves and fry for a further 5 minutes till wilted. Beat the eggs with the creme fraiche and cheese, and season. Pour over the vegetables and continue cooking on the hob for about 8 minutes, then transfer to the oven for a further 5 minutes until the top is firm.
