CHAR SIU SAUCE

Char Siu properly refers to roasted pork which has been marinated in this sauce... but this is the base flavor. Most Chinese restaurants add red food coloring to give the meat its characteristic hue, but it's entirely optional. Marinate any cut of pork in this sauce before grilling or roasting, and pass more sauce on the side. Adapted from a recipe by Joshua Bousel at Serious Eats. http://bit.ly/q6FBIp

1/3 cup hoisin sauce
1/4 cup honey
1/4 cup dark soy sauce
3 tablespoons dry sherry or 3 tablespoons chinese shaosing wine
1 teaspoon Chinese five spice powder

Steps:

  • Combine all ingredients in a small bowl.

Number Of Ingredients 8

1/2 cup sherry wine
2/3 cup hoisin sauce
2/3 cup soy sauce
1/2 cup sugar
4 garlic cloves, minced
2 teaspoons black bean paste
1 1/2 teaspoons Chinese five spice powder
1 teaspoon salt

Steps:

  • Combine all ingredients in a double boiler and simmer for 10 minutes or until it begins to thicken.
  • Or cook over very low heat, stirring constantly.

Love this sauce on pork,or chicken. I tweaked the sauce recipe until I settled on this version. I could drink it right out of the cup

1/8 c dark soy sauce
1/4 c regular soy sauce
1/4 c hoisin sauce
1/2 c mirin
1/8 c xiao hsing wine (chinese rice wine)
1 tsp chinese five spice powder
3 clove garlic minced
1 inch piece ginger grated
1/2 tsp sesame oil
1 tsp chinese black vinegar

Steps:

  • 1. Mix all together
  • 2. Use it to marinate meat overnight and baste while cooking.
  • 3. Serve extra sauce on the side with the meat.

Char Siu (Char Siew) Sauce:
1 1/2 tablespoons maltose
1 1/2 tablespoons honey
1 1/2 tablespoons hoisin sauce
1 1/2 tablespoons soy sauce
1 tablespoon Chinese rose wine
3 dashes white pepper powder
3 drops red coloring (optional)
1/2 teaspoon five-spice powder
1/2 teaspoon sesame oil

Steps:

  • Add all ingredients in the char siu sauce in a sauce pan, heat it up and stir-well until all blended. Transfer out and let cool.

I am posting this because it is different than the other Char Siu Sauces here on Zaar. I noticed a recipe called, "Sticky Chicken" Recipe # 397556. It is posted by Im Pat. I am not familiar with this sauce so I googled it and found this recipe. Since I would never buy a jar of it, I felt like this would be a good recipe to post. 1/4 cup reduced sodium soy sauce
2 tablespoons honey
2 tablespoons sugar
2 tablespoons dry sherry
1 teaspoon salt
1 teaspoon Chinese five spice powder

Steps:

  • In a pan, combine soy, honey, sugar, sherry, salt, five-spice and ginger. Heat for one minute to dissolve sugar.
  • Use as a basting sauce on pork or chicken or as an addition to a basting sauce as in "Sticky Chicken" Recipe # 397556.
