Fillet of Sole Veronique Sauteed with Grapes, Champagne and Cream image

Clarified butter
2 (4 to 6 ounce) fillets grey sole or yellowtail flounder
Flour for dredging seasoned with salt and pepper
20 sliced white grapes
1 bottle good champagne
1/2 pint heavy cream

Steps:

  • Preheat a nonstick skillet to medium high heat and coat bottom with clarified butter. Lightly dredge fish fillets in seasoned flour and place in pan. Saute quickly 2 to 3 minutes on each side and transfer to a warm dinner plate. Add grapes and deglaze pan with champagne, cook for 2 minutes and drizzle in cream to desired consistency, pour over fish. Serve with steamed red potatoes with chives and a fresh steamed green vegetable. Serve the balance of champagne with dinner.

Broiled Flank Steak with Grilled Champagne Grapes and a Bitter Greens and Blue Cheese Salad image

1/4 cup Worcestershire sauce
2 tablespoons brown sugar
1 tablespoon Dijon mustard
Kosher salt and freshly cracked black pepper
4 cloves garlic, grated
1 medium shallot, grated
1/4 cup vegetable oil, plus 1 tablespoon, divided
2 pounds flank steak
1/4 cup sherry vinegar
2 tablespoons minced shallots
2 teaspoons Dijon mustard
1 clove garlic, grated
1/2 cup extra-virgin olive oil
Kosher salt and freshly cracked black pepper
2 small bunches champagne grapes, broken into clusters, about 1 pound
1/2 pound bitter greens mix (radicchio, arugula, romaine, watercress, endive)
3/4 cups crumbled blue cheese
1/4 cup toasted pecans, chopped

Steps:

  • For the steak: In a small bowl, mix together the Worcestershire sauce, brown sugar, mustard, 2 teaspoons salt, 1 teaspoon pepper, garlic and shallots. Gradually whisk in 1/4 cup vegetable oil until emulsified. Place the steak in a plastic zip-top bag. Pour the marinade over the steak and seal the bag. Marinate for at least 1 hour at room temperature or refrigerate overnight. Allow the steak to come to room temperature before cooking.
  • When ready to cook, preheat the broiler and set the oven rack at the highest point, as close to the flame as it can get and still fit the steak below. Fit a wire rack onto a baking sheet.
  • Place the marinated steak on the prepared baking sheet (or a broiler pan), sprinkle with salt and pepper and place it under the broiler. Cook for 3 minutes on the first side. Flip and cook for another 3 minutes for medium-rare. Remove from the oven and allow to rest 10 minutes. Slice thin strips of steak against the grain.
  • For the vinaigrette: While the steak is resting, in a small mixing bowl, make the vinaigrette. Combine the vinegar, shallots, mustard and garlic and whisk in the oil. Season with salt and pepper
  • For the salad: Preheat a cast-iron grill pan over medium-high heat. Place the grape bunches on the grill to char, just until blistered, 3 to 4 minutes.
  • In a large bowl, add the greens and lightly dress the salad with the vinaigrette. Toss to combine.
  • For serving, pile the salad onto a plate and top with crumbled blue cheese and toasted pecans. Surround the salad with the sliced steak and grilled grapes.

3 cups dry Champagne or sparkling wine at room temperature
1/4 cup granulated sugar
1 tbsp lemon zest, plus more for garnish
2 tbsp superfine sugar

Steps:

  • Cut grapes into small clusters of 2 to 4 grapes each. Pour Champagne into a plastic bowl with a tight-fitting lid. Add granulated sugar and zest; stir gently until sugar dissolves. Add grapes, cover and chill 8 hours. Pour off marinade. Dry grapes on a paper towel; sprinkle with superfine sugar and zest.

All-purpose flour for dredging fish

7 oz stemmed Champagne grapes (1 1/2 cups)
3 tablespoons unsalted butter, cut into tablespoon pieces
1 tablespoon fresh lemon juice

Steps:

  • Put oven rack in middle position and preheat oven to 250°F.
  • Rinse fish and pat dry. Season both sides of fillets with salt and pepper, then dredge in flour, shaking off excess.
  • Heat 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until it begins to smoke, then sauté 2 fillets, turning over once, until golden and just cooked through, about 4 minutes total. Transfer with a slotted spatula to a platter and keep warm, uncovered, in oven. Add more oil if necessary, and sauté remaining 2 fillets in same manner, transferring to platter.
  • Add shallot to skillet and cook over moderate heat, stirring, until softened, about 2 minutes. Add vermouth and simmer, scraping up any brown bits, 1 minute. Add grapes and cook over low heat, swirling skillet, until just heated through, 1 to 2 minutes.

Accompaniment: 4 small bunches Champagne grapes (about 1/4 pound)

Steps:

  • In a small bowl sprinkle gelatin over water to soften 1 minute. In a saucepan combine cider and sugar and bring to a rolling boil. Boil mixture, skimming froth, until reduced to 2 cups. Stir in brandy and lemon juice and pour through a sieve lined with a double thickness of dampened cheesecloth or paper towel into a bowl. Stir gelatin mixture into hot cider mixture, stirring until gelatin is dissolved. Stir mixture well and divide among four 1/2-cup molds. Chill gelées until firm, at least 3 hours, and up to 2 days.
  • To unmold gelées, dip bottoms of molds, 1 at a time, into a bowl of hot water 3 seconds. Run a thin knife around edges of molds and invert gelées onto 4 small dessert plates.

DRESSING:
1/2 cup of real mayo.
1 tlb of spicy brown mustard.
2 tlbs of plain yogurt or milk
1 tlb of fresh lemon juice.
